This is nuts! I ate yesterday at the Mount Vernon Inn Restaurant @ Mount Vernon, VA. I asked the waiter what would George Washington eat / his favorite foods. He recommended and I had Ho Cakes, Pan Bread, pan fried brown trout with succotash, and bread pudding for dessert. Ho cakes are wonderful / the whole meal was amazing. Now today, my favorite BBQ /food channel does ho cakes, made my day!

Mr Rollins, I’m from Massachusetts, and Johnnycakes are still made in the traditional way and no yeast was used way back then. Corn meal yellow or white but a finer milled grind, first mixed in hot water to soften the meal, plain flour, a tiny amount of sugar salt and milk. They aren’t cakey like pancakes but delicious with butter, syrup even molasses, honey or jam

Brings back a lot of memories from growing up in the WVa mountains in the 1950-60s. The first would be loaf pone, but only natural yeast. Let it set behind the wood/coal cook stove over nite, and if it turned sour, you tossed it. Akin to salt rising bread, but 10x better. Most of the older folks poured boiling water over cornmeal to get it going. Best fried in bacon grease the following day.

Thank you two so much! When we were kids, it was four of us kids and our mom. She would fry cornbread at least 4 times a week. When supper was over, we would get a corncake and smear homemade applesauce on it for dessert.

We should have to listen to his farewell address every election cycle. It's a stark reminder of just how far this country has fallen away from the principles it was founded on.

You are absolutely correct. It is sad that this country was founded on God. Even when I was growing up, the parties upon Capitol Hill would agree to disagree and then go have lunch together. Now they are wanting to fight over stupid crap.Only God can help this country get back to where it use to be.I pray that we can make some sort of progress towards the way we were.

My mama's hoecake was basically hot water cornbread, made with white cornmeal. No yeast, and not necessarily any baking powder or soda. Salt, but no sugar, just fried in Crisco or another fat. And she'd make it the size of her 10" carbon steel frying pan (the one you had to dry after washing, or it would rust!), where most people make hot water cornbread in smaller pieces. She'd cut it in pieces, like a pie I remember that being made when I was about 2 years old, and she made it, her favorite thing, until she died at 73.
I am not so good at making it, because you have to get just the right amount of water, the right temperature: hot enough to cook the cornmeal. If it doesn't cook enough, it won't hold together, but although it will be a mess, the cornmeal mush, with crust and butter, is still really good. Dense, but really good.

Mr. Rollins...Thank you for your recipes but especially for the history lesson. I learned more about George Washington this afternoon from your video than I ever learned in school. Thank you for teaching me more about the father of the country than I ever knew -- heck, I thought he had wooden teeth and thought that was probably why he looked mad all the time. I also never knew that hoe cakes and johnny cakes were basically the same but with a couple details changed.
One other thing. I'm glad that you frequently remember Beag. He was such an important part of your and Shannon's life, I love the fact that you never forget him. I miss him too and fervently hope he didn't suffer at the end.
