I learned this baking soda trick from a Chinese cook on RUclips, it's perfect to keep chicken tender when you stir-fry, but the taste remains original and the result is much better. Marinating overnight in the alkylate works wonders. It's in the details. Grtz

Нарезал как попало, гамм 300-350, все тщательно посыпал содой перемешал и оставил на 30 минут, потом промыл, посолил, минут от 3 до 5 обжарил с каждой стороны (разные же куски были) выложил в тарелку, нарезал лука 2 большие головки обжарил на сильном огне минуту - две, потом с верху выложил мясо, залил соусом и жарил пока влага не испарится (соус - масло растительное, соевый соус, домашний жгучий горлодер, черный и чили перецы молотые, паприка, чеснок). Минут 10 помешивал и дал попробовать сначала жене, она удивилась.

I soak the beans overnight and in the morning I put all the ingredients in a crock and cook it a 300F for 8 hrs.

i think it helps the meat absorb the soda, which should be what makes it more tender. it's a tecnique you often see in chinese cooking where they first wash the meat with water and soda (both get absorbed) and then they fry it. Also, usually it is deep fried in a wok at very high temps, so by the time you cook it (2-3 mins) i would assume that probably some water is still in the meat making it juicier.
The technique is called velveting and it 100% works on any kind of protein Once you try it it’s like a light bulb going off, you’ll immediately recognise how Asian chefs get that very particular mouthfeel and texture
