Jalapeño Popper Taquitos//Cook With Me

- This is a simple and tasty recipe that’s really easy to make. I hope you try it and enjoy it as much as we do.
Ingredients
• 1 cup chicken, shredded and cooked
• 1 large jalapeño chopped finely
• 1 block cream cheese
• 8 flour tortillas
• 8 slices sharp cheddar cheese
• 8 slices Pepper Jack cheese
• 8 slices cooked bacon chopped
• salt and pepper to taste
• 4 Tablespoons extra virgin olive oil, divided
Directions
In a medium bowl add chicken, bacon, cream cheese and the jalapeños. Mix till fully combined.
On a tortilla put one slice of cheddar cheese and one slice of Pepper Jack cheese side by side, it’s okay if they overlap slightly.
Add about 1/4 cup of the mixture and spread evenly over the cheese and tortilla.
Roll tortillas up tightly, add to a plate or platter seam side down.
Heat two Tablespoons of oil in a nonstick skillet. Add four rolled tortillas to pan and cook till mixture is melted inside and all sides are browned when done take out of pan and add the last four rolled tortillas add 2 more Tablespoons of oil if needed. Cut in half and serve with salsa or sour cream. Enjoy!
