mulligatawny soup, amazing curried Anglo - Indian broth

  • Mulligatawny comes originally from South India and Sri Lanka, it was a kind of soup/broth of vegetables spices and rice. The Britishers loved mulligatawny but requested a few changes to suit their pallet. The addition of meat was the main one and sometimes mulligatawny can be finished with cream or yoghurt instead of coconut milk. So I hope you consider making mulligatawny, lovely all year round.

    Mulligatawny Soup
    Chicken thighs 4
    White onion 1
    Carrot 1
    Red pepper 1
    Apple 1
    Garlic cloves 2
    Bay leaves - thyme
    Curry powder 2 tbs
    Chicken stock 0.5L - 0.9 pints

    yoghurt 2 tbsp
    Coriander or parsley 1 tbsp
    Salt and pepper to taste

    Mulligatawny soup is satisfying and great! I love how you show your recipes at the beginning, the formatting brings me back to my college days.

      I have to film early for that light, and hope it's a bright day. Come the winter I'll be using artificial lights and it's never as good

    Hi there Uncle Matt! I totally agree, chicken thigh is the best! Your Mulligatawny Soup looks superb! If you'd asked me before watching this I wouldn't have actually been able to tell you what it exactly was!!! I love the addition of the apple, when I make this I'll be adding it for sure!!!

    Didn’t know this soup had apple on it. It’s definitely becoming soup weather now. Lots of bold flavours, looks nice and rustic. Pretend cilantro lol. Great stuff as always Matt.

    Wow this mulligatawny soup looks so good and flavorful the twist of an apple it sounds interesting. I have an Indian friend but never mentioned this to me- thanks for this recipe I'LL DEFINITELY ask for this delicious meal when I visit them. I also love your kitchen cabinets color.

      There are a few Indian dishes that we British added a twist to, I guess it's like lots of American food that came from the old world and evolved?

    First time I heard of this soup. My dad's originally from India but he's never made that at home before. I asked him and he knows what it is lol. I learned something new today! Interesting recipe for sure. I enjoyed! :)

      thanks, there are quite a few dishes that the British liked and made little changes to, I guess we'd call that fusion today?

      @@unclemattscookerylessons Not exactly sure if that is just considered modified or fusion. To me what you made would be the actual soup modified to your taste but if you took a totally different soup and combined it in some way with this soup then I'd personally say that is more of a fusion dish. Either way a job well done! :)

      No need to add any ingredients that you don't like, obviously it is a curried recipe, so with the curry you have a nice chicken broth.

    It looks and sounds so nice, your misus is just so lucky; BUT, it sounds as if she has no idea of that. May I suggest you just stop cooking for her, and she takes over the cooking from you. Im looking forward to seeing her cooking clips.
