Great job with your weight loss. One thing you can do to cut down on washing measuring spoons & cups, is to use a food scale to weight things. IE weigh your hummus vs measuring 2 T. The meals looked great.
Hi Amber, love the videos. You don't have to lose weight. You are fine just as you are. If you want to lose weight, try intermittent fasting and Keto. I just lost 30 pounds from watching You Tube videos and not eating from 7:00 PM to noon every day. It was easy. I looked for years and finally found an answer. Good luck, Xoxo
We have a little off-road camper that we tow with a 4 WD. We have a little indoor kitchen with gas cooktop like yours. There is nothing we can’t cook in there. Your food looks so amazing and you look very happy and healthy. All the best from South Australia 🇦🇺
I made a lot of kimchi fry rice. You can do it with all you leftovers. I fry kimchi with onions,add rice and the rest of the ingredients. Spring onion, any cook meat, the list is endless. I add spinach at the end. Really yummy!

Very informational! We are new to van life. About a month ago we sold our 40' RV and downsized into a Mercedes Sprinter van. We haven't gone out on a big trip yet; still doing our shake-out runs. We can't figure out where to store all the things we need to cook. We can fit a large 8 qt pot with lid but that's about it. We can't find a place for our frying pan (because of the handle), air fryer or Instapot. Our van seems to have less storage than most. Videos like this help give us ideas and let us know that there is hope we will be able to cook our meals in the van.
I love these type of videos!! As a person who has tried everything from WW, Atkins, keto etc. Etc. I'd like to know more about this noom. Can you do a video explaining the difference between noom and all these others and why this one is working for you? Also can you take us shopping with you? I live in Oregon and so enjoyed watching your videos of your trip up Hwy 101 and the Oregon coast ( one of my favorite places ) I love your candor, your vulnerability, your thoughtful prosaic way of expressing yourself and your story ( stories ) Thank you from all of us who are landlocked in one place for chasing your dreams and inspiring us to do so too.
I love these kinds of videos! I totally get that it's convenient to eat out....and also, you DO want to support the local economy by experiencing some meals in whichever destination you're in....but (and this is just my humble opinion), eating at home (be that sticks and bricks or on wheels) is SO much healthier...for your body, for your bank account, for the environment, and for your soul too....I give thanks, to the farmers, to the truck drivers who deliver the goods, to the store clerks, to everyone involved in me being able to put food on my plate....I give thanks before each meal (I actually only eat one meal a day....long story) because I really am grateful to everyone involved in keeping my body (and soul) fueled. With that said....I'm not in my tiny home on wheels yet (aiming for spring 2022), but I will be doing more cooking outside....like you said, there are cooking smells and in such a small interior space, I don't want my bed, for instance, to smell like my food....but also, that's one of the main reasons I'll be living in a tiny home on wheels...so I can LIVE OUT of my tiny home on wheels :-) I have just a small butane camp stove that I'll use, but I'll also be cooking over fire (the dude from Living The Vanlife uses a Solostove which I LOVE)...and actually, I've been paying attention more to what I eat knowing that I'll be living on the road in 2022, and I've realized I don't NEED to cook a lot....many things are fantastic raw :-) Congrats on the weight loss....I want to lose some weight too, heck I'm happy if I see the number on the scale go down even three pounds....every small success matters.....and in your case, 22 lbs, that's not a small success, that's a great success! Watching how you are cooking your meals in your van has been inspiring to me to cook more instead of just eating salads, I’m not much of a cook. So happy you're finding something that works for you! "Healthy" is different for everybody. Although oats, bananas, rice, soy, teriyaki sauce, sesame oil, noodles, etc taste great, all are high in carbohydrate/sugar, and are mostly overly processed. Maybe re-enforce this is your opinion and experience only, and you are not offering medical and nutritional advice that may not be helpful for most people wanting improved overall metabolic health long term.. Noom is similar to Weight Watchers, you can lose weight with any diet, but cutting calories or tracking points often leads to yo-yo dieting and does not usually work long term for most people.
Amy Love 😊 Everyone is different in their approach and I have mentioned that a long with "see if this is something that resonates with you" with the free trial. This is my experience and I'm sharing that with my audience who wants to know what I'm doing. There is a lot of misinformation out there everywhere so it's always a battle to know everything, but what I do know is that I listen to my body, as we all should and see what's best for it. There isn't a one size fits all.

