To keep food cold in a little cooler I use an empty hard plastic almond milk jug, leaving space about 2 inches from the top of the bottle so it can expand. It will keep your food cold for several days and when it does thaw completely you can use the water for your coffee.

Since watching your videos I started buying the rice, grains & beans packages & love them. I’ve been sautéing green onion, garlic and a small can of chicken, then adding the mixed grains & rice. Also have mixed Spanish Rice package with the rice & bean - added onion, garlic and stuffed into fresh peppers, wrapped with foil roasted over fire for stuffed peppers. All delicious - thanks for the tips and Safe travels!
Out of all the setups for transit connects I love yours the best simple as can be. If not for my Northern Lite 8'11 camper I'd go transit with a simple build. I love the sofa/bed too. I also use a jackery for power

I like to slow roast squash, beets, carrots and parsnips on fire over coals. A metal kabob skewer makes them easier to move around. Try apples or peaches too. The veggies are especially good cooled and put on green salad.

Your analysis on fridgelessness is brilliant! I have hoped for years for a nomad youtuber to make the exact point you did here. Refrigeration is not necessary for a lot of whole plant foods which can keep very well without risk of food poison. Sweet potatoes are 66% of the diet of Okinawan centenarians and last for months in warm storage areas. And rice and beans, nuts, oats etc. keep practically forever. My hotel on wheels is a Prius which has plenty of electricity when desired, but why waste precious space on a fridge when your practical advice works best of all without it and cuts down on total weight of rig. For years I only cooked what is needed in my small Instant Pot for one meal at a time. For the more perishable fruits one must buy these when in town every few days or so OR use dried or canned to stretch a few more days. I was overwhelmed with admiration to find a minimalist like you that is so steeped in Zen and the joy of living! Thanks, you made my day and give me hope!!! Thanks for sharing! :)

I was just thinking about what I eat that needs no refrigeration...and it turns out that I eat a lot of stuff. I have been doing clean eating...so lots of grains and nuts. Such a good topic...very helpful for van life when you don’t have refrigeration 👍

I just bought that pan a week ago. I love it Its carbon steel and lightly cast, which is better for conserving fuel. Heats up fast, cools fast. You are right. Its got a flat bottom just large enough to make 6 or 7 inch tortillas but its high sided, essentially a mini wok. Its fabulous for stir frying! Can cook a grilled cheese in it too. Low flame for eggs. I enjoy your videos so much. You are a master of small spaces. I may reconfigure my TC with the cross bench bed. I have a gaucho style bunk the long way but its cramped sitting. I was doing a lot of carpentry at the time and wanted space for long boards, but I think its time for a shape shift! Safe travels Lady Bug. Best. Charles.

I added those poshi veggies to my list .. i like eating as simple & healthy as i can w/very little cooking. My cooking usually is in a mini rice cooker. My tea is cold brew, no 8 hrs necessary either. Salmon, tuna (wildcaught) & mayo packets are great also. Again no refrigeration needed. I still need my vehicle but i like to live as simply & portable as possible, while being esthetic. I do own a sm portable fridge/freezer combo w/ 1000 w. jackery & a 240. I have a zero filtration pitcher & a lifestraw. And many other portable things that i use.
Also added that amylu chicken. I like that brand of kettle chips also, only in bbq. However, i don't eat them very often, bc i feel quite dehydrated afterwards, but very yummy.
I have a very small pressure cooker. I make beans & soup in it. Makes about two meals for one person. I always put left overs in open mouth thermos. Always still good next day for lunch.
I only carry frozen water bottles from home in my ice chest. I love my cold drinks. I never put ice in (when I can avoid it), it makes a mess of the other groceries. Those chicken sausages look good - precooked. I carry some pouches of tuna and chicken breast. I could live on peanut butter and jelly and be pretty happy, except I forget the jelly!
Hi Linda! That’s a great idea. When I really want ice, I just fill up a little thermos I have when I fill up my gas tank. It’ll satisfy my need for a cold drink for a little bit. I have gotten used to not having it so I just look at is as a treat when I do have it😛
You can buy a full Lettuce without plastic packaging and keep it in a sealed tub of cold water (layer it) It's cheaper than packets at a fraction of the cost too. Sending 😍
It really helps to move to cooler climate in the summer so food stays fresh longer. I never use a frig, only insulated bag. I did get very sick once so gotta be careful

