I changed the cheese and lettuce up just a little bit. My cheese was as follows: thin sliced sharp cheddar and thin sliced colby jack on one chicken patty, top that with two strips of bacon torn in half, then top with the other chicken patty with the thin sliced havarti. This will glue the bacon in place so that it doesn't slide out. 🙂 For the lettuce, I used romaine leaf instead for the "shreddy letty" as it stays put on the bun better, IMO and will help to keep juice from the tomato from saturating the bun. My assembly went like this, from the bottom up. Bottom bun toasted, with the proper mayo. Lettuce, beefsteak tomato slice, drizzle of the buttermilk ranch, seasoning (I don't have Heifer Dust but I do use a similar product from another griddle vlogger that works well with white meat and veggies). Then I put the first chicken patty with the two cheeses down, top with the bacon, then top that with the second chicken patty with the havarti melting all over. Top with a little more ranch, then top it all off with the toasted bun crown with mayo, and we had a seriously yummy and totally messy dinner. Four napkins are the minimum, sir! :-) My wife suggested that a good crusty roll used for cheesesteaks might work well to help contain the mayo/ranch mess that is inherent with this recipe. I would have to shape the chicken patties and pre-smash them probably, but I might give this a try the next time I make these. Thanks for sharing this with us all, Hussey! Hey Matt. I did mine almost identical to yours. Only difference was after smashing the chicken, I used Kinders caramelized onion seasoning instead of your Heifer Dust. Heifer Dust did go inside the chicken and on the tomatoes though. 1000% gonna make these again!

I saw chicken and thought you were going to become the "healthy hussie" until I see several containers of Dukes! I don't eat much mayonnaise but it seems like duke's is better for potato salad than the other brand. Haven't seen the other top brands in the store yet but I will have to try them.
Just make your own mayo: avocado oil, egg, salt, pepper, etc. No preservatives, or POISON VEGETABLE OIL. And while you're at it, make your own buttermilk: milk & vinegar/lemon juice.

I also have the opportunity to be in kitchens of restaurants and it rare that someone wears gloves. Not saying it's only you, it's a "youtube thing". But my point is that wearing gloves is to prevent cross contamination, however at the point of consumption, the food is either good to eat or not, gloves aren't protecting anything. :) Also, doesn't mean anything, just saying what I would say if I was there chastising you in person. I enjoy your channel.
Love your recipes, up and until you talk about American Cheese! American Cheese is not natural in any way. American Cheese was actually accident discovered during the early space program. So-Called American Cheese is one step away from being plastic. Do this with Natural Cheeses, such as Provolone, Swiss, Mozzarella, Cheddar and it will be so much better and healthier! I personally will never use so-called "American Cheese" in any meal!
