  • Complete how to make Tomato Relish guide. Sweet, slightly tangy but NOT spicy hot tomato relish. Great tomato relish for burgers, hotdogs, meat pies, sausage rolls and more. Some say tomato chutney. You decide.
    This is how I make easy tomato relish for my hamburgers and it will be step by step and explained for beginners.
    👉This tomato relish is sweet and has a somewhat tangy taste that should not burn your mouth at all.
    👉 I would recommend reducing the sugar by 1/3 if you do not want it very sweet. You could add more sugar to taste as you boil it.
    👉 I recommend placing the hot, freshly filled jars into a warm water bath, with water an inch above the lids. Bring to a rolling simmer and leave them in for 30 minutes.
    Carefully take them out and place on a layer of tea towels to avoid a shock in temperature change. Never place them directly on a cold surface.
    Let them sit for 24 hours. Listen for the lids to "pop" as they vacuum seal.
    If any of them don't, put them in the fridge when cooler and use first.
    A LOT of people do not do this in Australia and other countries, but this is recommended by the USDA in the United States if that matters to you.
    👉I eat it straight away and it is great.
    However, I do find that the taste improves after I let it sit in a cool, dark place for a week or so. I make multiple jars at a time for this reason.
    👉 I said "sterilize the top of the jar". I meant to say "clean".
    This is to try to make sure there is nothing at all between the lid and jar as they come together seal air tight.

    📑 THE RECIPE 📑
    * Tomatoes - 1.5kg ( 3.3 pound).
    * Red Onions - 4 medium (large if you like.)
    * Garlic Cloves - 8. (mince finely if you do not like chopped pieces).
    * Mild Curry Powder - 6 tsp.
    * Salt - 2 to 3 tsp. ( 2 is the bare minimum. Taste and adjust at the end).
    * Brown Sugar - 1.5 cups. (You could use only 1 cup to reduce the sweetness).
    * Apple Cider Vinegar - 1.5 cups.
    * French Mustard - 6 tsp.
    * Cracked Black pepper - 1 tsp.
    * Corn Flour (corn Starch) - 3 Tbsp (mix in 1/4 first and add as you need). 🔶Please see below regarding corn starch.
    * Apple Cider Vinegar - 3 Tbsp to mix with the corn flour (Corn Starch).
    * Vegetable Oil - 1Tbsp
    Follow instructions in video and the 1.5 tsp of salt I use is bare minimum. 2-3 is normal.
    Please check it and add more salt to taste at the end if you prefer.

    🔶Please note:🔶
    This is a very common and very accepted method of canning or "bottling" here in Australia, New Zealand and other countries such as England.
    USA viewers, please note that the USDA now do not recommend using cornstarch. It is up to you if you use this video as a guide.
    You can simmer the mix down more instead to evaporate liquid and thicken it this way.
    Placing finished jars in a simmering water bath for 30 minutes is also recommended, I believe.
    As always, check contents when opening and if there is any doubt, throw it out.
    I am just adding this information so you can do what you wish and make an informed decision once you have researched the matter properly yourself.

    Ya know, I was just texting with a neighbor earlier who is single, older and lives alone. We've been talking about preps and canning and such. I told him when he was in the mood to let me know and I'd come over some Saturday evening and cool up some great stuff for us to eat. He has a kitchen that is fully functional and just doesn't cook much because it's just him. I don't have a stovetop or a working oven so it would be a great thing for us both to get together vat his house and cook. I may use this recipe to make some of this to can in a dozen or two jars. We both love garlic and tomatoes so this would really be great for us. Thanks for sharing this with us. I'll add this video to my recipe video library. Stay safe Hun, and tell your Family I said hello. (Tell them I said to check out my latest video, no ghost stories this time but I am working towards a cemetery challenge, to spend 30 mins at night alone in a graveyard). Wish me luck!

      Yes! I have already seen your latest video and hope to shout you out while moderating for another channel. Hopefully I can get you some new subscribers.
      As for this recipe, wow, what a compliment.
      I do recommend using less sugar, but I put that in the details and it is a nice little condiment to put on things, so you may not have to make too much.
      That is a great idea about yourself and the neighbor working together to stock up on food. Really good idea.
      Thanks again and good luck with the challenge!

      Yes! As you can see, it is fine using them.
      The last batch I made was with fresh tomatoes and there is not much difference between the 2 of them.

    Yum! Sooooo... re: cornstarch/cornflour. True, in the US, it is not recommended to use cornstarch in canning 99.9999 percent of the time. HOWEVER, it is acceptable to make and waterbath can pie fillings using a product called Clear Jel (not the instant version; that does not hold up under the prolonged heat of canning). Clear Jel is a more highly refined cornstarch. Considering the small amount in this recipe, it *might* be acceptable to substitute Clear Jel and allow a bit more headspace for canning. OR, the recipe could be cooked down further, as you suggest, OR the cornstarch or Clear Jel or arrowroot powder or whatever could be added AFTER the jar is opened. At any rate, I will definitely be trying this recipe soon. Thank you! 😊

    • @MyAussieGardenKitchen
      @MyAussieGardenKitchen  Год назад

      G'day Carole.
      Yes, Clear Jel sounds like it's the way to go.
      We can't get it here as far as I know. I must look into this again.
      I think it's because we don't actually pressure can in Australia and we have to import the pressure canners to do so.
      Thanks very much for the great information Carole.

