You can freeze them, wrap well or place in Tupperware type container with lid + have fresh baked at a moment's notice. Should be good up to three months if you don't eat them all first :)
I cut the amount of dough for each cookie in half and used half a s’mores marshmallow and they still came out nearly as large as the video shows. I can’t imagine how big they’d be with the original measurements. Maybe I screwed up somewhere. They do taste amazing though.
Brown sugar and white sugar will just give you a bit of different cookies. The molasses in brown sugar just makes it moister and chewier. White sugar would probably still be good, though. If it's hard to find brown sugar in your country then maybe look for molasses or something similiar and mix it with white sugar. That's how brown sugar is made. There's a lotta videos on how to make brown sugar on youtube.
