Julia Child, both for her devotion to education about cooking and for her occasionally ham-fisted or ungainly bravura when things went wrong or when she felt she needed to push past some sort of difficulty in the kitchen. You couldn't help but love her combination of intelligence, Earhart-esque sense of conquer-the-world adventure, no-nonsense American sensibilities, quirky sense of humor, and even her occasional but lovable stubbornness. Jacques Pepin apparently had his hands full with Julia more than he always felt comfortable with, but Julia's path to TV fame was laid through an educational and 'can do'-at-home approach rather than via beating a path forward through the restaurant food service industry. Jacques is of course a world-class chef, but with a fairly quiet and unassuming manner, and also evident integrity. When I try his cooking techniques and suggestions they WORK. Julia & Jacques still managed to get along publicly in front of the camera and to make us enjoy their camaraderie, even if it was for them at times a bit forced or rehearsed. Other celebrity chefs-I like Emeril for his good-heartedness, Alton Brown for his go-get-'em, oddball sense of humor, Jacques Pepin for his humble integrity, depth of knowledge/skill and very practical devotion to his art, and Rachel Ray for being a 'down home' gal originally from my part of upstate New York and for being 'no-nonsense practical' but still fun-loving all the time. I never warmed up much to Guy Fieri (for reasons I can't pin down); or to Anthony Bourdain (because of his seeming lack of humor); or, in the long run, to Gordon Ramsey (because his driven, overbearing management style is too stressfully like the worst parts of everyday life that one seeks to escape when watching TV). Even so, I can recognize that Gordon is an accomplished, careful, dedicated chef and a no-nonsense businessman who is no one's fool and knows how things must be. Jamie Oliver seems knowledgeable and 'lovable' while I somehow find Bobby Flay irritating and get tired of his 'southwestern take' on WAY too many things. Martin Yan is fun and personable but his schtick gets old pretty quick. Martha Stewart sometimes has useful tips to offer but she strikes me as 'stuck up' somehow. Should celebrity chefs be more about education vs. entertainment? I would say that to succeed on TV, they have the ability to entertain somehow EVEN AS THEY ALSO GENUINELY EDUCATE. I think most people ARE looking for cooking tips to help themselves improve and to give them new ideas, but that the reason they seek out a celebrity chef on TV is also TO ENJOY SPENDING TIME WITH SOMEONE THEY CONSIDER A LIKABLE AND FUN FRIEND. In terms of INTERNET 'celebrity' chefs, there are three standout great people who come to my mind: Laura Vitale ("Laura in the Kitchen"), the hilarious Chef John ("Food Wishes"), and Clara Cannucciari ("Great Depression Cooking") All of these folks have succeeded wonderfully because their channels present them with great pacing, and because they are all full of winsome personality, so it's fun to 'spend time' with each of them, although Clara is now deceased.
I used to work at Emeril’s in New Orleans, his first restaurant. I can say that in real life he is a super nice, down to earth guy. He’d drop by the restaurant maybe once a month and every time he was in he would take time to great every single table and thank them for coming to his restaurant and take pictures with anyone who asked. The environment working there was great too, not the super intense cut throat stuff you see about restaurants in the movies. I felt really proud to have the opportunity to work for him.
I ran into him several limes around '86 - '88 and he is, without exception a MOST fully down-to-earth, real, caring, dignified, respectful guy anyone can imagine............

Emeril was (still is) one of my favorite tv chefs. I stopped watching the Food Network when the cooking competition shows took over. I love watching cooking shows. I watch them as much for the food as the chefs and their guests. It's for me time well spent when I need to escape.
I like Emeril and no matter how some people give him negative reviews he is still a top chef in my opinion. Martha Stewart is also one of my favorites.
Serious love to Emeril.Inspired so many to cook, even has great kids cookbooks. Enjoyed great meals at a few of his restaurants too. Nothing but positivity from that guy.
I still watch Emeril on a tv station called Dabl, they're reruns, but that's ok, recipes are still good, and it reminds me of my mom, she loved that man.
watching emeril live on food network was a daily routine for me...between him and alton brown's good eats, i learned a lot about cooking techniques, flavor combinations, and different foods i'd never tried before...then suddenly, everything became all about bobby flay and the rip off "american" iron chef...without emeril, food network would certainly not have grown the way it did, he deserved to still be featured there...
