Y el problema es, I cannot see raw meat cut off. So I just skip the part when Luis cut off the meat. T_T
But the rest of foods seem so delicious.

I remember going with my mom to Prosperidad market when I was little and it was amazing. After, at the 90's, the big supermarkets came and lots of tradicionals markets dissppeared. Now some of the tradicionals markets are coming back and it is fastastic, the quality is better. I discovered your Chanel yesterday and it is very cool. By the way, the Spanish olive oil is much better than the italian one...sometimes, the italian olive oil is mixed with oil from Morocco, with has no the proper sanitary controls. I wish we export more olive oil to the rest of the world, it is really good. Besitos desde los Madriles

Como dato, Spain is a giant in the olive oil world. The country produces almost half of the world’s olive oil, more than three times as much as Italy, Greece or Tunisia. Over 250 million olive trees grow in Spain. Jaen is the largest producer of Olive Oil in Spain and also world-wide. Just the province of Jaen produces more than the second largest producer country, Italy.

In Andalucía we usually ask ¿Quien es la última? (or el último if there are males involved)
At the butchers you didn't mention rabbits (conejos) which are always sold with the head still attached. Why? - because without the head, you would find it very difficult to know that it wasn't a cat - they look almost identical once the fur has been removed. How do you tell the difference - a rabbit is a rodent and a cat is a carnivore - look at the teeth!

So here I am sitting at Latazo having a vermut de grifa, writing yet another post about one of your videos James. I even took a pic of Polleria Hernandez (closed today) just outside. We are going to end up running into each other.

18:00 I live in (and am from) Gran Canaria, and, except for the occasional buy of _pan de puño_ (literally _fist bread_ which is rolled 100% by hand and made the slow way, with mother dough) I shifted to roll and bake my own bread. About the same price I woud pay for a frozen _barra_ but way better (and it goes fresh for some days). We've got a place here which's been using the same mother dough for over a century, but it's quite far from home so... home made bread it is for me.

So far, I have avidly watched a number of your excellent videos and you have talked about Spanish wine, beer, gin, vermouth etc. but never about the 3 or 4 amazing caramel-tasting brandies such as Carlos 1, Gran Duque D'Alba, Torres 10 Year, or Cardinal Mendoza...the taste is unique to Spain and they normally pour you a huge measure!

When I was living in Madrid, nearly 40 years ago, my favorite cheese was Manchego en aceite. I remember it as having a sharper taste than regular Manchego. I’ve looked but have never found it at any cheese shop in the U.S. I wonder if you can fill me in on the difference between the regular and “en aceite” varieties. I have found that longer-aged Manchego has a sharper taste than shorter-aged, but I seem to remember the aceite version being more so. Does it still exist in Spain?

    • @spainrevealed
      @spainrevealed  5 лет назад +6

Great questions Jerry. More cured manchego certainly does have more flavor. The “en aceite” comes from the fact that olive oil is a preservative and so was the traditional way to preserve the cheese (and lots of other foods) pre refrigeration. The technique has remained because it also gives a wonderful flavor to the cheese. You can still find it easily in Spain. That’s a shame you can’t get it in the USA. Have you tried latienda.com?

@@spainrevealed Thank you for that link, James. Unfortunately, I don't see any Manchego en aceite at latienda. However, you inspired me to do a google search. I didn't find any purveyors in the U.S. (elsewhere, yes), but I did find DIY instructions. It never occurred to me I could to it myself! This is going on my to-do list right now. Can't wait to see if I can reproduce that wonderful flavor.

btw - after watching one of your videos that highlighted those amazing Napolitanas de Crema at La Mallorquina in Madrid, I found this recipe online. When my Manchego en Aceite is ready to eat I'll plan to make a Spanish meal and some of these to end with. It'll be a trip to my past...

These DIY cheese are a different thing, it's only preserved in olive oil. The cheese that you remember is a cheese aged in olive oil. Like this: valledearas.com/de/comprar-queso/queso-de-oveja-madurado-en-aceite-romero-ocana
This store deliver to all European Union. Maybe they can send you to the US. Send a email and ask them.

jerrys88 let me give you the name of a world class cheese "en aceite" you can find in the US: "Páramo de Guzmán" from Burgos, Spain. If you can't find it I'll send you one. I lived in the US for sixteen years and I love your country.

@@franbas91 Thank you for the information. I will email them. In the meantime, I am curious to know, do you have personal experience preserving cheese in olive oil? From what I have read, it sounds like it doesn't just preserve but also affects the taste. Isn't that what manchego en aceite is, after all?

hi mate. You should try the mollejas de ternera (de corazon) (sweetbreads) en el mercado Anton Martin (creo que el stand es la Sagrada y son argentinos). You have mollejas de garganta o de corazon and the heart one is the best with a bit more fat, melts in your mouth (venden de corazon). Otra opcion, si no tenes parilla, doras la molleja entera (en aceite y mantequilla), then you slice it and give it a quick go with garling, parsley and more butter. Take out and enjoy with a bit of lemon. The best! Price for something so exquisite is only 9€/500g. In French cuisine ,"Le ris de veau" is considered as haute cuisine and often cooked with sauces, like madera sauce but to me the Argentine way, a la parilla, is the best.. Una delicia!

So cool I love this... very well done. Love your candor and fun with the chefs from around the world. I loved how you focused on the story behind each tapa which as you said really says so much about the place they are from and how it is now reflected in food. Truly interesting and deserves further exploration by someone... You're a very lucky man doing it now .. and in Spain! Looking forward to the next episodes! ... Vamos! (perhaps meet you in Spain this year)
