Well you got the gist of the story, but to clarify some points:
    - The player character changes from game to game, Dark Souls 2 is the only one to show them in the intro (you guessed right that it was the knight, tho it was also the hooded figure from the real intro)
    - Your assumption that everything is Undead is pretty much on the nose, and the "Hollow" referenced in Dark Souls II is just kinda the end state of an Undead who lost their will
    - The world works in cycles, whereby an individual may sacrifice themself to the First Flame (from the Dark Souls I intro) to extend the Age of Fire, or abandon it to bring about an Age of Dark; generally the games assume that the Age of Fire has been continued each time someone has "linked" the Flame
    - The kingdoms of the world of Dark Souls generally exist during the peak of an Age of Fire, and we come along near its end and see these kingdoms in disrepair after the Undead Curse resurges due to the Fire's fading
    - The Lords of Cinder are people who successfully linked the Flame in the past, and are called upon to sacrifice themselves once again to the Flame should none else come to restore it
    - The gods (Gwyn, Izalith, Nito, etc.) from the Dark Souls I intro aren't Lords of Cinder, they were the ones who found the Lord Souls within the First Flame when it first appeared, and were given power through them which allowed them to confront the Archdragons (also, in reference to Dragons, most of them seen during and after Dark Souls I are descended from the Archdragons, but are *far* weaker in comparison)

They aren't actually inherently hard, damage wise it's like playing an action game on hard (the difficulty option after normal, NOT the nightmare difficulty type) however since this is an rpg you can become insanely powerful, having a bajillion HP and 2 shotting bosses, the catch is that the game doesn't explain how most stuff works and where to find equipment, there's no tutorials or even a map (the games are linear with sprawling and spiraling, interconnected paths, elden ring which is open world, does have a map). So in conclusion the games are not hard because they require high skill, they are "hard" because they require high brain usage and perceptiveness. The amazing thing is that the games are 99% of the time so fair that you can beat the at level one with 0 upgrades and pure skillful gameplay, so the difficulty is an in-game slider that the player controls at any point, since the game offers a bajillion ways of making you stronger, you just have to find them and use them properly

10:00 Dark Souls is very cryptic. Even playing the game it wont out right tell you a story. Its on you as the player to read item descriptions and observe the world state and characters to gather the narrative. its part of what makes Dark Souls (more recently Elden Ring) is special to me.
Also yes, the player character is undead. They can "die" but only for a short time before you come back with less of your mind intact. Each death drives you mad until you are no more a man but a beast.

The way the lore works is: The world is super fucked up, everything is slowly dying and rotting away, and you always get a snippet of info, like you know dragons, lords, fire, souls etc. Then throughout the game you find NPCs and items whose descriptions give more snippets of info, allowing you to piece together why the world is like this. For example you'll kill the knights of gwyn you see in that trailer, and at some point you'll get their entire armorset and weapons. These will say why they following him, why they were guarding/attacking the areas they are found at and the reason, providing more info on Gwyn's realtions to other rulers, lords etc.

But just a heads up, there's a video compilation of all elden ring trailers that doesn't include all of them. It doesn't include the teaser, the launch and a gameplay overview/preview (I don't remember which). Just remember that there should be at least 6 trailers, plus the opening cutscene if you're interested (btw these trailers you watched are the opening cutscenes for each game, except it's like 70% of it.

Vaati is the McDonalds of souls lore channels. He loves to say that things definitively happened that are actually more like fan speculation operating on three other assumptions, it kind of sucks. And that's before he started half-assing his videos.
Half of the fun is at least knowing about the lateral thinking it took to come to those conclusions.

I get where you're coming from; it's not fair to expect someone who hasn't played the games to know when Vaati is reaching for straws about a certain topic. But at the same time, it's much easier to watch a few half hour lore videos to form your schema; than put dozens, potentially hundreds of hours into the games to have a more authentic interpretation. I simply gave a suggestion that is easy, but I really do get where you're coming from and respect what you've said.

    The themes of each game:
DS1: The importance of a driving purpose in one's life, the deception of church and state being difficult to see through, the question of whether or not the comfort of civilization is worth that deception.
DS2: The trauma of diseases like dementia, what makes a person inherently "themselves", the futility of decisions in a world where your decision will, inevitably, be undone (and whether or not running from those decisions is cowardly)
DS3: Stagnation. As in "guys we've made three of these games, we need to move on" and "seriously though we've done this "LIGHT DARK LIGHT DARK" thing so many times that we need to rock the boat harder to not end up with a diseased, stagnant pool". Everyone in-universe is coming up with new "ages" for the world like politicians that got sick of a two-party system and they'e coming up with batshit insane stuff. The universe itself seems like it's old, tired, in pain and wants to kill itself. The basic laws of physics might not even be working right any more.