While in New Orleans 10-12 years ago, I went to a culinary shop associated with an Emeril restaurant. While speaking with the workers in the shop, they said EXACTLY the opposite. They all said, "he never comes here. He doesn't care about us". I honestly wonder which is the real Emeril.
Cant argue with ratings, but 2007 is exactly when I lost interest in FN. Entertainment is always necessary, but cooking shows are eductational as a primary function. Competition shows do nothing to teach unless youre going to cook with sea urchin and candy canes. Bring back entertaining, And educational, cooking shows. 🤷♂️ I'll be over here watching 30 year old Jacques Pepin reruns, that guy has more charm than half of cable combined.
Folks, don't give cable tv another thought! Let all the crappy networks die their slow death. Over here on RUclips you can find most of the great old shows, and there are literally DOZENS of talented, motivated, entertaining, and educational cooks! Forget the networks. They screwed us in return for garbage and flash...so I say let 'em die. I'm gonna watch some Cowboy Kent Rollins right now. Heck, he beat Bobby Flay head to head to kickstart his career. Check him out. And the BBQ Pit Boys. And Sam the Cooking Guy. And Smokin' and Grillin' wit AB. And Charlie Andrews. Need more? I know dozens! They'll expand your cooking WAY better than anything on network tv.
Emeril was and still is my favorite celebrity chef ever! He made you want to jump in there and cook up fun stuff. Before he left, I was a Food Channel junkie. Now, I hardly watch the Food Channel at all. Iron Chef (was fun). Iron Chef America wasn't. Today's competition formats are ok, but nothing close to what Emeril Life was! Not even close!
Emeril was a fabulous chef and what the Food Network did is disgusting. Today the programming is crap! In fact I had the Food Network removed from my cable. I would have loved to have met the man.
In all honesty, the best Chef knife I have ever had is one of Emeril's, which was purchased 25 years ago. Anyone, and I do mean ANYONE who doubts Emeril didn't put Food Network on the map, (along with Julia Child) is crazy and so is FN. He made them what they are today, and nobody could have done it better.
I got to meet Emeril at a book signing in Illinois, he stopped along the very long customer line , talked to me and made me feel like I was the only person there, I watched him do that to several other people, kindness personified. I have nothing but good things to say about Emeril and nothing but scathing disdain for Food Network.......
snipe...2 years later. i quit watching f. n. when they started bringing in wanna be chefs, washed up actors & religion into their cooking shows. haven't watched it since but i get to watch emeril everyday with direct tv...emeril was real and what a chef!!
That's why I stopped watching Food Network... they stopped doing what made them, that is cooking shows. I agree that Emeril had to go, because of expenses... but when they got rid of regular cooking shows that I loved, I had no reason to watch Food Network. I still don't watch Food Network today. I want fun, not competition. If I wanted to watch competition, I'd watch SPORTS.
Competions on TV are not 100% real! I've been in many competions: you have two minutes to work out a plan with your apprentice, and 18 minutes to produce two meals, and its all based on a mystery ingredient....I remember one particular cook-off - the mystery ingredient was M&Ms, but we were able to incorporate this product successfully with filet Mignon, and won the competion! I've also taught cooking classes for over 25 years, and the whole time I maintained my position as a full time Executive Chef for over 50 years. If you like to compete, competion can be a lot of fun. I've done food commercials, where I didn't get a rehersal, you get one shot and thats it, no retakes, so you better have your plan down or you'll look like a fool. If your a professional chef working in a club, restaurant, hotel etc. you are automatically in competition with other establishments even if you don't know who they are, believe me their out there and they most likely know who you are! Competion will make you a better culinarian, Stay Well Chef P.
Well that was unexpectedly depressing. I just remember Lagasse as a glowing beacon of positivity from my childhood, in particular when I had a lot of events and trauma to deal with in that time, and to be perfectly honest I can't ever really recall a moment I think of as Emril's "Downfall"... I just didn't see him on TV much anymore, I already owned his cookbooks, and I saw he still had brand items on store shelves, so I had just assumed he had retired from the on-camera work and focused on the more managerial side of his business.... I had NO idea that Food Network basically canned him, nor did I know he had to sell the rights to his branding to survive as part of Martha Stewart's media empire... I mean, the guy is still managing restaurants across the country and he's able to give 500k to charity and relief efforts, so he's doing alright but... had no idea how many financial and emotional struggles this poor, wonderful man had to go through (and still is).... but I guess you can chock that up to how ridiculously well paid his salary has always been.
