@@2ntwins They did it a lot early in this series, and a lot of them were adding stuff most people don't have in their pantry. I recall one adding saffron (the most expensive spice in the world), for example. The only thing the chef did in this one was smoke the mushrooms. Not everyone has a smoker, but its easy enough to get that flavor without one that its not a big deal.
TBF I don't think they remotely used up most of the ingredients for the $172 burgers, so if they'd had made 30 burgers or whatever it would have come in a lot cheaper per burger. Stuff like TVP and bulgur wheat which make up a large fraction of the burger are pretty cheap.

Interesting that even though Chef Palak had ingredients which were a lot simpler and cost a fraction of the price, her finished burger was a lot taller and seemed to have more stuff in it.
Worth noting that Lorenzo's original ingredient tray only had 4 portobello mushrooms on it and was priced accordingly; but Chef Palak's finished burgers had two mushrooms each, in addition to the mushrooms used to make the mushroom bacon. As far as height goes, I think those double mushrooms are really doing a lot to make the burgers tall.
A lot of the stuff she had in hers was to add depth, not volume. Each bite is probably packed with tons of flavor, considering all the different powders and things were in it.
Well, that's because the burgers she made had a lot of basically whole components in them (tomato slices, mushroom slices, mushroom bacon) whereas most of the ingredients she gave to lorenzo ended up getting blended or mixed into either a sauce or the patties, making them much denser which also means they had less volume.
The techniques of Chef Palak are fantastic! Always baffles me how chefs can take so few ingredients and make them shine, but this episode especially just shows how much the process matters!
Well done for Chef Palak really showing off the possibilities that you can achieve in cooking without meat (or any animal products, in her assembled recipe). Nice video!
Since it was a soy cheese and there were no eggs in that mayo, didn't Lorenzo technically make a vegan burger? Which is one step further then just a veggie burger, I'm amazed either way.
@@ChyTeaLatte Since the concept was "veggie burger" she would have had to have based the recipe on using Worcestershire that didn't have anchovies or fish sauce, I believe.

This video taught me so many things and introduced ingredients I have never used (and honestly a couple I had no knowledge of prior) Really cool 🤌🏻💋
I like Lorenzo a lot and he really is getting better at cooking within this show but there is a difference between him and a profesionally trained chef.

Just a tip to anyone who cares: Nutritional Yeast Flakes over popcorn is an amazing snack or cheese flavoring substitute! I’m not vegan or anything but I truly love it because the flavor is unrivaled! My aunt is vegan and introduced us to it years ago. Since then, I always keep some close by.

"It doesn't taste like bacon!" it doesn't need to. As someone who loves a real bacon cheeseburger, I'd love to eat that. I bet it scratches the same itch and why would I want to limit myself to just bacon? Even as great as bacon is.

The sauce had Worcestershire sauce which afaik has anchovy in it. But an easy ingredient to remove and still have almost the same thing but vegan
