Finally someone addressed a homemade Nilla wafer. I was amazed when looking at banana pudding recipes how everyone including cooks and chefs used the boxed wafers which have high fructose corn syrup not to mention other undesirable ingredients. I applaud Gemma for showing homemade ones - she is the only one I have seen online that made these homemade. Also I noticed that people using the boxed wafers called their pudding "homemade" because they didn't use boxed pudding, but they used boxed cookies so it wasn't "homemade". Gemma is a gem!

Loved this fans video. The girl from South Africa had the most beautiful looking cookies but that is my bias and love for pastry aesthetics speaking. Everything with chocolate and sprinkles ... I am all for that. 😋 Plus, it took me back to the time I was a little girl and there used to be this absolutely delicious bakery that had the best a ten year old craves for.

I bought a box of nilla wafers tonight to use in a pudding I plan to make for Thanksgiving. Well, my kids found the box and have already eaten a little more than half.
