  • Malt loaf is a classic British sweet bread known for its rich, sticky texture and malty flavor. The history of malt loaf dates back to the early 20th century in the United Kingdom. The recipe was popularized in the 1930s by a company called Soreen and is now synonymous with malt loaf in the UK.
    The key ingredient in malt loaf is malt extract derived from barley. Malt extract provides the loaf's distinctive flavor and contributes to its moist, dense texture. Making malt involves soaking barley grains in water to start germination and then drying them to stop the process. This process develops enzymes that convert the grains' starches into sugars extracted as malt.
    Malt loaf is often made with dried fruits like sultanas, raisins, or dates, which add sweetness and texture. The inclusion of black tea in the recipe helps to plump up the dried fruits and add a subtle depth of flavor. Other ingredients like black treacle or molasses and dark brown sugar enhance the rich, caramel-like taste of the loaf.
    Traditionally, malt loaf is served sliced, with a spread of butter, often as a tea-time snack. Over the years, it has remained a beloved treat in the UK, with its recipe passed down through generations. It's known for being a filling, energy-packed snack, sometimes enjoyed by athletes and outdoor enthusiasts.

    Ingredients:
    1 cup (250ml) hot, strong black tea (without milk or sugar)
    1 cup (175g) sultanas
    1 cup (175g) raisins, prunes or chopped dates
    7 tablespoons (130ml) malt extract, plus extra for glazing amzn.to/41SDMEG
    2 tablespoons (30ml) black treacle or molasses amzn.to/3SeU2wI
    1/4 cup (50g) dark brown sugar
    2 cups (225g) self-raising flour
    1 teaspoon baking powder - optional
    ½ teaspoon baking soda
    2 beaten egg
    oven cook - 150C - 300F 25 - 30 mins
    I cooked in a HYSapientia air fryer 140C - 280F 33 mins

    I made this yesterday 26th Jan. OMG not tasted this loaf since I left UK it was fantastic! absolutely wonderful. Better than Soreen you should be proud as I was when I saw and tasted my cake.👍🇦🇺🇬🇧

    This recipe warms my heart... I stopped buying factory made malt loaf as it just isn't the same recipe, or taste to what i remember and i ate enough to know how delicious it was back when i was younger, rich, malty, fruity, deliciousness... i could eat a whole loaf without butter on my way back from running errands. It cost 12p.

    I love malt loaf, and only get it when I visit the UK. I live in Canada. Now I’m going to try and make it at home! Not sure where I can get malt extract. Thank you, Rik.

    That is very similar to my Boston Brown Bread recipe! Just no malt extract because we don't typically have that ingredient. We would have it along side Boston baked beans for a meatless Friday supper. Ours is cooked in cans for a cylinder type loaf. Live mine with butter or cream cheese is fantastic too. Have the leftover for Saturday breakfast with tea or coffee And it freezes beautifully so you can have it on hand or to gift. I'm drooling over it and those loaf pan papers as well. 🎉

      You should try making it with malt extract and black treacle. Have a look for home brew supply stores as they tend to carry both of those ingredients.

      @@buffybrown1619 There's confession on Saturday! Substitute butter. Then there's the technicality of using it for flavor not actually eating the flesh meat part. There's always a way. Being poor you use what you have . Salt pork was a luxury item.

    I compared recipes and this is very much like the American Boston Brown Bread recipe. The American version uses less sugar and adds buttermilk. I look forward to making your version!

I am Celiac, and had to use GF flour and rice malt...but I'm happy to report it bakes up beautifully!!! Just so grateful to you for keeping these beautiful old recipes alive!!!     Rik, this is my Son's all time favourite. I love your cooking and baking as they are all original. There are none of the additives that are put in supermarket foods. Just good home traditional cooking.

    I've read that malt wasn't really used as a sweetener until Prohibition in America, which forced breweries to branch out into such things as malt shoppes.

    Like Annette below, I am reminded of our local favorite, Boston Brown Bread. It is made from a mix of flours, raisins, and molasses, and steamed in tall tins. It's a delicious hearty bread, traditionally eaten with baked beans.

    I have just made it sitting down with a hot slice lathered with butter and a cup of tea it is delicious the hardest part about making this cake is trying to find the malt I found it in the supplements in Woolworths I close my eyes and I’m sitting with my grandmother thank you so so much for this beautiful recipe a cake I’d forgotten about love from New Zealand originally wales ❤

    I made this this morning for my daughter to take to an afternoon tea gathering. The children went bonkers for it. Including a 9 month old baby who was virtually pulling the loaf off the table to get at it after eating a small piece, ended up enjoying a whole slice! One adult had some and said it was absolutely delicious. Perhaps some of the magic is in the malt?

    I love barley and malt. This looks delicious. I have dried black figs and dates but need to buy Sultanas. I guess we can add any dried fruits we like. Adding this to my recipe box. 👍🏼

    Hailing from Manchester originally, that is a childhood favourite, where the Soreen malt loaf came in two sizes. Here in Australia we are only able to get the smaller loaf and it’s quite expensive.

