Hello, I don't think it's an absolute if you don't have it around the house. That's just my preference and what I use most when making any type of cornbread. You could also just use cornmeal without the flour if you wanted also
A simpler version is to use 2 parts Corn meal, 1 part "Just add water" instant pancake mix, salt, and enough water to form thick batter. You don't need an egg binder. The wheat gluten in the instant pancake mix is the binder.
@@tammyjo6056 I prefer the thick batter too. I slowly added water and stir until desired consistency. Also, try adding a bunch of chopped onions to thick batter and make onion patties. Taste like onion rings but easier to make.
My parents, and I to this day only use cornmeal and a little flour and cold water to make our cornbread. Add all this other stuff is not necessary. I don't like sugar or eggs in cornbread
@@jimmymullins4997 I don't like cornbread sweet and I hate eggy taste. The flour gluten will act as a binder for the cornmeal, but will not rise on it's own, will be dense, and is probably similar to Hushpuppies. If you add some baking powder or use self rising flour, you can get a less dense, more bread like cornbread. I was using the pancake mix as a substitute for self rising flour.

Crowder peas are pretty bangin' too. Maybe a little tomato gravy for the fritters....wooooo boy!