It’s so much easier when you’re just doing it for one person: yourself! 😉 LOL I too have digestive issues from a chronic disease but have mostly stabilized it with an organic (as much as possible), whole foods, mainly plant-based diet. I eat well but obviously far too much compared to you! I think I’d be constantly hungry without my oatmeal/berries/walnuts/hemp/chia breakfast, bean and whole grain/veggie lunch, and big supper like a tofu/veggie/rice or quinoa stir fry. Yikes! I know this post is about a no refrigeration meal plan but your meagre meals stand out! How do you do it?! Thanks!
Yes, I agree it is much easier with just one person. I actually feel like I eat a lot 😝. The greens and veggies are filling. And rice, quinoa, and beans. There are other things that didn’t make the final editing cut because it was getting too long. I was concentrating on the meals part for sure, but if I’m hungry I’ll snack on a protein bar or nuts or crackers (I like oatmeal also) as it gets colder my diet changes as well. 😂 Hope it didn’t look too meager. I’ll have to do a follow up to set the record straight😛

Good ideas, will be nomading come early fall. No electric, fridge.... has to be very basic due to funds, will miss cold drinking water. Don't want electric, worry about EMF's in small area. Thanks for tips. 🙂
Glad you find the tips useful. One of the reasons I use that metal water container is to keep water cool. You’d be surprised how much the little evaporative effect it has cools the temp of the water. I got it a IKEA (the one that sits under my electric water faucet on the cabinet)…

Thank you. 🌻 Soaked oats or "overnight oats" are a staple for me. Rolled oats are the main ingredient, then there are various others. Raisins are great in with them. Chia seeds, a little crunchiness from a bit of high-pro peanut butter granola, some sliced bananas at the end, some powdered protein, pea protein liquid, some sugar-free chocolate syrup on top.... Many variations and possibilities. I usually soak them for maybe thirty seconds, but overnight is okay too. The raisins swell up. The crunch disappears unless you add the crunchy ingredients at the end, just before eating.

As a lifetime backpacker, I too am used to living well without refrigeration; that said, I find that living in my SUV with my cat, a small fridge is necessary. I power it with the smallest Jackery (167W) and charge it while driving or with a small, portable, solar panel (60W). So far, so good. I really like being able to store leftovers, have fresh produce and cold drinks.
@Anonymous Person So far, so good. I have the BougeRV 24qt., powered by a Jackery 160 (167w) when I’m not driving. No issues in 5.3 months. I recharge the Jackery with a 60w solar panel or driving.
I'm in my 2010 transit connect 80' from the Gulf of Mexico in Key West. Thanks for more great advice. Don't wait until your van is perfect, just go. Those were pearls.
An icechest is a great alternative to a mini fridge or a yeti and its fairly inexpensive option for someone who cant spend 100-200 dollars on it, when i go camping i tend to bring one big one and one smaller one for inside the tent and it helps to keep the tent cooler on hot sunny days

Great information Dee! You don't need refrigeration to eat good. But I love my soda and meat once in a while!😁 So I need a little of refrigeration here and there.
I hear ya😛 I just go out and get it fresh for the times I want meat or I go to a restaurant! I don’t drink soda, but I do like the occasional bubbly water. Again, I just buy them cold somewhere if I’m feeling like it. Cold rivers work well to cool down beverages-like a built in refrigerator nature has for us☺️
I heard you say Lake Abilene. Are you talking about Lake Abilene just outside Abilene and Buffalo Gap in Texas? Because that's where I was born. My family spent almost every Saturday or Sunday at Lake Abilene because my father was an avid bass fisherman.
Sorry I'm leaving so many comments. I love the healthy way you eat and the fact that you do not use traditional refrigeration. You have a lot of food that looks wonderful. I could never find anything like that when I'm out. I'm going to make a list of everything I saw you eating and see if I can find them in my area. I'm going to be making a trip halfway across the country in a few months and I want to be able to eat without stopping at restaurants etc.