Congratulations! Suggestion, you like soy sauce, ham, salty foods will make you retain water, and raise your blood pressure. Maybe, using a little less condiment or using other options with less salt, can help you lose more weight because you won’t have water retention, and can help keep your blood pressure in check. So excited for you and your journey. It’s about health more than anything. You want your body healthy. Of course we have an idea of how we want to look too but everything you’re cooking is so good for your body. For some great ideas and recipes flav city (Bobby Parish) has a great you tube channel. He even has an app to help with what he calls Bobby approved foods when you’re grocery shopping. He goes into different stores and shows you what to buy and not to buy depending on ingredients. I’ve learned so much from him. He’s been incorporating his 2 yr old daughter Rose into some videos too. She’s so adorable. Love watching you cook in the van as it shows how it can be done in a small space.

Hi Amber and Lily, For some reason YT hasn’t been sending me your notifications for months but I did get this one. Don’t know what’s up w/them. Ticks me off. You’re not the only channel they either unsubbed me from or just stopped sending me the notifications for. Ugh. Want to say I have always loved your hairstyle but I especially love the silver in your bangs at the front. Gorgeous. Truly. Love the meals.please do more. Love the use of the Instant Pot & induction cooktop. Am not a nomad so am not using a butane or propane stove; my home stovetop has electric burners which are aren’t my fave. Like I said, love the IP & induction stovetop. I have looked into the “N” program (not spelling it out bc I don’t want YT to delete my comment as happens at times) but can’t afford it. If you can continue w/these meals I’d be grateful; they looked tasty & healthy. I don’t eat salmon but my husband needs to have healthy animal protein including fish (he’s on dialysis awaiting a kidney-year 5!). I eat a lot of vegan meals but the chicken ones you did, well, hmm, I think I’d eat using organic chicken. I need to continue losing weight (am at goal but want to continue), bc I need total joint replacements in both my knees; they do one then the 2nd four to six months later depending on how the 1st heals. PS Whoever wants to lose weight has their own reasons as I do above, but I must say I’ve always thought you were lovely. I did get a notification of another vid I watched when you were talking about wanting/trying to lose weight. I was confused bc I think you’re beautiful. I’m not judging you; you’re on what you consider a necessary journey & if that means we get to benefit w/more “meals in a week,” I’m sure not going to stop you-lol. I just love whole foods. I have been eating quinoa when it was dirt cheap. LOL My mother could didn't eat meat until Shake N Bake chicken came out (she grew up on a farm and never got past the processing). She instilled the love of healthy greens and whole grains in my two sisters and I. However, I would say I am the only one who truly misses healthy eating when I do without for a week ... I also love tofu, so many flavorful dishes you can make out of it. It is like mushrooms, takes on the taste of whatever it is cooked with. Keep up the great work. I admire you for not keeping unhealthy snacks available. Safe travels.
Putting dried herbs - oregano, parsley, thyme - in your salad dressing is also great!! Store your prepped dressing in your mason jar in your fridge and the herbal flavors become more pronounced. Super Tasty!!

Hi Amber....just found your incredible channel!...Watched a few videos now......awesome......nice to see a nomad with some years under your belt....I’m in the middle of converting my 21’ bus now and next winter I will be out there traveling and boondocking...... I myself changed my diet 3 years ago to a whole food plant based diet....my focus was eating healthy and not about losing weight.....losing weight is an automatic side effect!.....I lost 80 lbs in one year.....however not once did I focus on losing weight....i weighed myself once a month just to track it.....I would like to strongly recommend a You Tube documentary that opened my eyes and set me on this journey the very next day.....”What The Health”......thanks again and I’m subscribed!

