If their intention was to lower the skill cap between pros and new players by removing some moderate to difficult tech like shield dropping, they could have made it possible with the shield + special button method that you don't have to precisely tilt your shield but instead hold both buttons and do the shield drop input that way.

This game has very little advanced movement tech, if wavedashing was good I bet they'd be able to do a lot more and Plats would actually be a good thing. I'm sure you prefer Melee or something for those reasons, but that's like comparing apples to a slightly different species of apples. At the end of the day, they're both still apples. So calling Ultimate "barely a platform fighter" would also be calling melee "barely a platform fighter", since most of their main core mechanics are the same or similar. It just so happens that Melee is broken, and can be exploited easily (neither of which are bad things), whilst Ultimate has way more solid game design, and more focuses in in the pure fighting part of the game with much more solid controls. I get it's a matter of preference, I personally think Ultimate is one of the greatest games of all time, but it still shares a lot of it's qualities with Melee. That statement is especially true at a core game design level. Tl:dr: Melee and Ultimate are both Smash games, one's just more broken than the other. Involving platforms in a totally different situation, when a opponent come to get you from the side or above: Bait with short hop then drop through the platform and punish the eventual aerial. Really efficient against swordmen mashing and holding forward in disadvantage. I don't know if many good player would fall for it, but it kind of allow you to safely delay your decision to punish the landing and sometimes give you free upsmash.
What I like doing is running on the the side B-reverse needle charge cancel into a grab/tilt, though that really only works if they expect you to run off and throw out an attack, or they just used a laggy move to try and pressure you/they landed wrong so they’re in lag. But if they’re at like the edges it throws them off sometimes, idk I just think I’m cool af when I pull it off in the right scenario

Even when running off of a platform, you can get stuck. If you let go of the stick before you become airborne, your character will do the stopping animation at the edge instead. You have to hold forward for at least that long.
I can easily move and get off platforms. To move, move the left stick right or left. To get off, you can jump off, run off, or move the left stick down to go down through it.

I struggle to drop through a platform after dropping shield. A lot of the times opponents will hit my shield with an unsafe up smash and I try to drop through nair to punish and I always get a jab on the platform.
I've been competing since 2015 and this is the first time i have ever heard of isai dropping. Maybe its because sm4sh platforms didnt feel as sticky but i feel dumb af for not knowing about it.
It might also be worth mentioning that when it comes to “running off the platform”, there is a way to buffer even nair/fair and specials and not worry about getting just a jab/dash attack on the platform, by quickly letting go of the stick, inputting the attack, and then holding it forwards again (ex: forwards->return to neutral->a->forwards again will buffer a nair) I made a (very hard to follow but hopefully still informative) video about it here: ruclips.net/video/B-6dzCf_2mI/видео.html
It's part of a training mode mod. You can create saved states. Super useful for practicing characters like Wario, so you don't have to constantly wait for waft to charge.

I just want to know who thought it was a good idea to make crouching on platforms a thing. You know that's not what the person's going to want at least 95% of the time (especially when playing casually). If I wanted to duck under something, I wouldn't be on a raised platform to begin with.

Another thing to note about plats in general is that if you hold down after you jump under a plat, you fall straight through instead of landing on it