    Hi Daz. I just found your great video and it brought back fond memories. I had an old Edmonds (NZ) flour company recipe book, and they had a similar recipe that I had used for decades. I made a batch using your recipe as a framework with a few changes. I used canned tomatoes as had some handy. I know fresh picked garden tomatoes are the best, however not everyone has these. I also didn't let stand overnight but decided to reduce the volume in the cooking without adding flour to thicken. I reduced the salt amount proportionally to just a couple of TBSPS. I also added half a small can of tomato paste. The mix was cooked slowly for about 3 hours and the last half hour I was constantly checking.
    After placing in the jars and cooled, it was a beautiful red color and as far as taste, was perfect.
    Thanks for making the videos Daz and bringing these terrific recipes for us all to enjoy.

    Dax, this looks excellent buddy. Great job on this. It sounds like it would be so tasty. That chopper chops the onions good plus gives you a little workout haha. Win-Win there. I one similar but it has a lever on top you push down instead of pulling the string. Works great. Where did you get those lids and jars? I mainly use mason jars with lid and the screw on band but I really like these lids.
    Dax, I am going to add another name in the mix- Chow Chow. That is what we make in the southern us to put on Beans, Hotdogs, and burgers.

    • @MyAussieGardenKitchen
      @MyAussieGardenKitchen  3 года назад +2

      I need to look up Chow Chow. Have not heard of that one before and it sounds interesting.
      The jars with lids are just cheap ones from a store similar to Target. Really do like them.
      I use my Ball mason jars for proper canning and save these and washed jars from products I have bought, for stuff I might water bath, but not store long term.
      Or even in a situation like this where I don't water bath as they are hot packed into sterilized jars and only sit for maybe 3 months or so in storage.
      Thanks very much for watching mate,
      Daz.

    Adding another comment, since I know it helps the algorithm, lol, and I still need to make this recipe... best laid plans and all that... 🙄 Anyway, thanks for the reminder (link from the Bolognese sauce video). We're finally getting into our summer grilling season here and this will be great to have on hand. I may end up using "tinned" tomatoes for the first batch, so am thinking it is best to drain first in order to minimize any excess liquid...? Again, thanks and I'm really looking forward to making this! 😋

      I would leave the liquid in and just let it evaporate, as the liquid will contain some flavour and nutritional value.
      I really hope you like this recipe. I have been making this for years and I go through so much of it.
      Thanks as always.
      Daz.

    Nice one Daz. Looks a nice recipe. I used a tea towel yesterday to take a casserole of the top of my gas stove top to put it back in the oven and the tea towel caught on one of the gas ring grates, bloody hell I nearly lost the lot. Lucky it was only half a cup on the floor along with the lid. Lol cheers Daz.😎👍

      I just made a batch there I doubled the curry powder and added a bit more mustard and it's was more savoury and spicy.
      Thanks so much and good luck!

    Sounds delicious Daz, can't wait to try it out. Never seen a food chopper with a pull like that, it works really well.

      G'day Holly.
      Wow, a new name. It threw me off for a minute and I had to go and make sure it was you. 🤣
      Thanks holly.
      Yes, the chopper is great. I was just saying to someone that even though i am a chef and can dice onions, I love this thing as I can shop them small and leave the lid on to hold in the smell until I am ready.
      No tears!
      If you do look at the ones in my link, I just wanted to let you know that they are my affiliate links to Amazon.
      I hope you are well and take care,

      G'day.
      😁 I think it's a relish, but some people like to debate the topic, so I'm happy for people to call it whatever they like.
      Thanks so much for watching and take care.

    I call it relish too Daz .
    Your recipe sounds great .
    It took me 25 years to get our families secret 🤐 relish recipe off my Aunty , so I’m keen to see other’s tomato relish recipe .
    Very similar but heaps different 😂 to mine .
    You captured and recorded this so professional. You sound so confident and speak so clearly .
    After all this time , I still freeze up on camera .
    Great work and great video buddy .
    Take care and stay safe , I just heard on the radio that there nearly fifteen hundred new cases in your neck of the woods . Thankfully not up here in The Whitsundays (but give it time 😭 )
    You relish looks and sounds good .
    Good onya buddy ,,, ps … as soon as my jars are full of relish , I place the lids on then turn them upside down . Sucks the lids down …
    Kellie ..

      G'day Kellie.
      Ah, yes I have heard of people turning them upside down.
      I think I remember seeing them like that when my Nan used to preserve.
      Yes, numbers were crazy today.
      Thankfully, we are up in the north of the state and we don't really see any drama or have any cases up here.
      Oh and believe me, the final look and sound of myself and the video is the final version and you don't see all the ones I messed up to get there. 😁
      Thanks so much for your kind words.
      Daz.
