How do you create the relationships/history between sims? I find that so daunting, idk where to start!

i totally understand, its a lot!! i do it by going into households and with the UI cheats mod i dont have to do it manually, i just right click on relationship and set values (friendship/romance). through MCCC and UI cheats im usually able to set up a basic history between sims. i hope that is helpful!!