@@davidwenner8537 If you recall too that is was in the same few year period about all the educational cooking shows disappeared. Mario Batalli (spelling)was another. Pretty much just competition shows now for me to ignore.
Cooking competition shows are why I mostly stopped watching Food Network. I know I'm not alone. Whoever told them that Emeril was a "losing show" probably also told MTV to stop playing music videos. Bovine scatology.
I wasn't a fan of Emeril, but I watched more Food Network in high school when they said their audience was graying. The competition shows are unfortunate but thank God youtube filled the void with more instructive cooking personalities.
ABSOLUTELY! I'd rather watch some unknown housewife prepare home cooked meals on RUclips, than any of those ridiculous cooking game shows on FN. Between RUclips & PBS I'm set, thanks.
Emeril was my idol and brought out my intense interest in cooking. It's a shame that some people have nasty agendas and want to bring him down. I stopped watching Food Network when they came out with all the competition shows.
I spoke about Emeril/Commander's Palace with a chef from Christian's who still appeared to love Emeril and credited Emeril with the best environment for creativity, fun, and learning. I have eaten at several of Emeril's restaurants - each time the best. Outside of Universal's gates, extra staff at Emeril's retrieves running, excited, children because the parents might never catch them. I am less interested in the info-mercials recently but Emeril has been a positive force in the country and in my life.
Oh Heck yes!!! I've bought a metal pastry cutter/food scraper. It's 6" wide and has a curled side to it. It works GREAT! I miss his original show when he jumped over the back of the couch with a glass of wine in his hand. Never spilled a drop either! LOL
@@Tomatohater64 I hear you on that Stephen. But...he did cook up some good food and he was fun to watch. Kinda like Emeril..He was the only chef that had a live Band on his show. Now...that was just waaaaay cool!!
@@253tubbs He was a superb chef who had a ton of classic French training. If I remember correctly, many of his dishes involved heavy cream or thick, creamy sauces. He was however, a prodigious tipller; I think the more he drank the better his dishes came out - really!
Im 32 I started watching Emeril when I was 16. I had never seen anyone cook like that before. The passion he had for food. The excitement for Garlic BAM! he is the reason I love cooking 😊
Mr. Lagasse is one of the ALL time greats when it comes to his cooking and preforming on T.V. ,it's a high stress job that he carries on his shoulders and still behaves like the gentleman and professional that he is. Happy Holidays every one!
I stopped watching Food Network when it became evident that competition game shows were going to become their MO. Same with HGTV, when it predominantly turn to housing renovations from how to do arts and crafts shows.
How is it lousy of them to explain what is public knowledge? He ran a scam that netted him millions, and then he scampered off like a rat... what we're all supposed to just ignore that cause you like him? Give your head a shake snowflake.

Emeril ‘s tv shows made me happy I really hate to cook but l found myself smiling because he made me feel inspired to love and be passionate about what mattered to me. Emeril involved his audience and seemed kind and sincere and genuine person.
We ate at his restaurant NOLA in New Orleans many years back. Food, service, and presentation was stellar. My Wife kind of wanted me to take her there. I was somewhat indifferent. But it was extremely good in my opinion. I really enjoyed it because I’m not a big “foodie”.
Emeril No Matter what ups and downs you had in your career, you will always be the light that took fine dining to the next level. You were the pioneer opened the doors to everyone in the food industry. only down fall is the money hungry evil societies always ruin everything. you made the food network who they are today and never forget it. but like everyone else we get the slap in the face or get forgotten. then when you have fame everyone wants to take it from you.. thank you for everything you did and i hate those stupid compentition shows cause they entail nothing about teaching the food the way you did. most of all the little kids that were in awe on your shows was priceless... thank you EMERIL>>>>>>

Emeril is the Greatest. BAM!!!!
He was so fun to watch.
watching emeril live on food network was a daily routine for me...between him and alton brown's good eats, i learned a lot about cooking techniques, flavor combinations, and different foods i'd never tried before...then suddenly, everything became all about bobby flay and the rip off "american" iron chef...without emeril, food network would certainly not have grown the way it did, he deserved to still be featured there...
I agree, it went down hill fast, stopped watching. Loved Sarah moulton.
When FN started dumping the cooking shows and turning to game shows I pretty much quit watching FN.
True Story
Emeril was a hero for his cooks and staff after Hurricane Katrina. He truly cares about food and his people.
Emeril is a beautiful man. Food network done goofed hard.
