  • My jerk chicken wins $2000 1st place 3 years in a row. How to make jerk chicken in my step by step jerk chicken recipe video. My secret method is finally out for the best smoked jerk chicken on the grill. I'll also show you different ways of smoking to get that perfect smoked jerk chicken even if you don't have a grill or smoker. We used Walkerswood jarred jerk in the field to win the chicken category. I have also included my personal authentic jerk chicken recipe at the end of this recipe...Enjoy!
    Jerk Chicken Wins $2000 1st place
    Jerk Marinade:
    6 large chicken legs
    2 heaping Tbsp. Walkerswood jerk seasoning
    2 stalks chopped green onion or scallion
    2 sprigs fresh thyme chopped
    1-2 Habaneros or scotch bonnet peppers minced (to taste)
    1" knob of fresh ginger grated
    2 cloves garlic minced
    2 Tbsp. olive or avocado oil
    1 Tbsp. white vinegar
    Mix the above ingredients well in a bowl
    Half a lime and Himalayan salt for the finishing stage
    Directions:
    Cut two slits - skin side on each chicken leg with a sharp knife.
    Work the jerk marinade into each chicken leg including the slits until completely covered.
    Place all of the coated chicken into a large Ziploc bag, burp the air out and seal.
    Marinate in the fridge for 8-24 hours flipping the bag as necessary.
    Cooking:
    Preheat grill, smoker or oven to 325 degrees and add smoke if using.
    Cook the jerk legs with indirect heat, skin side up for 40-70 minutes and flip if desired.

    Finishing Sauce:
    Baste the chicken with Walkerswood Jerk and lime sauce 1:1 - salt to taste in last 10 min.
    Or
    Serve with a fresh jerk, lime and butter sauce for personal dipping.
    Cooking Tips:
    -To make it authentic Jamaican jerk chicken, use pimento wood for smoking and crank up the scotch bonnet pepper heat!
    -Spin the chicken on rotisserie over indirect charcoal with apple chunks to win 1st place.
    -Marinate a whole chicken or chicken pieces and make it your own. Please experiment and share with your neighbors, they will love it, trust me!

    $2000 1st. Place Authentic Jerk Chicken Part 2
    My Competition BBQ team won $2000 1st place chicken 3 years in a row using modified jarred Walkerswood jerk seasoning.
    As requested, I am sharing my homemade version of jerk marinade. I always turn the chicken on a charcoal rotisserie to self baste as the chicken cooks to make the chicken super moist with a crispy skin. Don't leave any ingredients out as they all compliment each other for 1st place jerk chicken.
    Authentic Jerk Chicken Personal Recipe
    Ingredients:
    3-4 whole chicken legs
    Marinade Ingredients:
    2 scotch bonnet peppers seeded
    4 cloves garlic peeled
    1 TBSP fresh thyme leaves
    1" knob fresh ginger
    4 green onions cleaned and chopped
    ¼ cup tamari sauce
    2 tsp. allspice powder
    ¼ tsp. nutmeg
    ⅛ tsp. cinnamon
    ¼ tsp. clove powder
    1 TBSP kosher salt
    2 TBSP olive oil
    Smoke:
    2 TBSP whole allspice berries (pimento)
    12 bay leaves
    Add to a foil package and seal.
    Directions:
    Place all of the marinade Ingredients in to a processor and pulse to make a paste.
    Score the chicken pieces with a sharp knife, about a half inch deep.
    Coat the pieces of the chicken completely with the marinade paste and place in a Ziploc bag. Burp the air, seal and rest in the fridge preferably overnight.
    When ready preheat your grill to a medium heat.
    Add the smoke package.
    Cook the chicken for about 30-40 minutes or until cooked with a nice crispy skin, flipping as necessary.
    Important:
    Squirt with fresh lime and salt in the last 10 minutes for flavor separation.
    Rest for 5 minutes to firm up the skin.
    Serve with my Cauli - Mac - N - Cheese. • Cauli Mac & Cheese😎
    Notes: You can substitute habaneros for the scotch bonnet peppers.
    Discard the used marinade.
    Authentic Jerk chicken is traditionally cooked over pimento wood but it is very hard to obtain.
    Allspice berries and bay leaves are a great substitute. You can also add the berries and leaves to the coals for great smoke.
    Spinning on a rotisserie over charcoal is my preferred cooking method to self baste.
    If you are cooking in the oven place the chicken on a raised rack. After the chicken is cooked, you can place the chicken in a covered bowl and add an infusion of smoke from a smoke infuser gun.
    This marinade is perfect for jerk pork too. Pork butt, loin, tenderloin, ribs and pork belly.

    Totally agree with your finding of using Walkerswood and augmenting just to get a fresh pop of some of the ingredients. I stumbled across it years ago when it was only in Caribbean specialty stores. And I mix whole allspice berries and hickory chips for smoke. Almost as good as Scotchies!

    Finally getting my jerk chicken dialed in after watching this. I previously made the whole thing from scratch, then used straight Walkerswood; neither were what I remembered. I wound up making the marinade with Walkerswood, one scotch bonnet, soy sauce for umami, green onion, dry thyme (forgot to get fresh at the store), 3 cloves garlic, ginger, orange juice for sweetness, and key lime juice for some acidity I thought was missing in Walkerswood. Marinated 8 thighs overnight, smoked on a charcoal kamado with apple wood and a handful of soaked bay leaves + allspice berries at 350F, finished with a glaze of Walkerswood + key lime juice. I think it could be improved by backing off the scotch bonnet a bit to not overpower the allspice and thyme flavors and slashing the chicken more aggressively up front but I'm happy with how it came out and a little surprised the chicken didn't just disintegrate in a citrus marinade overnight.     bump on the "thanks for walkerswood" . I agree on the lower temp/smoke. I cook on a pellet grill, and have found that mesquite seems to pair well with Jerk chicken. Good info thank you.

