How can I make sure the fryer can be ignited without problem after I fill water to boil? It happened to me before, when I tried to clean some dirty parts uder the fryer with wet towel, I couldn’t ignite it. I’m still learning, your video is very helpful.

It looks like the shiny surface is eroded. It looks so matte and brown. This is the result of wrong chemicals and scrubbers. Industrial kitchen is like teeth is very prone to decay. If you miss the cleaning routine, gunk builds up and you overdo it.
A biodiesel company will take your old oil off your hands for free bro sounds like you go through 20 gallons or more a month? so they won't call that small potatoes also if there's other restaurants with fryers on your street they will gladly send a truck out once a month.

There is still many oil sediment inside the fryer. So next customer will eat this micro sediment