The old Julia Child shows....!! I always learn something amazing from them, God bless her.
Same here, once fn switched away from actual cooking, i switched to the cooking channel...competition shows dont interest me.
Well said. Competition shows and the like ruined MTV, regular TV etc.
@@GarciaDF123 so true, and that's the main reason that I got rid of cable....now I watch what I want on You tube, and other formats.
Emeril is a positive influence in many people's lives. We have been blessed to be part of some of his foundation's events. He is a class act.
He does a really good job of hiring talent in NO to actually move up in the restaurants industry and not just bus tables all their lives.
Emril and Alton Brown taught me to cook.
Amen sister!
@@shakingbones1768 I wish he was on for an hour instead of a half hour. So informative.
Ditto!
Emeril was a fabulous chef and what the Food Network did is disgusting. Today the programming is crap! In fact I had the Food Network removed from my cable. I would have loved to have met the man.
" Lagasse is an excellent culinary artist he's worth every penny he's paid for his work on TV, Cable, or Satellite TV.,"
Love this guy. The only reason I watched food network. Bam bam
I absolutely love Emeril!! He is always going to be a favorite! BAM!
He produced great television and a fun, welcoming show for all
In all honesty, the best Chef knife I have ever had is one of Emeril's, which was purchased 25 years ago. Anyone, and I do mean ANYONE who doubts Emeril didn't put Food Network on the map, (along with Julia Child) is crazy and so is FN. He made them what they are today, and nobody could have done it better.
Food Network is like MTV-- irrelevant now. Nothing tondo with actual cooking
Great analogy, I'm old enough to remember when MTV actually showed music videos, and Food network actually had regular cooking shows!
So true! So sad as well!
Totally agree with you... more good cooking content on RUclips now than all of TV. He and Ramsay are where I got my desire to start my channel.
@@Douglas.Kennedy That was a while back....
I liked watching this guy and Alton Brown. Food is supposed to be fun and educational. Not stressful and seen as a chore.
Really do miss Emeril, a real great personality and is a living legend and resides there with Justin Wilson and Julia Childs to mention a couple.
Reality TV / Competition Food shows were the worst thing to happen to Food media.
And to media in general
they are too emotionally driven which gets predictable
That's why I stopped watching Food Network... they stopped doing what made them, that is cooking shows. I agree that Emeril had to go, because of expenses... but when they got rid of regular cooking shows that I loved, I had no reason to watch Food Network. I still don't watch Food Network today. I want fun, not competition. If I wanted to watch competition, I'd watch SPORTS.
That's how M Tv lost us as viewers too
Competions on TV are not 100% real!
Competion will make you a better culinarian,
Stay Well
Chef P.
why pay to watch them cook plenty utube stuff for free........
I’m sure he didn’t need the money, anyways. He’s such a talented person!!! Love him!!! He is just amazing!!! Hate those competition shows!!!
Emeril Lagasse is still my favorite chef. Food Network needs him back.
I'm sorry shelly they are not going to get Emeril back on the show and they already moved on to a younger market on food network
Credit to Emeril for sticking to his guns until the end.
They didn’t “can” him. They demanded a cut from his restaurants and he walked.
@d nuzzio His contract was up for renewal. FN had a new president who tried to squeeze him. He’s done just fine without them.
@@davidwenner8537 If you recall too that is was in the same few year period about all the educational cooking shows disappeared. Mario Batalli (spelling)was another. Pretty much just competition shows now for me to ignore.
@@kathleennorton6108, cool story but that seems to have little to nothing to do with what was said. You just HAD to inject politics into it.
You stopped watching Food Network because you are a racist. There fixed it for you.
I never watched him that much but his line "BAM!!!" is what I remember him for.
Cooking competition shows are why I mostly stopped watching Food Network. I know I'm not alone. Whoever told them that Emeril was a "losing show" probably also told MTV to stop playing music videos. Bovine scatology.
I loved his shows and I never watch the new competitive shows. He is a great cook.
Emeril Lagasse. The Two Hot Tamales Mary Sue Milliken and Susan Fenigar along with The Great Chefs series have always been my favorite
Loved "The Great Chefs of..." I also loved the narrator's voice on those shows.
Bring his show back.
I’m a chef and part owner of my families restaurant, and it all started for me when I started watching Emeril live as a young teenager.
Those food competition shows are awful. Stopped watching FN after they started showing more of those type of shows. Love EL!
