Stephanie Jaworski of Joyofbaking.com demonstrates how to make Chocolate Chip Shortbread Cookies.
Shortbreads are one of my favorite cookies. I love their crisp and crunchy texture and their buttery flavor. A basic shortbread recipe uses just three ingredients, butter, sugar, and flour. For this recipe we are adding chocolate chips which add a pleasing contrast to the buttery sweet flavor of the shortbread. Unlike some of the other shortbread recipes on the site, that involve rolling and cutting out the individual cookies, this is a slice and bake cookie. Which means we simply make the batter, form it into a log shape, chill, and then slice and bake the cookies. The cookie log can even be frozen which makes it an ideal make ahead cookie.

I just remembered what they were called…Chocolate Chip Angels,they were really good for a store bought cookie
I baked these today and I used 50 grams of mini chocolate chips instead of 85 grams of regular sized chocolate chips. My family liked these shortbread cookies. Thanks Stephanie for the recipe.

I refrigerate it overnight.
Hi Stephanie, it's so easy & fast to make the batter. I just made & chilling it now. I replaced with dark choco chips & dried cranberries. Thank you for you easy to make recipe. My favourite is it's your dark fruit cake & I am feeding it with Apricot Liqueur till X'mas. Wooow Stephanie! I have been your fan since I was young now in my late 30es lol... all your recipes are fool proof. Now I am looking for eggless less buttery cookies with good shelf life, do you have any good suggestions? Or any good recipes to try on. My dad feel so heavy with buttery cookies. So was looking for light and eggless .
Most shortbreads are eggless, but they do contain butter.

Stephanie, Thank you. How do these compare to the cookies that children are used to eating ie. Toll House. Personally, I would love the shortcake taste, but I'm not the only one that eats them. Most like ooey gooey.
This cookie is buttery crisp, not soft and gooey like a regular chocolate chip cookie.

I would thaw the log in the fridge overnight and then slice and bake.

I made these today, they are so good, can't eat just one, impossible hehehehe, I wanted to add some pecan pieces as well, and was wondering if I subtract the amount of chocolate chips to account for the pecans? Lets say, 1/4 cup chocolate chips and 1/4 cup pecan pieces?

I haven't done any taste testing on this, and I think I will soon, but my impression is that if you substituted chopped pecans for the chocolate chips -- and otherwise follow this recipe to the letter -- you'd have a better, fresher, tastier version of the old Pecan Sandies cookies.
Yes. I have tested this recipe using chopped pecans and they are really good. As you said, similar to pecan sandies.
