- Even in a tiny kitchen, big things can happen. These are a few of my favorite meals to make in the van. I make everything from venison burgers & chicken soup, to snacks & my ultimate comfort food. Enjoy!

We are Linnea and Akela. Through the van build, I used my stubbornness and drive to show individuals that they, too, can convert a campervan by themselves and on a budget, with a lot of learning, rolling up the sleeves, and getting to work.
Our goal is to inspire individuals to chase their dreams... to break from societal limitations and live the life they truly desire.

Our favorite sandwiches are as follows: enough rotissaried chicken cut into bite size chunks for one or two sandwiches, 1/2 c. of mayo with 2 heaping Tablespoons of freshly minced Tarragon. Mix well and spred liberally on a slice of bread. Top with chicken chunks,. Top this with 2 strips of cooked bacon, and top the bacon with slices of fresh avocado. Yumm! The second is a Tapp sandwich. Mix 1/2 c. of mayo with 2 heaping Tablespoons of freshly minced peppermint leaves. Spread liberally on bread. Top with two slices of pan roasted Turkey. Top this with paper thin slices of Granny Smith apple and top the apple with a slice of Provolone or Havarti cheese!

On the simmering broth for hours energy efficiently front, my mum and I use a Thermos Vacuum Warm Cooker (and other cheaper imitations like it) - it ends up only using about 15-20 minutes of active burner time!
We just boil everything using the removable internal saucepan for about 5 minutes before slotting it right back into the 'flask' then leave it to stew in residual heat for a few hours (usually takes 2 rounds of this, maybe 3 depending on how rich you want the flavours)
You may have come across this already and decided against it due to space constraints but thought it worth recommending in case it ends up being helpful to anyone because it's saved us so so much on gas ☺
All looks tasty. My fav salad invention from me to you. RECIPE:
make ranch from a packet, refrigerate.
loosely shave as much red cabbage into a large bowl you're comfortable using as a trough.
cut up half an avocado
grate a carrot and lots of cheddar cheese.
pour in ranch and toss.
So simple, but rich, yummy and filling. And cool in the summer months. No cooking and ready quick. Thanks for another great video.

seafood salsa (any desired mix of precooked seafood in Pace salsa, little pink shrimp definitely)
avocado
cream cheese.
Slather a spoonful of each on sourdough bread as you eat it.
Sooooo yummy. One of my favorite things in life. Love!

Love these recipes. People get in bad eating habits while living van life. These are great.
Side note, you actually don’t have to soak beans. They can just be cooked. Learned that from a 3 star chef! Try it once. You’ll be surprised.
It is not necessary to soak but it does shorten the cooking time, so I suspect that is why she soaks them.

When cooking "dry" (like ground buffalo or ground turkey turkey or ground chicken) meat, mix some amount of cole slaw with the meat. Comes out really juicy.

I make my own salad dressing also, I make blue cheese, ranch and chipolte ranch so much better than store bought, I love your easy recipes , I have a small kitchen also and try to use the least amount of pans and dishes easy clean up, love to see more recipes.
I just loved this!!! We live in our 350 square foot home and I am hoping to try your delicious recipes. I tend to just eat veggies raw with sun butter raisins etc … souped up oatmeal the dinners are my challenge so again thanks !!!

Something that I do with ground venison is to mix about 1/4 of bulk pork sausage into it. I usually buy the store brand of sausage that they make in house. This adds more fat but also adds a lot of flavor.

Loved this episode! I watched while I made cucumber toast with cream cheese, so I was definitely here for all of it!! 😊 Burger tip: press your thumb into the center of the patties before cooking. It stops them from "balling" up and makes for a more evenly cooked burger. 😋

The next time you make mac n cheese, try draining a can of tuna and adding it in along with a can of green beans. It sounds weird but tastes great!

I grew up eating eating wild game meat. I have no idea if you can do it in a van but buttermilk or even lemon juice works. The longer the better or even overnight in a fridge. Let it soak up all the flavours of a marinade and your favourite spices. And please don’t overcook it, especially the venison or moose. A light color pink in the middle is fine. I have found that it doesn’t matter what is done with bear meat. It has the strongest game flavor.

Oh my gosh, Adela’s head is bobbing all over while you are cleaning the chicken from the bones. Hahaha. I’m surprised you don’t have drool running down your arm! 🤣 the recipes were awesome. In fact I am hungry watching this in bed and I’m craving those bell peppers with cream cheese and everything bagel seasoning. I usually don’t eat breakfast but do lunch and dinner. So I know what I am having tomorrow. Yum! All of the recipes looked awesome. I loved them all. And yes I’d love to see more.

Yummy! My favorite way to cook a small venison roast is to make a jalapeño plum sauce, with bell pepper, onion, garlic…anything you love about a Mexican sauce. It is just based on plums. I really love it to be like a puréed salsa. They burn easily when heated, so half cook your roast, then finish at about 275 degrees with the plum sauce on it. Totally yummy!

Thank you for sharing some of your recipes 💞 For me, in the future, you could ad one now and then. It’s a little bit overwhelming to watch them all in a row. Some of them I remember but as they are so many, some hides. 😅 I just love to watch your life and your need for nature and tranquility! I feel just the same! That's not just any salad...oh girl.😘 Chefs kiss...I can do that cause I'm a Chef...my retirement apartment kitchen is about half the size of your van..and it does my head in. But then I look out my 12th floor beachfront balcony and...aaahhh.🥰🇦🇺

Dang these recipes all look so yummy! I agree that all salads are not in fact created equal- will definitely sauté some almonds for my next salad!
I think processors can affect the way venison tastes too! My brother switched and the venison was so strong I gave it back to him. Also he thinks the buck was probably really old too according to his rack and the fact my brother had been seeing him for a couple of years! Went to a different processor the following year and the venison was so much better!
I'm intrigued by the pepper & cream cheese snack. Can't wait to try!
You should think about buying an Instant Pot you could cook that soup starting with hard beans in 20 minutes. I like to cook tenderloin in it in 25 minutes. Tastes really good and super fast.
