James before I get into how fabulous your crab and poached egg with hollandaise sauce is what a beautiful town you are staying at in the south of Spain very breathtaking. You have very precise and great tips on how to make the perfect hollandaise sauce that whisking and whisking over the heat back on the I really liked how you showed the consistency of what the eggs should look like before you add the clarified butter. I’ll give you another solid 10 for actually removing the crab meat from the Crab instead of buying lump crab meat that is already pasteurized. Your poached eggs turned out phenomenal I would call that the perfect brunch you just needed A glass of your local Spanish champagne called Cava.

thank you my friend! i use to crab a lot in Oregon and Washington. so you pick up a lot of tricks! but if you are going to cook the crab, you should put in a bowl of ice water right after cooking it to stop the process. the flavors go very well together! yes do have a look at hear channel! hope all is well there!!
