    As a youngin’, I couldn’t get with what Julia Childs was teaching us how to cook. I mean, it looked alright. Then I found Justin Wilson’s show. He was the first dude I saw cook on TV and the food was what I ate! Thank you for everything Mr. Wilson. You taught me a few things I guaraaaaaannnnnteeee.

    Hum he said this video was for Mississippi education ; I'm from Baton Rouge La and watched this show as a youngster ; just wondering where else besides La and MS did people catch this show back in the day ?

      @@Fullwoodify Wisconsin,Wow, so I guess Justin had a broad audience watching his show, I searched more videos on Justin Wilson and saw a clip of him on Johnny Carson feeding him crawfish, so I see he was watched by many people over the country

    I think Justin was the most entertaining tv chef of all time! There have been MANY! I’ve seen a lot of them. But I enjoy Justin more than anyone else!

    Love Justin - love his stories, love his humor, love his cooking, and love his personality. So glad I can still catch episodes (some of which are new to me!). He was such a character - we need more of him! THANK YOU!

    I feel Justin's pain on ordering eggs.
    I order a dozen with black pepper and cayenne every Sunday. And every Sunday the little blue haired waitress at Louie's by LSU gives me the craziest looks.

      Grandpa LOVED Justin Wilson...so much so that him and I would do our best Justin Wilson impressions as Grandpa would cook up a real Southern meal. I remember fondly one episode where Mr. Wilson talked about how you "add a little wine, then drink a little wine, then add a little more wine...". From then on, that little routine was our favorite one to imitate! 😅😂
      Grandpa actually did buy one of Justin Wilson's cookbooks and liked to look through it sometimes to see what he could 'whoosh' up out of there...both Mr. Wilson and Grandpa are now sadly no longer with us, however, the sense of humor and love of good cooking lives on.

      If anyone deserves this sort of immortality, it surely is Mr. Justin Wilson...☺😍😁

    When I was in the Army in Germany...I had a Cajun friend...Craig...don't call me Harschel...Cole...sounded just like Justin...or vice versa...40byears later I gotta listen to him REAL close to understand what he's sayin'...used'ta understand him all the time...but that accent takes time to get used'ta...

    Yes please, I hope you find the ones when he was cooking with pecan wood. I was 12 or 13 when they come out. Till this day I save some pecan wood to grill with.

    Do you have any episodes of "Cookin' Cajun"? Justin Wilson began each episode with a voiceover narration: "Over 200 years ago, a bunch of French people who supported the king of England, and swore allegiance to him, were kicked out of Acadia in Nova Scotia". After Wilson's narration, he makes his entrance by taking off his hat, hanging up his cane, and goes straight to the kitchen. The announcer said in a voiceover: "The Mississippi Center for Educational Television presents "Cookin' Cajun" with Justin Wilson".

    I would watch every version of this man's show, alongside other shows like "The Frugal Gourmet" with Jeff Smith and a whole host of other cooking shows that were aired on PBS

      Jeff got busted preying on teenage boys that were dishwashers in his Seattle restaurant, if my Grandfather, who adored him, was still alive when that happened, it would have devastated him.

      ​@DeWin157 I know... I really liked his TV personality but his behavior was rotten. When I asked my dad why he wasn't off the air, he brushed it off with some breezy comment about some kids making a silly accusation that he got handsey with them. Which I suppose is a fairly good working example of how allegations of abuse often go unheeded for years. The accused have good manners, charm and a TV show. Or whatever. The accusers are just easily replaced back room staff. Or students. Or whatever.
      And serious consideration of the issue becomes some kind of popularity contest.

    I would’ve loved to have met Justin! Spend a day or weekend, or week......or hell, as long as I could get away with; with him observing his life & listening to his stories! And o yea, eating that outrageous Cajun cuisine he’s famous for! Maybe in heaven.......

      Found this on Wikipedia The name shallot is also used for a scallion in New South Wales, Australia[7] and among English-speaking people in Quebec while the term French shallot refers to the plant referred to on this page.
      So that explains it. Cajuns are from Acadia.

      For me a scallion is the small onion/garlic flavored small seasoning vegetable. Green onions are shallots to me in South Louisiana.

    I must agree with you Ms Tammy I have seen many TV chefs but Justin Wilson was the one that had me laughing throughout he's a wonderful cook but he's also very entertaining and I do miss his shows, I am glad to be able to look at them again on RUclips!!!

    Justin would still be relevant today. His personality and flare would fit right in on Food Network with Bobby Flay and Guy Fierri. I'm not saying they're as good as he was but I really think Justin would be a hit on the Food Network if he were alive today. His personality and southern draw is so endearing!

      Chablis sometimes. Other times, I remember him saying he used one called Charlemagne. I’ve never found that one myself.
