I sort of agree with you about the European butter, but that's only with the bigger brands of butter in the United States. We do have small farms here that have the higher fat content butter. It's just not on the typical grocery stores shelves so you have to visit local dairy farms to get the good stuff that is local. Excellent recipe. Thank you very much. Love shortbread! When you grow up with Norwegian heritage, butter in all baked goods is normal. My mom tried to substitute margarine with a few recipes, but it never tasted right. We always sandwiched shortbread with homemade jam.
I've made shortbread that used rice flour instead of the oats. I believe the point was to increase the total dry ingredients with something that doesn't have gluten to prevent it from becoming tough/less flaky. That recipe was more tedious since it required patting it into a circle (not in a pan) and baking on parchment, though it was still very good. I'll try this one instead, so much easier! Thank you!

Hi Daniyal. I pulsed all the dry ingredients in one go using the food processor. If you want to blend the oats separately, you can manually grind it, then just add to the rest of the dry ingredients. Hope this helps.

Hi. I baked this in a standard or a conventional oven, which means it uses bottom heating only, and the baking tray placed on the middle rack. Hope this helps.

Hi Sankey. Rolled oats are thicker and bigger. If by normal oats you mean the quick cooking type, then you can use that in this recipe. I don’t recommend instant oats as it won’t serve the purpose of adding texture to the cookies, aside from it having other ingredient already added to it. Like the look of this recipe but oats or oatmeal are NOT and have never been traditional to Scottish shortbread. The Walkers factory is not far from where I live.
You need a food processor for this, as you don’t want the butter to melt into the flour. You can grate frozen solid butter into the flour, and using a wooden spoon, mix until it turns a crumbly texture. I don't recommend it as it would defeat its purpose in this recipe, which is to add texture. Also, instant oats has other ingredients added to it, it's not pure oats. But you can use quick cooking oats instead. Hope this helps.
I like to flip the pan over and then put the parchment paper on the outside and wrap it almost like you would a present then flip the pan back over and the paper drops right in beautifully!

You can actually leave it out if preferred. I included it to lend it a hint of nutty flavor and texture as well.

After you grease the pan using the butter wrapper, try using the wrapper as your pan liner
Hi. I don’t recommend it as some of the butter paper used may be made of wax paper. Wax melts when heated and could get into the food.

Hi Daniyal. I pulsed all the dry ingredients in one go using the food processor. If you want to blend the oats separately, you can manually grind it, then just add to the rest of the dry ingredients. Hope this helps.

Hi. I baked this in a standard or a conventional oven, which means it uses bottom heating only, and the baking tray placed on the middle rack. Hope this helps.

Hi Sankey. Rolled oats are thicker and bigger. If by normal oats you mean the quick cooking type, then you can use that in this recipe. I don’t recommend instant oats as it won’t serve the purpose of adding texture to the cookies, aside from it having other ingredient already added to it. Like the look of this recipe but oats or oatmeal are NOT and have never been traditional to Scottish shortbread. The Walkers factory is not far from where I live.

It would be better to mix them by hand.
You need a food processor for this, as you don’t want the butter to melt into the flour. You can grate frozen solid butter into the flour, and using a wooden spoon, mix until it turns a crumbly texture. Id avoid handling and using the butter wrapper I take it off and throw it away butter wrapper are notorious for having PFAS in the wrapper 🤔✌🏻

I don't recommend it as it would defeat its purpose in this recipe, which is to add texture. Also, instant oats has other ingredients added to it, it's not pure oats. But you can use quick cooking oats instead. Hope this helps.

I was told if you crumple the parchment paper it goes into the pan better
I like to flip the pan over and then put the parchment paper on the outside and wrap it almost like you would a present then flip the pan back over and the paper drops right in beautifully!

You will need to chill the dough that’s been rolled into a log. Once it’s set, slice the log into discs, place on baking sheet and bake.
You can just use the butter wrapper instead of grease proof, even less waste :-) x
Sometimes they use wax paper for wrappers. The thin film of wax can melt into the food so it’s not always ideal. So check the paper carefully.

Maybe use the butter paper as the greaseproof paper?
I don’t recommend it if they are using wax paper. It can contaminate your food when you heat it.
It occurred to me that the butter paper is parchment. Why not line pan with butter parchment.
Hi. The size is usually not big enough to cover the inside of a baking dish.
Also, be aware that some brands of butter do use a type of waxed paper.
For people in the ME, pls don't leave ur butter out overnight unless u want it melted😂
