Hey Hussey. What I found with CJ's "non-stick" to the smash burg method is to leave the spatula/burg press/ bacon press (what eve you are using to smash) is........set it on the flat top and let it heat up good before smashing. Great cook brother.
SourCream is a terrible binder. It keeps everything tacky and loose. Maybe try a partial smash to get a larger browned surface before flipping it? Also the spatula you first used to smashed with was sitting on the sidelines. Try setting it flat in the grease on the griddle for 10 seconds, then go straight to smashing with that hot greasy one, and ‘t’ with the cooler one.
You gave me an idea... Chopped Crack Cheese! A NY style chopped cheese with these patties! Either way, yours looks excellent as always Matt! I'll be trying this blend for sure!

If you heat up the spatula or smasher a bit but not too hot it helps keep the burger from sticking. If the spatula or smasher is too hot the burger will cook to it.

I do like it rubbery. My mom growing up was crispy. Had a buddy that was older than I and he like his rubbery. We were at a diner and he ordered his bacon chewy and so did I. The worst product in this receipe is shredded cheese from a bag,always shred your own,and why? Because its loaded with so many bad chemicals to keep it from molding, shredded cheese is thin and would mold quickly unlike block cheese.people will say bacon lol,but shredded cheese after opening the pkg can last couple months and not mold.Looks mighty tasty.
You inadvertently added extra ingredients. All that lawn mowing kicking up fine debris of grass, dirt, pollen and God knows what else. Quick tip, if you can hear lawn mowing and smell it in the air then don't prepare food outside. Mmmmmm yummy lawn crack burgers.

I use my Lodge cast iron griddle and bacon press for outstanding smash burgers. Press down and twist clockwise slowly to release. Easy peasy

These burgers I think the issue is there's so much stuff in them and the make up of the ball was way different than just burger meat. It was so loose.

With these burgers, they still stick. The spatula was on the griddle top and hot. The mixture was real tacky on these. They were very loose already.
