There’s actually a recipe for beer using malt extract in Captain Cook’s journal from the early 1700’s. I well remember as a small child in the early 60’s having malt extract & cod liver oil taken off the spoon and they’d dip babies dummy’s in it. My late mother loved malt loaf plastered in real best butter, so we often had it in our house. I’ll be trying this recipe to pay homage to my mom. I lost her during covid and she’d have loved to try this.

I stopped buying factory made malt loaf as it just isn't the same recipe, or taste to what i remember and i ate enough to know how delicious it was back when i was younger, rich, malty, fruity, deliciousness... i could eat a whole loaf without butter on my way back from running errands. That is very similar to my Boston Brown Bread recipe! Just no malt extract because we don't typically have that ingredient. We would have it along side Boston baked beans for a meatless Friday supper. Ours is cooked in cans for a cylinder type loaf. Live mine with butter or cream cheese is fantastic too. Have the leftover for Saturday breakfast with tea or coffee And it freezes beautifully so you can have it on hand or to gift. I'm drooling over it and those loaf pan papers as well. 🎉

Hello Rik, I just made my second loaf of this. A recipe I found is nearly identical to yours, but uses honey instead of brown sugar and ½ cup of rye flour that takes the place of ½ cup self-raising flour. Here in Cody, Wyoming we are limited on options for malt extract, but our local Ace Hardware store has a small beer brewing section and they stock it!
Rik, this is my Son's all time favourite. I love your cooking and baking as they are all original. There are none of the additives that are put in supermarket foods. Just good home traditional cooking.
I compared recipes and this is very much like the American Boston Brown Bread recipe. The American version uses less sugar and adds buttermilk. I look forward to making your version!

Like Annette below, I am reminded of our local favorite, Boston Brown Bread. It is made from a mix of flours, raisins, and molasses, and steamed in tall tins. It's a delicious hearty bread, traditionally eaten with baked beans.

Hailing from Manchester originally, that is a childhood favourite, where the Soreen malt loaf came in two sizes. Here in Australia we are only able to get the smaller loaf and it’s quite expensive.
I can honestly tell you - this loaf if you can keep it two days is really fantastic with some butter on. I had half a loaf in a tub. I finished it with a cuppa. Had it for breakfast whilst prepping ingredients. Amazing. Hope you can make it. Best, Rik

Hi Rick, I made this yesterday. I used 2x1 lb loaf cases. My husband and I had some later in the evening and I had a second slice with butter this morning. Yummy! Thanks for the very easy recipe. I most certainly will add it to my repertoire. I’ll add that I had to add extra minutes as well

Wow. That looks so delicious. I have loved malt loaf since I was very young. It was the only cake that my mum never made, so I guess she didn't have a recipe. She used to buy it. As an adult, I've always put butter on it. Yours is really packed with fruit and I like that it has a crunch to the top.

First thing off a flight I find a malt load, and they’re every where anymore in the mini size: train stations, airports and always shop. Back in the 70's I used to do van sales for Sunblest. I well remember the Soreen malt loaf it was one of my favourites, so it was one less item I had to sell.😄
That looks delicious! It reminds me of Harvo more than Soreen, which I remember as being a bit lighter and not as moist. Did you ever try toasting malt bread? It's delicious with butter and maybe a bit of Caerphilly or Wensleydale. Thanks for the recipe.
I made this this morning for my daughter to take to an afternoon tea gathering. The children went bonkers for it. Including a 9 month old baby who was virtually pulling the loaf off the table to get at it after eating a small piece, ended up enjoying a whole slice! One adult had some and said it was absolutely delicious. Perhaps some of the magic is in the malt?
We have two different types of Molasses here in the USA. Black-Strap Molasses is stronger flavored and very slightly bitter. Which would be more appropriate?
I've read that malt wasn't really used as a sweetener until Prohibition in America, which forced breweries to branch out into such things as malt shoppes.

This bread reminds me of B & B Brown Bread that comes in a tal can. My dad would buy it all the time back in the 70's when I was a teen. My sister and I would sneak and open up a can anx eat it with franks..and beans. We loved it. I hadn't eaten for years more recently because we couldn't find it in the grocery stores. I.found online.and ordered some and boy was i excited. It brought back so many good memories . Now this bread was from a can mind you. Yours looks absolutely fabulous. More delicious looking than from a can for sure. I would like to try making some one day. Now was the fruit raisins? That's what they used in the can version. And the malt. Is that some type of baking malt? I've never used it before so I'm not even sure where to find it here in the U.S.....thanks again Chef Rik for yet another winning recipe. 😊❤

Man Alive Rik....I only know that my mother made stew 🍲 with vegetable roll.... There was 5 children and our 2 parents...My father was the only bread winner,,,he also had a second job which was the B Specials,,,,they were part of the police service of Northern Ireland... Not great wages in those days...My mother bought the cheapest meat around,,and turned it into 🍲 stew.. rik i wonder if this isnt like our brown bread you get in the U.S.A with the brand B& M ... they also have baked beans also to go with it...ours is steamed canned in a tin...you buy at th grocery store...

