  • Putting up moose and caribou meat in the Yukon River villages often entails days of butchering and processing due to the size of the animals. Everyone has little tricks and methods. Moose hunting can yield many hundreds of pounds of meat and you need a good way to deal with a years supply all at once. In the older days much more meat was canned and dried but with modern day freezers that has changed some. Video is mostly trying to show how we do things.

    Anyone interested in a signed copy has two options:

    Second is to buy a book on Amazon and follow these instructions. (Many have done this and it has worked well. Done hundreds and no mail failures yet).
    1. Get two 12.5 x 9.5" priority mail flat rate envelopes at post office.
    2. Self-address and put postage on one envelope.
    3. Address other one to: Stan Zuray, Box 77172, Tanana, Alaska, 99777 and put book and other envelope in it (folded) and signing instructions if any and I'll sign and return.

    Oh and by the way I never had anyone show me the correct way to handle meat so like I say it's processing meat by the Stan Zuray method

      Good upload Stan. I miss Yukon Men it was the best of the all outdoorsy tv show. Most entertaining love watching you and Joe. Sad to see you had to get rid of your dog team. I remember you saying in Yukon men you rather have dogs than snow go cause if a dog is hurt you put in the sled and if the snow go breaks down you’re stranded. Also loved the story of your house!! So for under $200 bucks you bought a house! Of concise I’m sure theee was more expenses but still can’t beat that! I remember when you moved joes house lol anyways thanks for the upload! Stan the Yukon mcguyver!

      You might want to consider washing the meat before processing. That way it's clean and cool and results in a better product. We always wash our meat and get great results.

    As much as I love the hunt, processing meat at home and seeing the end result in the freezer is very rewarding. I like that grinder set up you got there!

    Hey Stan, just wanted to say thank you for the informative video of how you process your Moose and Caribou into burger and not letting anything go to waste. You're a great teacher and Author and I've enjoyed reading your books and watching your videos of you and your family over the years. You really know what you're doing in all aspects of providing for your family and your sled dogs, from hunting, fishing, trapping, processing and smoking. I really enjoy your perpetual motion fish wheel, it's pure brilliance and an amazing tool for catching fish. I'm glad I found this video today as we're in deer season in the lower 48 and our family is looking forward to processing our own take using your techniques so that we're aren't wasting any meat.     Mr zuray you are legendary !! it sounds like you don't really understand or believe that. try to understand most of the younger generation don't even step onto the grass. I am forty and I am sick that is most of the reason I have the time to watch you or write this. I was in the Navy eleven years I watched Yukon men. trust me. you are from a generation that is much more tough but even for your generation you are made of granite. you are extremely interesting and it doesn't have to be always informational although it is very helpful and I really like how you share about the house that was cool you did the same process to move joes house. that episode you shared your life with us and the value of your assistance with your family and the community is invaluable. like I said you are legendary.

    You know Stan I know you voice any where. Seems Yukon shows is no longer available and we loved everyone who lived there. The shows where a weekly special and we enjoyed the dog sledding the fish wheels in the Yukon River and the hunting season. You are an amazing man and we say hello to all fellow town folk.     I been wrapping burger in plastic wrap for years.
    It does work great, but I never thought of the ball method.
    You taught this old dog a new trick.
    Those dried meat sticks look great.

    I just found you on RUclips and I recognized your voice from TV. OMGosh. I’m super excited! I hope that you are still putting out content!     I truly enjoy watching your videos Stan. What I see and hear is lots of work but I don’t sense frustration and feeling rushed. You take things in stride. So much more relaxed the we are here in the city life. Don’t have any of God’s natural beauty or fresh air to breathe. We are living in a fast and crowded atmosphere. I was raised in a small town where my father raised and planted our food source. Oh how I miss it 😢. But soon I will be going back to it God willing.     Stan, watching you grind that meat, reminds me so much of when my late husband and I were young, he always managed to get a few whitetail deer every season. We'd grind a lot of it. I uderstand adding the fat, as (some might not know) it helps to tenderize older or tougher cuts of meat and enhances the flavor. We never made sausages, but he was a pro at making stuff like hoghead cheese. Bet you never had any of that! LOL Mighty good - and for anyone reading this that has never had it, No, it does not have eyeballs, etc. in it- just the cooked pieces of meat from the head. It kept us from going hungry and many a day our kitchen table was surrounded by neighborhood kids, filling up on Buck stew, etc.Love you guys and TC up there.

    Good to see you are still doing video updates. A real shame the fishing ban is still in effect and you had to get rid of your working dogs, hope you're able to get your dog team together again when the fish stocks are back up and you're able to fish again.