Just like they did with Mario Batali. Michael Chiarelli. Tyler Florence kat Kora
I got the perfect dessert after I cooked one of his recipes on a date now she's my wife
YOU'RE SO LUCKY , TEN ,TWELVE , TWENTY YEARS FROM NOW , AT LEAST YOU'LL KNOW WHO TO BLAME!!!!HAHA HAHA
Congrats!!!!! From another A T
Very Nice 👍🏻
Emeril was one of the Best Top Chefs ever!!
Thank you Mashed for the hard work of your team making informative and thought provoking videos from the food world.
I love Emeril Lagasse. Loved his cooking shows and delicious recipes.
Everyone makes mistakes we are all human.
Wow incredible to see how such good people like this guy give a lot to people and our communities.
Anyone out there remember Graham Kerr - the Galloping Gourmet? He was my favorite.
Oh Heck yes!!! I've bought a metal pastry cutter/food scraper. It's 6" wide and has a curled side to it. It works GREAT! I miss his original show when he jumped over the back of the couch with a glass of wine in his hand. Never spilled a drop either! LOL
@@253tubbs That's because he was usually too drunk to care, but he made his best dishes when he was sauced. 🤣😁🤗
He was a witty, talented, chef with a fondness for the grape. He wasn't nearly as funny when he sobered up.
Bam! I always wondered what happened to him. I use to watch him all the time.
Im 32 I started watching Emeril when I was 16. I had never seen anyone cook like that before. The passion he had for food. The excitement for Garlic BAM! he is the reason I love cooking 😊
Ahhhh yes.... GARLIC... the miracle ingredient!
dude, this guy got me into cooking as a kid.
Same! I actually watched him all the time before I even wanted to learn to cook... I just liked the guy.
Pretty lousy of you guys to trash this great man and chef during the last part of this video... Everyone love Emeril, he has gone through enough...
How is it lousy of them to explain what is public knowledge? He ran a scam that netted him millions, and then he scampered off like a rat... what we're all supposed to just ignore that cause you like him? Give your head a shake snowflake.
@@clayolson1679 The state government was the ones who offered him and that producer that money in the first place, Clay. Meaning, it's on the Government of Florida, not Emeril or his producer when it comes to any crimes from that money they were paid. Board of Tourism is a state entity. So the state is at fault, not them.
No, not everyone, this was basically a feel good video
@@TheCriminalViolin hahahaha pretty sure he was well aware of the scam, which is why he's kept his head down since. Turning a blind eye does not make one unaccountable..
ya that pissed me off too.
Emeril is still high up there among chefs.
Love Emeril, he's such an amazing chef, and baker with a great heart
Competition shows destroyed TV across the board. I miss a good tv show that isnt based on some over dramatic competition
I hate it, that's why a rarely watch American TV these days. It's either ridiculous competition, or some sort of artificial deadline they set so they can "race the clock".
When they started catering to the people who were raised on MTV & Married With Children they lost me as a viewer. I left & never returned.
Emeril was the MAN!
Emeril was the catalyst for the Foodie Movement...Bam!
I want Emeril Laggasse’ show back. Class act show. Real food. Yum
No mention of Emeril Green. That show helped me loose weight by learning how to eat healthier.
Thank you Emeril for all the great meals that you've made and all the donations you have made for everybody and have a Merry Christmas
Don’t know what I missed but I love this guy♥️🥰👏🏻👏🏻👏🏻👏🏻👏🏻
I still love watching Emril Live on youtube. His shows give me great comfort. Great memories. 💓
Lagassee is going to have a restaurant onboard the new upcoming Mardi Gras cruise ship from Carnival
Emeril ‘s tv shows made me happy I really hate to cook but l found myself smiling because he made me feel inspired to love and be passionate about what mattered to me. Emeril involved his audience and seemed kind and sincere and genuine person.
I love Emeril. The video is probably good (I only got to the first ad.) but the ads make it not worth sitting through.
He is one of amazing chef ever, I stopped watching Food network after he left.
That's amazing! It seems like a lot of us did.... FN probably crapped their pants when that happened. lol
I have been to Emeril's in Atlanta and the food was so good !! The restaurant is beautiful too .
Enjoyed this youtube. Whenever I need a laugh from Emeril, I watch: "the Muppets' Swedish Chef with Emeril". A Must Watch for everyone!
I still have some of his products and love them. They are great. I think his pasta sauce is the best.
