kinda surprised that lindsay is the one who got picked for head of achievement hunter. i mean i've kinda suspected that geoff would pass the torch soon since he's been focusing more on bigger projects like the let's play family, but i had assumed that he was gonna give the job to michael. it just seemed like he'd been relying so much on michael lately and michael had shown so much initiative. i guess we don't see too much of what lindsay does behind the scenes, or what kind of leadership achievement hunter needs, but i was still surprised

But ultimately, Geoff will always be their boss in a way. But currently, Lindsay is in charge. But look at it this way, I think she is more busy with that so she won't be in as many videos which is the best of both worlds for people who don't like her. She gets to be a part of AH still, just more behind the scenes. And the videos feature more of the people the Internet tends to like.
As someone who worked in a bakery I can tell you that proofing isn't just a British term it is in fact a baking term. Basically proofing is the resting period for anything with yeast in it. When the chef says it could have used 10 more minutes proofing they mean that they could have let the yeast ferment for another 10 minutes. When you bake bread or anything with yeast in it you want to make sure that it has time to rise since it won't rise anymore while baking.
Coming from a british 20 year old girl, I can't believe that you guys are talking about/watch the great british bake off, this is awesome! Btw you need to prove the dough so the yeast can warm up and you get a better rise/texture out of the bread, the proving drawer is warm but not like oven warm but warm enough to prove :)
