I made this last week. Before smoking, it was indeed 'spectacular'! Then I placed the liquid in my smoker. I WAY over smoked it. Lesson learned. I will do it again this week, and place it in the smoker for no more than 5 minutes. I discovered that liquid absorbs smoke much faster than I anticipated. Also, I see some comments asking why make the whiskey when you can buy it. First, some of us like the process. Second, I can make a $25.00 bottle of whiskey for under $10.00. Nothing wrong with that!

Fun video! Thanks. Rapid aging with the JD chips can be done with hot (~135F) and cold water baths (Sous Vide / Instapot & Ice water) by cycling the jars for 45 minutes or so each to the color desired. You can compress the 8 days to a few hours. I have to try the smoke step now.
If you use an ultra sonic cleaner for both baths you can cut down even more....and do not use just straight chips....toast them by varying amounts and use 1/10th of the chips as charcoal. Save some fat from the smoke house from something like pork belly and do a fat wash with the chips. I dont know about anyone else but I like a lot of smoke in my liquor.
You can go outside, set a wood chip on fire, hold a jar over it, turn the smoke-filled jar over and pour the alcohol into it. If you don't have any cocktail smoker equipment. Thanks for the video!
I really like the logic of simulating ageing using the freezer and fridge! What a simple way to make great tasting whiskey. I think you should start an online gourmet shop and sell all your wonderful and unusual creations like you multi fruit wines, liqueurs, spirits, processed meats, cheeses, pastas, jams, desserts and all your other goodies. I am sure you will do roaring business. And I would love to be your first customer. 😃
I've been using charred white oak in the cheapest whiskey I can find .....tastes as good as Makers Mark...I'm also doing tequila and rum right now and counting the days till it's ready to try. I'll try the freeze and thaw method next time.
I actually tried my own method similar to this a while back before I saw the video. Freezer then stove, repeat over the course of 3 days. My lack of brain did not take into account the heat stress on the glass. Imagine my surprise when I stick the glass of whiskey in the pot then pull it out. Next thing you know the glass busted in half. The cleanest cut imaginable lol. I used Jack Daniels barrel blocks in my whiskey. It is available on the internet, They still contain (albeit dried of course) traces of JD whiskey in the blocks from natural evaporation during maturation. It made the best tasting and smoothest whiskey I've ever made. Plus the blocks still have char on it from JD's process of charring the inside of the barrel before storage. Just make sure to wash the blocks to get all that dirt, grime, and potentially mold. Do not use soap just plain water (preferably distilled water).
I have made this several times but I don't "burn" the wood, I don't like the smoke taste. I use white oak from my firewood pile. Wonderful recipe. I have used the older recipe but it is basically the same.
glad to see you are using 40-45% distillate this time instead of that ultra overproof vodka 96%, yes smoking is good to do i sometimes blow smoke from my cigar into my whisky glass and cover it and let it sit for 15 min it smells and tastes very nice , btw i like your mini shot glasses but why did you not use cotton ball filtration as i told you about that last time
no no i told you you need to use cotton balls like the one your wife has for her makeup, you can unroll a cotton ball or take a small piece of that and put it inside the funnel tube near the end where the liquid comes out, you should not use too much but just enough to get a dripping stream , pass maybe 100ml of alc at first and this should remove any lose fibres that come out from the cotton then take that 100ml alc and pass it through the filtre again and keep adding the rest of the alcohol through the filter to collect, it comes out crystal clear @@Spectacular-cuoredicioccolato

So i did learn a thing. You acquire a taste while sipping and swinging your forearm in a perfectly circular motion. As for preparing it at home i have to check the rules in my country.

I am not sure if those barbeque chips sre considered safe for adding to alcohol. They might have some chemical additions that is not good to your health when solved in alcohol. Or maybe not. I would prefer pure oak chips/cubes and maybe smoking them before use.

Why make whisky when you can buy it?! Hell, that's a no-brainer here in Oz. A basic Johnnie Walker Red label is $49 a bottle, and it is very, very basic whisky. Hell, you could do a year's supply in a few days for a tenth of the price?!

You can also char (burn)the wood. The inside of whisk(e)y barrels are charred and it adds flavor and color to the alcohol.
