You should definitely look into adding grated zucchini to your overnight oats. They go great with regular instant oatmeal and overnight oats. You get double the bulk for so little calories and you can't even taste them. I always add slices of frozen zucchini to my strawberry protein smoothies and I use them in my brownies too. I also make mini apple pies and use half apple and half zucchini and when I eat it I cant tell whether I eating zucchini or apple. The Zucchini takes on the flavor of whatever you add to it so that's why there are so many recipes that have them in baking. I've also seen people use cauliflower too for bulking oats but I haven't tried that yet.

Have you ever tried oatmeal pudding? My recipe is bring 800ml of water to boil > put 45g of oats into the water > cook for 10 minutes > mix 23g of cook and serve pudding mix with 200ml of water and some sweetener > pour the water with pudding into the pot and stir until its thicc (around 3-4 minutes (it should be boiling)) > pour into container and let it sit in the fridge overnight. The recipe caps at 254 kcal ( depends on the brand of pudding mix you use). You can mix protein powder into the oats for extra protein or sliced apple/straberries for more volume, also there is like million different flavours of pudding so you can use something different every time.

This is basically my morning cereal recipe, except i use milk powder instead of peanut butter flour, and I add granola. Instead of waiting for it to set in the fridge, I microwave it, and then I top it with the chocolate chips and some walnuts. When I bet bored I just add a packet of splenda and a pich of msg and it somehow becomes a completely different meal.

I bet ~1/4 box of fat free sugar free pudding mix would be awesome in these, especially the chocolate. 100 calories a box, and its supposed to make 4 cups of pudding. So 1/4 of a box is like adding a cup of pudding worth of flavor.
I add 1/4 of a box when I make protein smoothies, often with frozen mixed berries. The chocolate and raspberries go awesome together, especially if you use chocolate protein powder.
