Bless you. Oreo has released just about every iteration of their cookie under the sun EXCEPT the one I want: plain Oreos, just the cookies. As you said, Oreos have a unique flavor, and I love them, but I DO NOT like frosting. I always scrape it out, which feels like such a waste. Being able to make JUST the cookies will be wonderful. I'm happy to see your homemade version of the 'Nilla Wafers as, here in Canada, I have not been able to find these cookies in grocery stores. I use these as the base for my mini cheesecake recipe and there does not seem to be anything else to compare. If this cookie has been discontinued, I don't know why. Thank you!! 👏 👏
Your Nilla Wafers might be closer to the original "Vanilla Wafers" because Nilla has been using synthetic vanillin since at least 1994 :) Haven't had Chips Ahoy since I left Chicago in 2005, I should try your version ASAP!

You can in the chips ahoy and the Oreos, but I don’t recommend substituting it the recipe for Nilla wafers. Without butter, it just won’t be close to the real thing in terms of flavor and texture.

Gemma, these cookies are amazing. I have a question. I don’t have a food processor but do have a kitchen aide blender. Can I use a blender? If so do I use the pulse option? Maybe I should get a processor. It’s just another piece of equipment that gets packed away. I like keeping my counters clean and only withy my coffee pot 😜 and toaster oven. Thank you so much. I think Famous Amos is better than Chips Ahoy. Tastes better and good chocolate flavor. Please make a version of their chocolate chip cookie! How about a version of Lil Caesars pretzel crust pizza with cheese sauce too?
Now I'm gonna have to try them all. The BBB Oreo looks like a mini whoopie pie. YUM ! I would love to see Gemma do a homemade version of the Nabisco's Royal Lunch milk cracker. I have a recipe that calls for those and they are no longer made. There is a knock off company (Atlantic Trading LLC) that tries to make the cracker but it is not the same. They use a phosphate leavening and the original did not and the knock offs do not contain any malt. In short the knock offs just don't taste the same as Nabisco's original.
@@biggerbolderbaking I really hope Gemma has a go at these. I wish she could have tried an original to get the texture and taste down. The knock offs are too crunchy and have little flavor. The originals were more tender and had a delightfully light but complex flavor that sweetened on the tongue. Probably the malt. New England was one of the last places it was made and distributed because it had such a strong local following especially among the Lithuanian community.

I think Famous Amos is better than Chips Ahoy. Tastes better and good chocolate flavor. Please make a version of their chocolate chip cookie! How about a version of Lil Caesars pretzel crust pizza with cheese sauce too?

I would love to see Gemma do a homemade version of the Nabisco's Royal Lunch milk cracker. I have a recipe that calls for those and they are no longer made. There is a knock off company (Atlantic Trading LLC) that tries to make the cracker but it is not the same. They use a phosphate leavening and the original did not and the knock offs do not contain any malt. In short the knock offs just don't taste the same as Nabisco's original.

@@biggerbolderbaking I really hope Gemma has a go at these. I wish she could have tried an original to get the texture and taste down. The knock offs are too crunchy and have little flavor. The originals were more tender and had a delightfully light but complex flavor that sweetened on the tongue. Probably the malt.
New England was one of the last places it was made and distributed because it had such a strong local following especially among the Lithuanian community.