    Thanks for your video! Very creative to add fresh ingredients to store bought Walkerswood to enhance the flavors, and the finishing sauce is great idea too! I don’t have a smoker or bbq grill though, i just have an oven.

    This is my go to recipe. I add a little bit of lime juice, allspice, and sukrin gold brown sugar substitute to marinade. I also put all ingredients in a processor to make more of a paste to rub over the chicken.

    Nice video, looks good, I’ve tried Walkerswood before and it’s good, however I enjoy making my own Jerk Marinade from scratch, I found a good recipe in a Caribbean cook book over 20+ years ago and I’ve been making it ever since.

    S.J.B. Montréal Jerk was the best ready to use Jerk on the market for me ( need few other spice tho ) but Steven Raichlen recipe in Barbecue Sauces and Marinade book still my favorite if made one count ! Walker wood hot in paste is pretty good too and it was not expensive but i still like my home made habanero hot sauce bether to spice it more then i adjust with few other spice . Realy taste if someone never try it before he should put that on his to do list !

    Hi, thanks for the video. So you’re not placing directly on the grill? Is that a tray? I look forward to trying this. Also, you mentioned indirect heat. So the tray is placed over the off side or it’s indirect because it’s on the tray? Thanks

      I use a foil tray with a raised rack for easy clean-up. when I cook indirect. I have the outside burners turned on with no heat directly below the tray.
      the tray helps deflect the heat too.

    I will have to try this recipe out! I have my chicken marinating right now and didn't see this until it was too late. It's getting ready for the grill and my pimentos and bay leaves are soaking. Should I also add some applewood chips? What is the best way to create some smoke with a gas grill... Perhaps using some tin foil in some way?? The last time I was at an Asian grocery store, I picked up a jar of Jamaican Pimento seasoning made by Carib. I am not really sure how to use this or what it is for. Aside from having some awesome Jerk Chicken in Jamaica, I haven't ever prepared it or found a restaurant that does. I prepared a rub from scratch and a sauce/marinade after finding what I thought was close to being authentic and what I ate in Jamaica. The marinade tastes so wonderful by itself.. can't wait to try it out on a piece of the chicken. I need to purchase some more Jamaican whole pimentos as I used all of them. Is jerk chicken usually served with a dipping sauce? Thank you for sharing your information and congratulations on the win. I'll be trying your recipe next. Perhaps I'll have the seasoning by then!

      For quick smoke on a gas grill, wrap some wood chips in foil and place on the burner. wood pellets also give great smoke.
      As for a jerk finishing sauce, I sometimes use Walkerswood with a squirt of fresh lime.

    Wow without ever watching your video i have almost the same recipe as this lol. Only difference really is that i added some cinnamon and nutmeg for the dry seasoning part along with black pepper..and i squeeze an entire lime onto it first

      @@KetoLifestyleRecipes it is hard to find these days, probably online but it's well worth it. It's a thinner sauce so let marinade abit longer but its excellent.. sometimes I'll add a bit of walkerswood just to make it abit thicker.

      No, Authentic Jerk smoky flavor comes from pimento wood. if you use a different wood its tastes good but it will not be jerk chicken

      @@MinniNatty Pimento can be tough to find and expensive if you do get it. Any type of wood smoke is better than gas or oven. If you want a more neutral smoke just use charcoal and cook low and slow.

    I like how you add white vinegar -- very over looked ingredient IMO. I also like your finishing touches with the salt and look forward to trying it. However, it can't be habanero or scotch bonnet. It has to be scotch bonnet. My jerk is scotch bonnet-centric, and if it is missing, it just does not hit right at all.       We used the Walkerswood Jerk in competition with great success but I also have a very good homemade version which is now my go to.

    Making your own marinade is not rocket science. I make my own as well as enhance Walkerswood.

      As I explained in the video, we used Walkerswood Jerk. It is the best commercial jerk out there. It paid off as we won $2000 1st place three years in a row. Most people don’t want to hunt down ingredients especially in a pandemic. I smoke with applewood. I tried for years to get pimento, can’t do it.

      Not a jerk competition
      It was in the chicken category and you can use what ever you want to win. You would be surprised at all the trickery in BBQ competition. enhancing Injections, meat glue etc..
      Hey $2000 first place three years in a row worked for us.
      I'm just sharing how we did it with jacked up Walkerswood jerk.

      Here in North America, they are labeled legs in the grocery store. The leg consists of the thigh and drum.

    Nice video, and I absolutely love Walkerswood, but sorry, if you're not using Pimento wood, you can't really call it authentic jerk. It's expensive, but well worth it. Just my .02. Been using both over 15 years. Never competed, but there's never any leftovers. Congrats on your winnings.

      I have all kinds of smokers but the majority only have access to a gas grill or oven. I talked about smoking options and got some good smoke on it. It got the job done.

    As a Jamaican I think it would be ok to use that seasoning if you were at home . But to win a competition for jerk using a store bought walkers is very unauthentic and you did not deserve to win . A real jerk man makes his own damn jerk seasoning. I’m not going to be subscribing 🤬👎

      I introduced simple rotisserie jerk to the judges.
      I was simply sharing how we won first place chicken 3 years in a row.
      A simple recipe that it could be reproduced consistently at home.
      Judges disagree with you as we received 5 100% scores.
      I'm pretty sure I could kick your ass in a competition.

    The channel is called "Keto Lifestyle". The jerk seasoning contains sugar. That does not compute. Read the ingredients on the bottle and make your seasoning. All seasonings are listed in the order of amount. Experiment and you'll find the mixture you like. Make it without sugar or use a healthy sugar substitute. 😎
