    I've learnt most of my baking from you! You are amazing. I made these cookies with salted butter and they tasted wonderful. My family finished them in minutes! The only thing is we found them a bit sweet, will reduce the sugar next time. Thank you for your delicious and easy recipes.

    These were hands down the best wafers I've ever had. Better than ANY brand or bakery. I never knew wafers could be this perfect. You've defined a new level of quality. They are perfectly buttery, perfect vanilla flavour, they melt in mouth immediately, they are so crispy. Amazing

    You can make your own cake flour by just taking 2 tablespoons out of 1 cup of all purpose flour and adding cornstarch.

    Mmmmm... I’m seeing ice cream cookie sandwiches, these homemade ‘Nilla Wafers w/a good instant banana pudding & whipped cream (unless I wanna be fancy & do scratch made pudding), using these as a crust for banana cream pie or broken up & layered in a trifle, or even Nutella cookie sandwiches! Of course they’d also be great all by themselves w/my morning coffee. Thank you for another great recipe!

    Stephanie, just found your channel and have subscribed. Can the dough be frozen. I would be making them for a banana pudding, and the recipe is too many for that, or should I just divide the recipe in half. Keep up the good work, love you detailings in instructing.

    What is cake flour? Not sure if it's easy to find here in Ireland. If I don't use it should I use more plain flour?

      All you have to do is measure out 1 cup flour. And take out 2 table spoons of flour, and add 2 tables of cornstarch. Then sift the flour about 3 times.....and it would lighten the flour.

    As always a great video. One question. I am not sure if we have cake flour in Brazil. Your recipe for vanilla wafers calls for 1 cup of AP flour and 1/2 cup of cake flour. Is the cake flour totally necessary or can I just use 1 1/2 cups of AP flour? Thanks from Brazil

    Hi Stephanie! Great and easy recipe. When i think about cookies i always for milk & cookies. And with vanilla cookies the perfect match is chocolated milk. I wanted to tell you about the eggs' classification by weight. Here in Europe we have a regulation, the same for all the states in EU. Eggs are classified from S to XL. S are eggs up to 53 grams. M are eggs from 53 to 63. L are the ones between 63 and 73, the most common weight and the standart in recipes is a 65 gr. egg. And XL are eggs of 73 gr and more. Maybe someone can tell me if the classification is the same in the US.

Take a look at what I discovered. Come on now, I know you have access to that same information as the rest of us.

    Just curious, the chocolate wafer you roll the cookie dough and refrigerate and then slice the dough, why do the vanilla wafer differently?

      Our oven has a self clean mode so I just turn it on when it becomes dirty.

      Not sure if they would be good for a pie crust. These vanilla wafers are more fragile than the store bought ones.

      When you want to reduce the sugar in a recipe, it is really a matter of experimenting and then see if you like the results.

      Yes. For 1 cup cake flour, take 1 cup all purpose flour, remove 2 tablespoons and replace with 2 tablespoons cornstarch.

    Dear Stephanie, i tried your vanilla wafers receipt today. Unfortunately it didnt turn out the way like yours. It didnt flatten out. It remain the same shape as i dropped from the icecream scoop. I have followed your receipt exactly. What did I do wrong? It looks like i used too much flour but i used 1 cup of all purpose flour and 1/2 cup of cake and pastry flour.

      Not sure why that would happen. Did you flatten the rounds of batter? Sounds like too much flour. Did you weigh your flour? If not, spoon the flour into your measuring cup and then level the top. You could try adding a little more cream.
