I love Thai flavors too, and that's a hefty serving! My favorite is Aroy-D or Mae Ploy curry brands. I have a hard time finding the sugar snap peas in my market, so I use long string beans. Thanks for the recipe.
I've been making a version of Thai or Chinese peanut sauce for pasta as well as going over sliced persian cucumbers. I end up using Trader Joe's crunchy peanut butter.
I had bought a bottle of Thai curry that I had no idea what to do with it. That looks so delicious. I would have never thought of adding peanut butter. What would you do if you were a wimp like me? I can't handle things too spicy, is there a way to mild it down? Or do you just add more peanut butter? Thanks so much, Flo!
The Mae Ploy Massaman curry in the pink tub (instead of red or yellow) really isn't spicy at all! The only gotcha I found is that it tastes saltier, so watch how much you use - but I made this using the Massaman last night and it was great!