Food intolerances are a pain. Mine is wheat gluten and sugars cause me some inflammation. I love your go to spice. My husband doesn't, but that's ok, it last longer with just me putting it on almost everything. When I travel solo I don't eat out, because it is just easier. I use my roto cast cooler more as rodent safe storage when it is just me. Not doing ice or a fridge that requires power is really freeing. I do alot of grocery store, backpacking type food, but I have to watch out for wheat and salt in those. Thank you for taking the time to create this video. Your videos are so educational and reminded me of options I have not been taking advantage of. Thank you.
Hey Dee, I still don't have refrigeration after almost a year of being out here. I don't have power to run one in the RV. Find l don't need it. Using fresh, dry, and canned products works for me. l don't over cook either, ( no leftovers). Take care my friend. Lots of 💕. Fee.
You can get propane RV fridges but they can be costly, was about $1CAD/day, in warm weather, 2yrs ago. Winter it went outside. I live off grid now, used to go Nomad, so I still turn to you guys lots for helpful hints as we ALWAYS encounter the same dilemmas, lol. Oh, and wanted to add, if your food is close to being, "off," by best before date, cook it, it'll buy you a few more days. 🤣 Love and respect from Eastern Canada. ❤️ 🇨🇦
Thank you for creating this video. I use to eat like this but I ended up with some nutritional deficiencies so now I eat like this, with the addition of more protein and supplements. Premier protein is life. LOL. It's good to see I don't have to have a fridge to keep my veggies from wilting. Great video, Dee! I love van life! One can eat as good and healthy living in a van. I do have a small 20 liter fridge and a 50 quart cooler which serve as a seat and a bedside table respectively. I prefer to cook outside after setting up a shelter above the sliding door. My favorite salads come from Trader Joe's. I cook mostly oriental meals with bok choi, sprouts, sea food or chicken and add siracha and/or chili paste for a kicker. I love to experiment, too, and have made some surprisingly delicious 😋 meals. Van life doesn't have to be boring 😴 like some house dwellers think it would be. I love your zeal and your wonderful attitude.
Hey Dee, looks good enough to eat! But as a meat and taters and eggs and milk kinda guy, I'm glad our shuttle bus setup has room and solar enough for a 60 quart 12 volt compressor refrigerator.

Oh my! Yeah, it’s the worst to not have your gut functioning well. I am so grateful to have found a diet that works well for me. I feel healthier than I ever have been and have no gut issues for years now. Keep experimenting and seeing what works. I worked for years to find a solution (and had help from nutritional experts). But it was well worth figuring it all out☺️

I added those poshi veggies to my list .. i like eating as simple & healthy as i can w/very little cooking. My cooking usually is in a mini rice cooker. My tea is cold brew, no 8 hrs necessary either. Salmon, tuna (wildcaught) & mayo packets are great also. Again no refrigeration needed. I still need my vehicle but i like to live as simply & portable as possible, while being esthetic. I do own a sm portable fridge/freezer combo w/ 1000 w. jackery & a 240. I have a zero filtration pitcher & a lifestraw. And many other portable things that i use.
Also added that amylu chicken. I like that brand of kettle chips also, only in bbq. However, i don't eat them very often, bc i feel quite dehydrated afterwards, but very yummy.

I have a very small pressure cooker. I make beans & soup in it. Makes about two meals for one person. I always put left overs in open mouth thermos. Always still good next day for lunch.

I only carry frozen water bottles from home in my ice chest. I love my cold drinks. I never put ice in (when I can avoid it), it makes a mess of the other groceries. Those chicken sausages look good - precooked. I carry some pouches of tuna and chicken breast. I could live on peanut butter and jelly and be pretty happy, except I forget the jelly!
Hi Linda! That’s a great idea. When I really want ice, I just fill up a little thermos I have when I fill up my gas tank. It’ll satisfy my need for a cold drink for a little bit. I have gotten used to not having it so I just look at is as a treat when I do have it😛
You can buy a full Lettuce without plastic packaging and keep it in a sealed tub of cold water (layer it) It's cheaper than packets at a fraction of the cost too. Sending 😍

It really helps to move to cooler climate in the summer so food stays fresh longer. I never use a frig, only insulated bag. I did get very sick once so gotta be careful

I too have digestive issues from a chronic disease but have mostly stabilized it with an organic (as much as possible), whole foods, mainly plant-based diet. I eat well but obviously far too much compared to you! I think I’d be constantly hungry without my oatmeal/berries/walnuts/hemp/chia breakfast, bean and whole grain/veggie lunch, and big supper like a tofu/veggie/rice or quinoa stir fry. Yikes! I know this post is about a no refrigeration meal plan but your meagre meals stand out! How do you do it?!

Yes, I agree it is much easier with just one person. I actually feel like I eat a lot 😝. The greens and veggies are filling. And rice, quinoa, and beans. There are other things that didn’t make the final editing cut because it was getting too long. I was concentrating on the meals part for sure, but if I’m hungry I’ll snack on a protein bar or nuts or crackers (I like oatmeal also) as it gets colder my diet changes as well. 😂 Hope it didn’t look too meager. I’ll have to do a follow up to set the record straight😛

Glad you find the tips useful. One of the reasons I use that metal water container is to keep water cool. You’d be surprised how much the little evaporative effect it has cools the temp of the water. I got it a IKEA (the one that sits under my electric water faucet on the cabinet)…

Soaked oats or "overnight oats" are a staple for me. Rolled oats are the main ingredient, then there are various others. Raisins are great in with them. Chia seeds, a little crunchiness from a bit of high-pro peanut butter granola, some sliced bananas at the end, some powdered protein, pea protein liquid, some sugar-free chocolate syrup on top.... Many variations and possibilities.
I usually soak them for maybe thirty seconds, but overnight is okay too. The raisins swell up. The crunch disappears unless you add the crunchy ingredients at the end, just before eating.

