How to make Tomato Relish

    A step by step guide on making a simply fantastic Tomato Relish.
    Ingredients
    • 4 kg tomatoes ripe
    • 1 1/2 kg onions
    • 3/4 cup salt
    • 1 1/3 kg brown sugar
    • 3 tbs curry powder
    • 4 1/2 tbs mustard powder
    • 3/4 tsp cayenne pepper
    • 1 L malt vinegar
    • 1 to 3 tbs cornflour to thicken.
    1. Peel and slice tomatoes and onions.
    2. Sprinkle salt over the tomatoes and onions and leave overnight.
    3. The next morning, pour off the liquid.
    4. Place tomatoes and onions in a large pot and cover with vinegar.
    5. Add the sugar and bring the mixture to the boil. Boil rapidly for five minutes.
    6. Combine all the spices and stir into the relish mixture.
    7. Boil gently for one hour, removing scum progressively and stirring frequently.
    8. To thicken the relish, add the cornflour to a little water and mix to a smooth paste.
    9. Add a little of the hot liquid from the relish mixture until the paste is the consistency of thin cream.
    10. Add the paste to the relish mixture and stir continuously for around 5 minutes until it thickens.
    11. Bottle into hot, sterilized jars and seal. Allow jars to cool.
    Makes approximately 12 medium-sized jars.

      @@SweeniesCreekFarm Cooked and done. 4 big jars sitting on my bench. All the lids vacuumed sealed. My only comment would be it tastes a little sweet. I'd probably use 2/3s of the sugar next time. Thanks again though.

    Have just made this. I halved the recipe as I want to make some tomato chutney. Very pleased with the results.

      Preserving and making relish and sauce was very special to our grandmothers too. Its a great recipe and i love it on all sorts of meals!

    Thank you - How long can it store in the fridge? Is the a preserved jar of vacuum sealed? How long can it store in the cupboard? Did that entire stainless steel bowl of sugar get used?

      Sorry for such a late response. Once opened in the fridge it should last 2-4 weeks. If you hot pack the jars the vacuum seal will work and you can store in the cupboard for 2 years (it will last longer but might not look that great). I think the quantities are in the description but I believe from memory, yes 😳

      Yes. Once opened store in the fridge. Relish that has been continuously refrigerated will generally stay at best quality for about 1 year

    Can I use white vinegar Instead

      The recipe in the description says white vinegar but we used malt in the video. Either one is perfectly okay to use 👌
