    In the boil out video you state to do the boil out at 220 degrees. Which one is the preferred method? Please disregard if I misunderstood.

    After our fryer is boiledout/cleaned and new oil is in, cooking debris from the first use sticks to the heating elements. Is there a way to prevent this?

      Like those car maintenance books and videos where the car is pristine underneath, clean with none of the bolts rusted in. Or the college plumbing courses where you practice on a bench and not upside down under a sink with water dripping in your eye.

    I just paid to have the drain pipes cleaned. The guy said a lot of the problem is grease in the lines so dumping the cleaning water down the drains does not sound right. What can we do different? How can we get rid of the rinse water?

    Off the subject.....I have a food truck ( new to this business ) we have a problem when traveling of the grease sloshing out of my jet fryer. I made a alum cover to set above the fryer screen grate......making a mess when traveling. Any suggestions

      You might just want to cool the oil and store in a sealed 22 quart cambro while traveling. It might be a bit of a pain. But it could be worth the peace of mind knowing there's little chance for a mess. Unless there's just nothing like a fresh order of 165 degree chicken tenders at 60 mph lol

    What if your work wont let u use anything to keep you safe I'm really concerned about my life first time and already got burned and they dont even turn it off or let it cool down before we clean....

    It’s easy let the grease cool. Empty, rinse (a hose or electric pressure washer is nice but I started with buckets and dish soap when I first got my bus. license ) degrease (I use zep spayed with Hudson sprayer), scouring and rinse (drying with clean towels is nice but not necessary). A smart thing is to get the line of grease around the rim off with the oil still in the fryer first just not hot but warm. I do 2 in a half hour and they look new. Maybe he can ghost clean a new hood and filters for the next video.

    How do you keep the bottom cabinet from getting a thick layer of grease?

      In our kitchen, we line the bottom with plastic cling wrap but, to be honest, it's inevitable that some grease will get down there. I like to justify it in my mind by believing that the small amount of grease that does splash around the bottom helps lubricate any metal parts preventing rust and corrosion.

      Scrapers, scrubbers, degreaser, and have it done after oil change and once a day. All about frequent maintenance with grease.

    Wouldn't you wanna boil around 220 250 max? Its water not oil. I've never tried this cause I always thought you needed oil to turn them on high temp

      +Valdir Rosario You'll have to take the fryer off the gas line and essentially take apart the back and clean it by hand. If the flue/chimney is that ‘caked’ likely the burners are too, and all should be removed as best as possible. Unfortunately it's not an easy task once you let the unit get like that.

    How do I clean an old rusty fryer that hasn’t been used in a few years

      Maurice Ellis they sell metal screen scrubbers at restaurant supply stores. They literally look like window screen but they’ll take the rust off. A green pad over top helps. Some rust remover will help. I’m a self-employed janitor if ethos helps validate my advise.

      I cleaned a old rusty unit and got it shinny using a cordless drill, a wire brush attachment, and a drill extention to get deep inside.

    I'm a time served chef of 35 years and it seems to me that there is some high end designer riding around in a sports car for designing this piece of crap. Cleaning kitchen equipment should never have to be so hard or fiddly.

      @@ToastWarner It depends on the fryer you have. Some of the fixed element fryers are so hard to clean now, the only way is to empty them of oil, half fill them with water. Turn on the heat and boil it up to remove the dirt. Then rinse it through with clean water half a dozen times. Even then, it many not be 100% clean.
      That's why I complain about the designs. They make them so hard to clean. It's all about innovation and design before practical usage.

    I have to clean out two fryers once a week. Hate this part of my job. They don't provide me with safety goggles or nothing and also don't provide me with those brushes to make cleaning easier. I end up spending two hours using paper towels and tongs to clean out the crumbs.

      Damn you suck at your job i only clean 1 fryer usually done in half hour

      First step is heat your fryer to the max temp.
      Second is dump the oil with it being so hot it usually goes floss use your stick ass it dumps then with tongs get rid of the big residue..then with the the same hot oil dump it back in to the fryer with a small deep pan and use mits to incline the fryer towards the hole drain of the fryer with the drain open and that should take care of the left over crumbs..then pour hot water with the special detergent and let it rest for 7min and in those 7min clean the outside.. then dump it AND add more hot water with detergent but this time scrub it for 7min... after that dump it once again and rinse with hot water untill all detergent is gone then wipe down with towels...the key is do everything hot and i never use googles they bug me...

      Rinse the crumbs out you might have to scrub and rise 2 or 3x but beats chasing them with paper towels. Tilt the fryer toward the drain helps. I use a pressure washer so I got it easy but the crumbs blow up on the hood and filters but guess what I scrub next anyway. I do 2 fryers in 30min.

    Your video would have been better if you would have ACTUALLY cleaned a dirty fryer.
