I've been watching butter cookie recipes all day and you're the only one who said adding vanilla extract is optional. I think butter cookies are better without it because the taste of vanilla extract tends to overpower the taste of the butter.

@@simpleorganicgardener3275 I did not use any baking powder for these short-bread style cookies, which relies on the high fat content from the butter to give it a crumbly, melt-in-your-mouth texture. Adding baking powder would cause the cookies to rise slightly and become lighter and fluffier, rather than maintaining the dense, crumbly texture typical of shortbread. In short, using baking powder will make the cookies puff up a bit during baking, resulting in a less crisp and more cake-like cookie. If you’re aiming for the classic shortbread texture, it’s best to omit the baking powder.
You can definitely use brown sugar, however keep in mind that it will change the texture and flavour of the cookies slightly. Brown sugar contains moisture because of the molasses, which can make the cookies slightly softer and chewier compared to the crisp texture you’d get with granulated sugar.If you want a crisper texture, you can try adding a bit more flour to compensate for the extra moisture in the brown sugar. Start by adding a couple of tablespoons of extra flour and see how the dough feels 💕🍪