My body constantly aches from the extra weight and I miss all the lovely clothes in my closet I can’t wear anymore. Amber, next time you run out of soy sauce, try Braggs (same company as apple cider vinegar) AMINO ACIDS - it's a healthy non-toxic soy substitute w/ no MSG. I don't know about you, but at 48 years old and autoimmune issues, I a very sensitive to ingredients and MSG is one, it makes losing weight harder for me. I've also had to cut out dairy, cheese, yogurts even Fage. They all stall weight loss. I try just to eat whole organic foods in the natural states :) Love my instantpot! Thanks for the video! Awesome!! Proud of you losing 22 lbs. I e thought about using nook but have had my doubts about it working. I work 7-3 3 days a week and every other weekend 7a to 8 pm. During the week I usually do not eat until I get home and then I over eat and snack up til I go to bed. I may have cookies, chips or sunflower seeds. Very seldom cook and know I should but I’m exhausted when I get home. Just wish I knew that it would work for me. Long post I’m sorry. Love you hair. Absolutely keep a PStyle in my gobag and in my car for emergency. You can write your name in the snow. I use a Ziploc sandwich bag so I can throw it away or wash it. Watching how you are cooking your meals in your van has been inspiring to me to cook more instead of just eating salads, I’m not much of a cook. It’s nice to see how someone else is using the same program and is successful! Love all of your videos!

So happy you're finding something that works for you! "Healthy" is different for everybody. Although oats, bananas, rice, soy, teriyaki sauce, sesame oil, noodles, etc taste great, all are high in carbohydrate/sugar, and are mostly overly processed. Maybe re-enforce this is your opinion and experience only, and you are not offering medical and nutritional advice that may not be helpful for most people wanting improved overall metabolic health long term.. Noom is similar to Weight Watchers, you can lose weight with any diet, but cutting calories or tracking points often leads to yo-yo dieting and does not usually work long term for most people.
Amy Love 😊 Everyone is different in their approach and I have mentioned that a long with "see if this is something that resonates with you" with the free trial. This is my experience and I'm sharing that with my audience who wants to know what I'm doing. There is a lot of misinformation out there everywhere so it's always a battle to know everything, but what I do know is that I listen to my body, as we all should and see what's best for it. There isn't a one size fits all.
The recipe ideas are great. I tend to make one pot meals most of the time but your ingredient combinations are fun. I need to expand my repertoire!
Congratulations for taking time to eat better and get a routine. I was shocked you could stay off grid that long…6 or 7 days. You get such a variety of veggies in your fridge. Thanks for sharing.
I've been known to be out for 15+ days as well, but I do start running out of fresh foods at that point.

Congratulations! Suggestion, you like soy sauce, ham, salty foods will make you retain water, and raise your blood pressure. Maybe, using a little less condiment or using other options with less salt, can help you lose more weight because you won’t have water retention, and can help keep your blood pressure in check. Congratulations again on your weight loss!

So excited for you and your journey. It’s about health more than anything. You want your body healthy. Of course we have an idea of how we want to look too but everything you’re cooking is so good for your body. For some great ideas and recipes flav city (Bobby Parish) has a great you tube channel. He even has an app to help with what he calls Bobby approved foods when you’re grocery shopping. He goes into different stores and shows you what to buy and not to buy depending on ingredients. I’ve learned so much from him. He’s been incorporating his 2 yr old daughter Rose into some videos too. She’s so adorable. Love watching you cook in the van as it shows how it can be done in a small space.

