Spicy Mango Cilantro Wraps

  • This sweet & spicy raw/vegan wrap is super easy and perfect for Asian or Latin American dishes.
    Spicy Mango Cilantro Wraps
    James Sant
    Yield: 12 round wraps (or 2 full 14” sheets)
    2 cups chopped fresh mangoes
    1 cup fresh coconut cream
    1 Fresno chili, seeded & diced
    ⅛ teaspoon salt
    ¼ cup cilantro. minced
    1. Place the mangoes, coconut cream, cayenne, and salt in a high-performance blender, process until smooth.
    2. Stir in the cilantro and Fresno chili by hand.
    3. Spread the mixture on a non-stick sheet. You can spread 1 ½ cups to fill a 14” square dehydrator sheet, or shape into rounds wraps (about ¼ cup for each).
    4. and dehydrate at 135°F for 35 minutes, then drop to 115°F and continue for 3 hours. Check for any wet spots and go a little longer if needed.

    "I'm going to add some drama into these wraps" 😂 I love that. One of my favorite combos is jalapeno and pineapple. It's great in hummus and on pizza (you heard me!). Sweet and heat is always a great combo!

    Looks like a fantastic recipe can't wait to try it for a Mexican-themed birthday celebration next week. I could do without the repetitive and annoying background music. I fail to understand why so many people doing demo videos add a repetitive chime or tune.

      This is an old video from three years ago. I don’t currently use Music in any of my culinary demonstrations that go online, but we all live and learn.

    Do you have to refrigerate the herbs after cleaning and putting them in water or cN they just sit on the counter? Also, I am going to order the templates from Rawsome! What a great idea she had.

      I use them up fast, so I never run into needing to refrigerate. You have to remember to trim off the dried ends so they can drink up the water and stay fresh. Change the water each day or it can get funky.

    What a waste of beautiful delicious coconut water! I put a hole in mine first with a big thick nail and a hammer or you can buy a proper hole maker, create a hole and drain out all the fluid, and THEN I open up the coconut! But other wise, I love your method of opening it up, I've never seen someone lift up the coconut with the knife. Brilliant! Far less chance of getting cut! Thank you for this video - it was great!

    Ive gone through 1 year of vegan culinary school and I still have learned some great tips from you. I have to say the music that plays continually in the pack ground takes away from listening to you teach. Is there a way for me to take that off when I'm listening to you.

    Do you have a recommendation for a dehydrator for someone who is just starting out and experimenting with raw foods?

      I really do recommend the Excalibur. I have used many over the years, and I like the simplicity of their dehydrator. If a fan goes out ten years down the line, it is a super easy fix and the parts are affordable. The basic model without a timer is fine.

    This is a great recipe, I love your kitchen! Are you using the excalibur, cosori dehydrator or the breville smart oven with the dehydrator function? I am in Australia and can easily get the breville we cant get cosori out here, but we can get a similar smart oven like ninja foodie or instant pots new smart oven. Excalibur is so overpriced here. I am hoping the breville or even a ninja foodie smart oven with dehydrator function will work, Have you tried these?
    I just saw at the end of your video you have a red one, can you please send me the link for amazon and do the wraps still work in there as the trays are very small from what I can see compared to the stand alone dehydrators where they are generally 14x14 or 10x12. Do you any advice?? I want to have both air fryer and dehydrator! :) Happy Holidays...

      My friend Brenda, has a website called www.rawsomecreations.com. You could find templates and incredible nut milk bags on this site. I just checked the site and noticed that the templates are now missing. Most likely somebody knocked her off and made it unaffordable to continue or something. It’s too bad because they are precious and I would suggest that you search on eBay for rawesome creation templates for the Excalibur. Perhaps you can find them used.
      Know that with a small, offset spatula and a precise measurement of 1/2 cup per tortilla, you can easily round circles in each corner of the tray without a template. You will be amazed at how precise they can be without a template as well.

    Look very yummy. One con is the high omega 6 saturated coconut fat content, my only concern.

      Fresh coconut meat is not the same as saturated coconut oil.

      @@PlantFoodCulinaryArts Agree, however, as someone eating low fat WFPB, I try to minimize saturated, high fat foods. I am certain these wraps are delicious!

      @@catherinebell122 look up the difference between young Thai coconut meat and the typical canned coconut cream most buy. Very different in their profile...

It turns out that coconut contains a different mix of saturated fat types than those found in animal products, with the potential for different effects. In fact, some research suggests that coconut meat might even have some benefits for heart health.

    That music is enough to makes you irritated and crazy. Hearing it over and over is irritating .
