Mr. Wilson was a treasure. He was creative but always taught technique. A rue is a precious thing. I make rues out of every kinda grease, but Mr Wilson taught me the difference between a blond rue and a dark rue. I would cook with my father, a French Canadian and gourmet cook, who was hard on me. Mr Wilson wasn't like that. His gentle ways relaxed me, and pretty soon, I was bringing his tricks to the kitchen and surpassed my father's expectations. Mr Wilson and Mr Roger's are both treasures from my childhood.
I was 13 in 82 and i can say with 110% assurance that they simply don't make good quality shows like this anymore, but then again, its not the good ole days anymore either
I have his signed cookbook! My sister went to New Orleans years ago, and gave me the choice of a beignet mix or his cookbook...I got the book! ( with his recipe in it)

When my Grandmother rendered hog fat my job was to keep an even fire going under the washpot. That made the best. cracklinĝs. The chitlins and hides were rendered but these cracklins were fed to the chickens. Ah hell if you don't know what we are talking m about go find an old person and ask them.

He was aprogram that our whole family would watch. And he looked so much like my dad. I miss them both. I just found him again and so glad I did.