Love the meals.please do more. Love the use of the Instant Pot & induction cooktop. Am not a nomad so am not using a butane or propane stove; my home stovetop has electric burners which are aren’t my fave. Like I said, love the IP & induction stovetop.
I have looked into the “N” program (not spelling it out bc I don’t want YT to delete my comment as happens at times) but can’t afford it. If you can continue w/these meals I’d be grateful; they looked tasty & healthy.
I don’t eat salmon but my husband needs to have healthy animal protein including fish (he’s on dialysis awaiting a kidney-year 5!). I eat a lot of vegan meals but the chicken ones you did, well, hmm, I think I’d eat using organic chicken.
I need to continue losing weight (am at goal but want to continue), bc I need total joint replacements in both my knees; they do one then the 2nd four to six months later depending on how the 1st heals.
PS Whoever wants to lose weight has their own reasons as I do above, but I must say I’ve always thought you were lovely. I did get a notification of another vid I watched when you were talking about wanting/trying to lose weight. I was confused bc I think you’re beautiful. I’m not judging you; you’re on what you consider a necessary journey & if that means we get to benefit w/more “meals in a week,” I’m sure not going to stop you-lol. Also if that means you feel healthier & happier then you have my total support.

Hi Amber, wow...those meals certainly do look yummy. I am not much of a cook, so the faster and no cook meals is what I normally go for....but after watching this video of yours, I will definitely make the effort to do at least a little cooking.
Cooking at home is such an adventure, as there is no end to new recipes to try. Whole foods are definitely the way to go. I love finding things I can cook in my RV, so these recipes are definitely inspirational. Thanks for posting this video!!

Good evening Amber & Lily. I hope you are having a great Saturday. I watched your video the other day, but didn't have time to comment. I think it is great how you continue with your healthy eating. I just love whole foods. I have been eating quinoa when it was dirt cheap. LOL My mother could didn't eat meat until Shake N Bake chicken came out (she grew up on a farm and never got past the processing). She instilled the love of healthy greens and whole grains in my two sisters and I. However, I would say I am the only one who truly misses healthy eating when I do without for a week ... I also love tofu, so many flavorful dishes you can make out of it. It is like mushrooms, takes on the taste of whatever it is cooked with. Keep up the great work. I admire you for not keeping unhealthy snacks available. Safe travels.

Putting dried herbs - oregano, parsley, thyme - in your salad dressing is also great!! Store your prepped dressing in your mason jar in your fridge and the herbal flavors become more pronounced. Super Tasty!!

I myself changed my diet 3 years ago to a whole food plant based diet....my focus was eating healthy and not about losing weight.....losing weight is an automatic side effect!.....I lost 80 lbs in one year.....however not once did I focus on losing weight....i weighed myself once a month just to track it.....I would like to strongly recommend a You Tube documentary that opened my eyes and set me on this journey the very next day.....”What The Health”......thanks again and I’m subscribed!

That breakfast sandwich looked amazing- I’m going to make one. The other meals looked delicious too. You have inspired me. I have put on 35 lbs since I went through Menopause. My body constantly aches from the extra weight and I miss all the lovely clothes in my closet I can’t wear anymore. When I saw you start your journey I thought- yep, that’s what I need - a support program and accountability. Amber, next time you run out of soy sauce, try Braggs (same company as apple cider vinegar) AMINO ACIDS - it's a healthy non-toxic soy substitute w/ no MSG. I don't know about you, but at 48 years old and autoimmune issues, I a very sensitive to ingredients and MSG is one, it makes losing weight harder for me. I've also had to cut out dairy, cheese, yogurts even Fage. They all stall weight loss. I try just to eat whole organic foods in the natural states :) Love my instantpot! Thanks for the video! Awesome!! Proud of you losing 22 lbs. I e thought about using nook but have had my doubts about it working. I work 7-3 3 days a week and every other weekend 7a to 8 pm. During the week I usually do not eat until I get home and then I over eat and snack up til I go to bed. I may have cookies, chips or sunflower seeds. Very seldom cook and know I should but I’m exhausted when I get home. Just wish I knew that it would work for me. Long post I’m sorry. Love you hair. Absolutely keep a PStyle in my gobag and in my car for emergency. You can write your name in the snow. I use a Ziploc sandwich bag so I can throw it away or wash it.
