  • In the bottom of my recipe box, a brownish clipping from an old newspaper, screamed out to be made. I have made other applesauce loafs. This one is from a 1955 newspaper and you might be skeptical about a recipe from so long ago. You shouldn't be about this one, it's fantastic! My co-workers gobbled it up. While I was making this cake, a Shaker tune popped into my head, "Simple Gifts." I pretty much hummed it, throughout the whole filming process. I wonder if shaker angles were trying to tell me something. Maybe the cure for 21st century is the shaker faith.

    Preheat the oven to 350°. Butter the loaf pan.
    In a medium bowl, cream 1 cup sugar and 1/2 cup butter. Once light and fluffy beat in 2 eggs. Next add in half of the 1 3/4 cup flour and half of the 1 cup applesauce. Also add in 1 teaspoon baking powder, 1 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg. Beat until almost incorporated. Add in the rest of the flour and applesauce. Lastly add in 1/2 cup chopped walnuts. Transfer to the baking loaf pan and bake for 1 hour.
    While it's baking, mix in a small bowl, 1/2 cup powder sugar and 1 tablespoon water. Once smooth, set side. When the loaf is done, remove from the oven and immediately coat the top of the loaf with the icing. Allow to cool completely before cutting. Shaker your plate.