      I can honestly tell you - this loaf if you can keep it two days is really fantastic with some butter on. I had half a loaf in a tub. I finished it with a cuppa. Had it for breakfast whilst prepping ingredients. Amazing. Hope you can make it. Best, Rik

    Wow. That looks so delicious. I have loved malt loaf since I was very young. It was the only cake that my mum never made, so I guess she didn't have a recipe. She used to buy it. As an adult, I've always put butter on it. Yours is really packed with fruit and I like that it has a crunch to the top.

    Hi Rick, I made this yesterday. I used 2x1 lb loaf cases. My husband and I had some later in the evening and I had a second slice with butter this morning. Yummy! Thanks for the very easy recipe. I most certainly will add it to my repertoire. I’ll add that I had to add extra minutes as well

    Back in the 70's I used to do van sales for Sunblest. I well remember the Soreen malt loaf it was one of my favourites, so it was one less item I had to sell.😄

    Rik, I hate you! (only joking). I used to have this often when we lived in Yorkshire and I love it. Unfortunately 20 years ago I was diagnosed with Coeliac Disease and can no longer have anything with normal flour or malt. You make my mouth water watching you enjoying this and I am green with envy.     That looks delicious! It reminds me of Harvo more than Soreen, which I remember as being a bit lighter and not as moist. Did you ever try toasting malt bread? It's delicious with butter and maybe a bit of Caerphilly or Wensleydale. Thanks for the recipe.

    I just found your site and enjoy it. I am expat but fly into Manchester every time anymore , even though I am from Cambridge area. First thing off a flight I find a malt load, and they’re every where anymore in the mini size: train stations, airports and always shop.
    Why do you not mention the amount of flour , sugar etc in your videos as then I can write it down? Love your passion for what you bake and enjoy!

      Man Alive Rik....I only know that my mother made stew 🍲 with vegetable roll.... There was 5 children and our 2 parents...My father was the only bread winner,,,he also had a second job which was the B Specials,,,,they were part of the police service of Northern Ireland...

    Thank you very much for that; I love Soreen ... it's too easy to eat a whole loaf of it with butter! I'll be making my own soon! Could you tell me where to get that lovely long serrated knife, please? I find an ordinary bread knife is a little too short to cut some of my homemade round loaves.

    We have two different types of Molasses here in the USA. Black-Strap Molasses is stronger flavored and very slightly bitter. Which would be more appropriate?

    I used to make this using the recipe on the jar of malt extract. Then, they stopped putting the recipe on it & guess who hadn't written it down😂
    Don't think I soaked the fruit in tea either, so I'll definitely have to try it.
    I got put off buying the ready made version when I saw a loaf with an added bonus. I won't share😱. Suffice to say, not a normal ingredient

    This bread reminds me of B & B Brown Bread that comes in a tal can. My dad would buy it all the time back in the 70's when I was a teen. My sister and I would sneak and open up a can anx eat it with franks..and beans. We loved it. I hadn't eaten for years more recently because we couldn't find it in the grocery stores. I.found online.and ordered some and boy was i excited. It brought back so many good memories . Now this bread was from a can mind you. Yours looks absolutely fabulous. More delicious looking than from a can for sure. I would like to try making some one day. Now was the fruit raisins? That's what they used in the can version. And the malt. Is that some type of baking malt? I've never used it before so I'm not even sure where to find it here in the U.S.....thanks again Chef Rik for yet another winning recipe. 😊❤

      Yes, absolutely! Water it down. No mate the Malt extract came from a company called Bakermart in ChiangMai. I can give you the link www.cmbakermart.biz/en/home This is the ENG bit - type in the search box on their page. The malt extract is quality - Austrian.     Rik thank you for this recipe l heard you say add the baking soda to the fruit to soften it but when you mixed the flour and salt together you said once again to add the baking soda ....did you mean baking powder as the printed recipe said ....here in the UK they are two different things .... baking soda being bicarbonate of soda and the other the raising agent baking powder..... thank you for the hard work you put into these helpful videos all the best

    rik i wonder if this isnt like our brown bread you get in the U.S.A with the brand B& M ... they also have baked beans also to go with it...ours is steamed canned in a tin...you buy at th grocery store...

    I made this today. Here is my input. FYI - I am in the US.
    1. Like other folks said, this came out a lot like Boston Brown Bread. Except, Boston Brown Bread is steamed, not baked. As I was pouring the batter, I was thinking…this looks like it would come out good if it was steamed. I may try that next time!
    2. Oven directions of 300F for 30 minutes is no where near enough time/temp to cook this in a conventional oven. Maybe 300F convection? Or, 350F conventional? I don’t know as I started with the 300f but had to crank it up at 30 minutes to 350f as it was not even half done. Took me one hour at that.
    Definitely resulted in a good product in the end! Worth a try.

    It is almost impossible to find malt extract - I have tried for over a year. Even your link to it on amazon - out of stock and they have zero idea when it will be available. Have you any sources for it then. I have wanted to make similar loaves but cannot for the life of me find malt extract. Are you using a jar you have had for sometime and haven't had to try and buy it recently? Perhaps Soreen has cornered the market and all that is produced they get. Otherwise, loved the idea of this loaf.

      None of the Home Brew Shops here in eastern Idaho have Maple extract😢. Next I'm going to the local Budwieser barley processing plant and ask. I'm a serious sweet bread baker and I have to make this one.