Ohohohohoho, the lore is really good with the games. They got the world building of it to a world's science. Humanity stems from the Pygmy race who keep the Dark Soul. Gwyn and his Light soul feared the crap out of the Dark as it proved unstoppable, and multiplied 800x more than his kind, so he spread faith into himself and his kind and created the modern humanity by suppressing its dark with a ring of fire, the Dark Sign. The fire used to do so weakens when the First Flame of the souls weakens, beckoning a worthy lord to be sacrificed to it to kindle it for longer. So humanity, unknowingly became kindling wood, and we'd be the first chosen to reach a proper lordship of greatness, worthy of finishing off Gwyn and become the next kindling. Whenever a weakening or Dark age, much is forgotten, and by the time of DS2, we see more into the repercussions of it more clearly with phenomenon of people making their dreams and forgetting everything about themselves the more they're fulfilled in the land of Drangleic, where the king stole the First Flame to in his conquest for greatness, but neglected it once realizing the truths behind it all as well as with his wife's true intentions and being. Dragons were all slain by the time of Dark Souls 1, but alternative drakes survived, and Seath in his envy of his kin's scales granting them immortality, would seek recreating them to covet their immortality, and would found Crystal Magic instead into madness. By Dark Souls 2 and 3, more of his work would be recreated to some extent.
Dark Souls 2, the neglect of the fire would be so great that many would be simply drawn to the calling of it, many failing to becoming fuller hollow and fading away. The kingdom of Drangleic would seek true dragons for supremacy of their kingdom, and also peer into the essence of a soul to great displeasure of their findings. They would realize the truth of what Gwyn started and created, they would realize that humans inherently were of Dark origins, and Vendrick's Wife was a great Child of the Dark who would seek power of his throne, embedded with the power of the First Flame. He would hide himself long far away until he himself, the king, had hollowed, entrusting the duty to dictate fates to the cursed player, under semi guidance of his brother, Aldia, who attempted creating dragons, and helped investigate the nature of souls.
Dark Souls 3, the flame would be restored to the mainland of once "Lordran", now commanded out by Lothric's kingdom for entrusted duty. A kingdom so old, that they had helped hunt the dragons and carried on their methods of their legacy. As the First Flame threatened, they'd become less and less particular of the figures they'd attempt burning in it, seeking worthiness to maintain it. Amongst those burned in such attempts was the player, not yet worthy of it, now instead entrusted to make use of themselves in bringing back those of lordship worthiness to ascend their own. Once met with them, the players soon realizes the actual time of the world on their way to their final task to prove themself as worthy. Through DLC, we can skip ahead in our foresight to the world without it, fading away to fate, more properly knowing our roots and where we're headed. We're toured a walk through what remains of it, and how it all truly passes, and take the last prize of it all, to offer the most unthinkable hope yet at the expense of the last other, whom killed and ate the rest.
Every game is its own unique flavor to the experience with a grasping theme to try us with wonder and test where our faith lies in. Each game juggles pacing slightly differently to it's own sense of balancing, and the player is free to approach it sophisticated, or not so much sophisticated. With enough practice and familiarity, any obstacle can go easy or quite difficulty, but the end game portion is meant to be memorable to you no matter what, and they don't like holding your hand. You can play any of the games with positioning tactics with dodges, blocking and stabbing, or standing back and casting spells at things, and alternatively summoning someone to help you. These are games of discovery and discovering yourself, and the journey is completely worth it no matter how many times you die, curse, or accidentally piss off an NPC. Getting through it all and finding the more interesting endings for characters and trying out every nasty thing used against you on someone else is a rewarding experience, and getting to dress up like the bosses and enemies only makes it better. But one of the early most shining features people notice and immediately love is the interconnectivity, where you can find an elevator or gate to a place you were 30 minutes to 20 hours ago and make the world more alive and habitable in many insane ways that makes you wonder if you needed it, or if you think you'd prefer it over something else to your convenience. Once you experience this magic, you'll know properly the mindset of the developers, and that you're playing that game. The real heart in it all is that in every failure you grow a little, even if you don't think so. You realize little functions that open your mind up to things around you, and you generate more of a sort of "acceptance" in failure and how good it'll feel when you succeed, or if you play risky and it pays out big. You can definitely play like trash, but with experience and confidence, you can style on your enemies and get away with doing sillier stuff like playing with a ladle as your weapon in Dark Souls 2. There's many worthwhile ways to build your character for either the main game, or for PvP. With invasions that happen when you're at your strongest, you can tussle with other players in more natural combat settings where they want to inhibit your progress and may try after heinous strategies to succeed, but you don't need to deal with them alone, you can summon blues to help you from these troublemakers, but from my perspective, "the jedi are evil". Never trust them blue people! ;)

What's less clear from watching summaries like this:
That intro for DS1 is, like, the only *concrete* lore info you ever get. Once you're in-game, you're stuck with NPCs who practically speak in riddles (not always, but people aren't very observant) and item descriptions.
But tht way it ends got a lot of people feeling like there was more to it. So we became video game archeologist / historians and spent years putting two and two together, discovering how details as trivial as enemy and item placement and level design could imply some thlngs. Along with a whole lot of lateral thinking. Years of argument and dissent before we started to settle on some things and after that dissenting opinions could still be valuable.
Unfortunately the way a lot of people ended up learning about those efforts was through RUclipsrs, some of whom (*cough* Vaati *cough*) never actually explained where all the leaps of logic they discussed were coming from. So people fell into these camps of "wow look at this cool traditional video game lore" and "haha Dark Souls has no story they're pulling it out of their ass" when the reality is somewhere in-between.
