    Man those kids are growing up great this is how we grew up helping around the house and nobody was to young to do anything because thats how rhey learn and become experts in anything theyre doing man your amazing parents bravo bravo bravo.

    People dont believe me when I say one large animal can feed a family for months. This is beautiful, and it's a life my fiancé and I want to live and teach our children ❤️ my family is from the islands, i was raised in an american city, but I swear my heart belongs to the forest and mountains and I want to live off the land as well as give back to it. This is absolutely beautiful.

    Love your canner, thought I had some nice equipment, yours is incredible! We raise our meat and last year we butchered an ornery bull, steaks and roasts were so tough I ended up canning it all (including the prime rib roasts) just like you guys did - stew & chunks boy is it good and so nice to have instant meals!

    You could make your own broth from the trimmings, all the connective tissue you are trimming is full of good collagen.
    Also the bones.
    It’ll take a bit more prep, but you could eliminate adding industrial produced broth from your own food and get rid of some unneeded chemical preservatives.

      When I clean small game, the legs, liver, kidneys and heart go in the freezer. Every other bit of meat with bones goes into the crock pot. Day 1, Pick the meat off the bones and pick the tallow "cookie" off the top to use for frying. Day 2 is soup.

      I was thinking dog food, added to the internals you don't want to eat. Dogs would be happy and no waste.

      I worked in hotels. They used to do it. They had a massive pot slow cooking for 48h. Very nice at the end

    I didn’t watch all the video but I loved the thumbnail. Reminded me of me and my brother having to do stuff with my dad haha. Hated it at the time but boy do I appreciate and look back on it fondly now!

    That's the most amazing pressure canner I've ever seen.....ever!!! If I released the pressure in one of my canners like that, I'd have blown-out jars. Also, don't be cranking on those hotter-than-boiling jars. If one goes, you'll be in a burn unit! I know you do a lot of jars, but be cautious. Only one mistake can leave forever scars.

      Yeah, for my (lowly by these standards) 23 quart canner, I would get siphoning (where the contents can "volcano" out of the jar) if it comes out of pressure too quickly. I would do my pressure canning towards the end of the night, then just turn off the heat and let it slowly cool overnight. Never leaks.
      BTW, just an impressive setup they have there. I'd love to have the opportunity to do a moose hunt.

      It is not recommended to tighten the rings when using regular flats (as opposed to reusable) after taking them out of the canner.

      Those "hotter than boiling" jars are not under pressure. They are boiling like that because the have sealed and are under vacuum. But, you're right, the rings don't need to be cranked. Just a fingertip twist would be plenty.

    That canner is amazing. Great job all around! I'm envious of the amount if meat you are anle to harvest from,a moose and the gear you have for home processing. I'm in East KY, and even our biggest deer isn't a tenth of that. Great job! I'm editing my venison canning video myself today 😆

      I really don’t have a reason other then I think it helps make a better seal, my wife tells me not to tighten them. I know the books say not to do it but we hardly ever have a jar not seal, also I go greater then finger tight at first and then back off to finger tight.

      You want the bands to be loose so the jar can burp the air out so you get a vacuum seal once it cools. Then you tighten down the bands to make sure the lid is protected

    Man that is some serious canning going on there.... I noticed when I use my normal sized pressure canner they say to gradually let the steam go or the stuff you're canning can blow back out of the jar or explode.... I noticed yall had it still cooking in the jars when you pulled it out so be careful!