As a lifetime backpacker, I too am used to living well without refrigeration; that said, I find that living in my SUV with my cat, a small fridge is necessary.
I power it with the smallest Jackery (167W) and charge it while driving or with a small, portable, solar panel (60W). So far, so good. I really like being able to store leftovers, have fresh produce and cold drinks.

@Anonymous Person So far, so good. I have the BougeRV 24qt., powered by a Jackery 160 (167w) when I’m not driving. No issues in 5.3 months. I recharge the Jackery with a 60w solar panel or driving.

An icechest is a great alternative to a mini fridge or a yeti and its fairly inexpensive option for someone who cant spend 100-200 dollars on it, when i go camping i tend to bring one big one and one smaller one for inside the tent and it helps to keep the tent cooler on hot sunny days

Great information Dee! You don't need refrigeration to eat good. But I love my soda and meat once in a while!😁 So I need a little of refrigeration here and there.
I hear ya😛 I just go out and get it fresh for the times I want meat or I go to a restaurant! I don’t drink soda, but I do like the occasional bubbly water. Again, I just buy them cold somewhere if I’m feeling like it. Cold rivers work well to cool down beverages-like a built in refrigerator nature has for us☺️

I heard you say Lake Abilene. Are you talking about Lake Abilene just outside Abilene and Buffalo Gap in Texas? Because that's where I was born. My family spent almost every Saturday or Sunday at Lake Abilene because my father was an avid bass fisherman.

Sorry I'm leaving so many comments. I love the healthy way you eat and the fact that you do not use traditional refrigeration. You have a lot of food that looks wonderful. I could never find anything like that when I'm out. I'm going to make a list of everything I saw you eating and see if I can find them in my area. I'm going to be making a trip halfway across the country in a few months and I want to be able to eat without stopping at restaurants etc.

Food intolerances are a pain. Mine is wheat gluten and sugars cause me some inflammation. I love your go to spice. My husband doesn't, but that's ok, it last longer with just me putting it on almost everything. When I travel solo I don't eat out, because it is just easier. I use my roto cast cooler more as rodent safe storage when it is just me. Not doing ice or a fridge that requires power is really freeing. I do alot of grocery store, backpacking type food, but I have to watch out for wheat and salt in those. Thank you for taking the time to create this video. Your videos are so educational and reminded me of options I have not been taking advantage of. Thank you.

Hey Dee, I still don't have refrigeration after almost a year of being out here. I don't have power to run one in the RV. Find l don't need it. Using fresh, dry, and canned products works for me. l don't over cook either, ( no leftovers). Take care my friend. Lots of 💕. Fee.
YEP!!! It’s funny how that happens. When you go without certain things for a bit, you realize you may not have needed it on the first place😛
You can get propane RV fridges but they can be costly, was about $1CAD/day, in warm weather, 2yrs ago. Winter it went outside. I live off grid now, used to go Nomad, so I still turn to you guys lots for helpful hints as we ALWAYS encounter the same dilemmas, lol.
Oh, and wanted to add, if your food is close to being, "off," by best before date, cook it, it'll buy you a few more days. 🤣

Great video, Dee! I love van life! One can eat as good and healthy living in a van. I do have a small 20 liter fridge and a 50 quart cooler which serve as a seat and a bedside table respectively. I prefer to cook outside after setting up a shelter above the sliding door. My favorite salads come from Trader Joe's. I cook mostly oriental meals with bok choi, sprouts, sea food or chicken and add siracha and/or chili paste for a kicker. I love to experiment, too, and have made some surprisingly delicious 😋 meals. Van life doesn't have to be boring 😴 like some house dwellers think it would be. I love your zeal and your wonderful attitude.

Hey Dee, looks good enough to eat! But as a meat and taters and eggs and milk kinda guy, I'm glad our shuttle bus setup has room and solar enough for a 60 quart 12 volt compressor refrigerator.
More power to ya😛 pun intended 😆 That is absolutely a great thing to have when you like meat and potatoes!!! I just go out and get it the same day if I feel like that kind of meal. Or actually go out somewhere to eat☺️

Oh my! Yeah, it’s the worst to not have your gut functioning well. I am so grateful to have found a diet that works well for me. I feel healthier than I ever have been and have no gut issues for years now. Keep experimenting and seeing what works. I worked for years to find a solution (and had help from nutritional experts). But it was well worth figuring it all out☺️
