Ingredients:
for the red pickled ginger :
200g young ginger
2 tsp salt
200ml red plum vinegar
for the mayonnaise :
50ml soy milk
100ml avocado oil
1 tbsp apple cider vinegar
1 tsp maple syrup
1 tsp mustard
1/2 tsp salt
for the batter :
100g whole pastry flour
20g rice flour
1/2 tsp baking powder
3g dried shiitake
2g kombu
300ml water
50g king trumpet mushroom
1 tbsp oil
2 tsp soy sauce
30g green onion
worcester sauce
sea lettuce
Instructions:
1. thinly slice young ginger, sprinkle salt and massage well. Put a weight and leave for an hour.
2. squeeze the ginger and soak in red plum vinegar.
3. put all the ingredients for mayonnaise into a blender cup and blend until it thickens.
4. combine all the ingredients for batter and whisk well.
5. fry king trumpet mushroom and season with soy sauce.
6. preheat takoyaki pan to 200C/390F, put oil in the pan and pour the batter.
7. put king trumpet mushroom, red pickled ginger and green onion over the batter.
8. make the batter into a shape of ball.
9. top with worcester sauce, mayonnaise and sea lettuce.
10. Enjoy!

マスタード 小さじ1

*たこ焼き生地*
全粒薄力粉 100g
米粉 20g
ベーキングパウダー 小さじ1/2
乾燥椎茸 3g
昆布 2g
水 300ml
エリンギ 50g
油 大さじ1
醤油 小さじ2
ネギ 30g
ウスターソース
あおさのり
「作り方」
1、新生姜を薄切りにして塩でもみ、重石を乗せて1時間ほど置きます。
2、新生姜を絞り、赤梅酢に漬けておきます。
3、マヨネーズの材料を全てブレンダーで混ぜ、マヨネーズを作ります。
4、エリンギを炒め、醤油で味付けしておきます。
5、たこ焼き生地の材料を全て混ぜ合わせておきます。
6、たこ焼きプレートをよく熱しておき、油をひいて生地を流し込みます。
7、エリンギ、ネギ、紅生姜を加えます。
8、たこ焼きの形に整えます。
9、ウスターソース、マヨネーズ、あおさのりをかけます。
10、エンジョーイ!

OMG thank you!!! Takoyakis were a favorite snack/meal of mine when I was a meat eater and after becoming vegan I've tried to find different ways to make it that would taste as delicious as they are, but always failed. I'm so going to try this recipe. Again Thank you for sharing.

@@sahermerchant I haven't tried yet because I need a takoyaki pan like the one he has. But I've done many of his recipes (mostly desserts) and they are good so I'm sure this will be the bomb too.

Ha! I can only imagine the kind of mess I would make trying to cook that. No proper ingredients. No correct utensils. No clean work surfaces. No chef-level cooking skills.
Then at the end there would still be no takoyaki so you just forget it and buy store bought.

just use hot dogs or nuggets for the filling. or corn, potato or fruit cubes if you want to change the game. make the most basic takoyaki by making the plainest batter, added with whatever i suggested as the filling, then have the mayo & sauce you prefer. it won't taste or feel like real takoyaki but it's still some yummy balls.

I was wondering what the sauce was that needed mustard,milk and avocado oil. Turns out to be mayonnaise! That's really interesting.

g3nkiikyandii I do! But I use different oil ( sun flower). Some Times I ad some turmeric for the color. Believe me it’s really good, and my kids some time think it’s the regular egg one

@@kittenmimi5326 Japanese mayo is definitely better than the standard plain stuff in the rest of the world. You can normally just buy it from a supermarket where I am, not sure about you but worth a look!

Im Japanese. We use the powder already mixed many ingredients ,so its easy to make Takoyaki.

Just found your channel. Hello. This video brought back memories from walking the food alleys of Tokyo back in the 90s when i lived there. I never tried this particular dish because i always saw it being made with octopus. I was hesitant to try it. Your mushroom version looks delish. Domo arigato gozaimasu.
