Healthy Fish Recipe - AKA Cheesy Fish

  • Here it is, as promised, better late than never, ingredients list, and instructions. Just remember you can use this recipe just as it is the first time, see how it turns out, and then you can change it up the next time, and experiment with different seasonings of your choice.

    Cheesy Fish Recipe:
    Greek Yogurt 2-1/2 cups
    Mayonnaise 2-1/2 cups
    Parmesan cheese 1-1/2 cups
    (Grated)
    Green Onion 6-8
    (Finely chopped)
    Onion Powder 1-1/2 Teaspoons
    Garlic Salt 1-1/2 Teaspoons
    Chili Crisps 2 Tablespoons

    Cooking Spray
    (You could also use butter, or oil to coat the dish too)
    Fish Fillets Enough To Cover
    The Bottom Of a 9”x11” Baking Dish
    (About 15-20 Small Bluegills 7-8”)
    Pre Heat Oven On Broil
    Mix all ingredients in a large bowl, (except for fish).
    You're going to need about 6-7 cups of the mix for a full family size pan (9x11").
    Season to taste, the quantity of seasonings listed is a good starting point.
    I sometimes add more parmesan cheese to thicken it up the mix, along with a sprinkle over the top before it goes in the oven, and I usually end up add some extra garlic powder in addition to the garlic salt.
    Lay fish out in an even layer in a greased 9x11” baking dish
    Cover fish evenly with the cheesy mixture, using a silicone brush. Don't worry if there's some extra left in the mixing bowl after the fish is covered, you can use the extra sauce with the meal, or later as a sandwich spread, or dipping sauce.
    Place in preheated oven set on broil, and watch very closely.
    Watch for the cheese to start to brown (could be anywhere from 5-10 minutes).
    When the cheese starts to brown, shut the oven off
    Let it sit in the oven 5-10 minutes until fish is done. (check to see if it’s done by using a fork to see if the fish flakes when you try to break it up).
    Remove from oven and let stand about 5 minutes, serve over rice, riced cauliflower, or just by itself.
    Nutritional Values based on 9x11" pan = 8 servings: Calories: 560 gr
    (You can cut the fat, and calories in Fat: 54 gr
    half by using Miracle Whip instead of mayo, Carb: 2gr
    and it will give it a little zing)