Rik thank you for this recipe l heard you say add the baking soda to the fruit to soften it but when you mixed the flour and salt together you said once again to add the baking soda ....did you mean baking powder as the printed recipe said ....here in the UK they are two different things .... baking soda being bicarbonate of soda and the other the raising agent baking powder..... thank you for the hard work you put into these helpful videos all the best

Rik, I hate you! (only joking). I used to have this often when we lived in Yorkshire and I love it. Unfortunately 20 years ago I was diagnosed with Coeliac Disease and can no longer have anything with normal flour or malt. You make my mouth water watching you enjoying this and I am green with envy. Yes, absolutely! Water it down. No mate the Malt extract came from a company called Bakermart in ChiangMai. I used to make this using the recipe on the jar of malt extract. Then, they stopped putting the recipe on it & guess who hadn't written it down😂 Don't think I soaked the fruit in tea either, so I'll definitely have to try it. I got put off buying the ready made version when I saw a loaf with an added bonus. I won't share😱. Suffice to say, not a normal ingredient

It is almost impossible to find malt extract - I have tried for over a year. Even your link to it on amazon - out of stock and they have zero idea when it will be available. Have you any sources for it then. I have wanted to make similar loaves but cannot for the life of me find malt extract. Are you using a jar you have had for sometime and haven't had to try and buy it recently? Perhaps Soreen has cornered the market and all that is produced they get. Otherwise, loved the idea of this loaf.
None of the Home Brew Shops here in eastern Idaho have Maple extract😢. Next I'm going to the local Budwieser barley processing plant and ask. I'm a serious sweet bread baker and I have to make this one.

I made this today. Here is my input. FYI - I am in the US. 1. Like other folks said, this came out a lot like Boston Brown Bread. Except, Boston Brown Bread is steamed, not baked. As I was pouring the batter, I was thinking…this looks like it would come out good if it was steamed. I may try that next time! 2. Oven directions of 300F for 30 minutes is no where near enough time/temp to cook this in a conventional oven. Maybe 300F convection? Or, 350F conventional? I don’t know as I started with the 300f but had to crank it up at 30 minutes to 350f as it was not even half done. Took me one hour at that. Definitely resulted in a good product in the end! Worth a try.

You should try making it with malt extract and black treacle. Have a look for home brew supply stores as they tend to carry both of those ingredients.
Boston baked beans usually have a bit of salt pork. Not Meatless Catholic Friday meal.

Wow. That looks so delicious. I have loved malt loaf since I was very young. It was the only cake that my mum never made, so I guess she didn't have a recipe. She used to buy it. As an adult, I've always put butter on it. Yours is really packed with fruit and I like that it has a crunch to the top.

I just found your site and enjoy it. I am expat but fly into Manchester every time anymore , even though I am from Cambridge area. First thing off a flight I find a malt load, and they’re every where anymore in the mini size: train stations, airports and always shop.

I made this this morning for my daughter to take to an afternoon tea gathering. The children went bonkers for it. Including a 9 month old baby who was virtually pulling the loaf off the table to get at it after eating a small piece, ended up enjoying a whole slice! One adult had some and said it was absolutely delicious. Perhaps some of the magic is in the malt?

We have two different types of Molasses here in the USA. Black-Strap Molasses is stronger flavored and very slightly bitter. Which would be more appropriate?

This bread reminds me of B & B Brown Bread that comes in a tal can. My dad would buy it all the time back in the 70's when I was a teen. My sister and I would sneak and open up a can anx eat it with franks..and beans. We loved it. I hadn't eaten for years more recently because we couldn't find it in the grocery stores. I.found online.and ordered some and boy was i excited. It brought back so many good memories . Now this bread was from a can mind you. Yours looks absolutely fabulous. More delicious looking than from a can for sure. I would like to try making some one day. Now was the fruit raisins? That's what they used in the can version. And the malt. Is that some type of baking malt? I've never used it before so I'm not even sure where to find it here in the U.S.....thanks again Chef Rik for yet another winning recipe. 😊❤

Man Alive Rik....I only know that my mother made stew 🍲 with vegetable roll.... There was 5 children and our 2 parents...My father was the only bread winner,,,he also had a second job which was the B Specials,,,,they were part of the police service of Northern Ireland...
Not great wages in those days...My mother bought the cheapest meat around,,and turned it into 🍲 stew..

Rik thank you for this recipe l heard you say add the baking soda to the fruit to soften it but when you mixed the flour and salt together you said once again to add the baking soda ....did you mean baking powder as the printed recipe said ....here in the UK they are two different things .... baking soda being bicarbonate of soda and the other the raising agent baking powder..... thank you for the hard work you put into these helpful videos all the best

Rik, I hate you! (only joking). I used to have this often when we lived in Yorkshire and I love it. Unfortunately 20 years ago I was diagnosed with Coeliac Disease and can no longer have anything with normal flour or malt. You make my mouth water watching you enjoying this and I am green with envy. Yes, absolutely! Water it down. No mate the Malt extract came from a company called Bakermart in ChiangMai. I can give you the link www.cmbakermart.biz/en/home This is the ENG bit - type in the search box on their page. The malt extract is quality - Austrian. It is almost impossible to find malt extract - I have tried for over a year. Even your link to it on amazon - out of stock and they have zero idea when it will be available. Have you any sources for it then. I have wanted to make similar loaves but cannot for the life of me find malt extract. Are you using a jar you have had for sometime and haven't had to try and buy it recently? Perhaps Soreen has cornered the market and all that is produced they get. Otherwise, loved the idea of this loaf.

None of the Home Brew Shops here in eastern Idaho have Maple extract😢. Next I'm going to the local Budwieser barley processing plant and ask. I'm a serious sweet bread baker and I have to make this one.

What is the difference between Trickle and Molasses?
One pours just a little and the other quite a lot! Sorry! Treacle and molasses are very much the same - basically sugar boiled down until black and then more sugar added and cooked slow - Best, Rik

I made this today. Here is my input. FYI - I am in the US.
1. Like other folks said, this came out a lot like Boston Brown Bread. Except, Boston Brown Bread is steamed, not baked. As I was pouring the batter, I was thinking…this looks like it would come out good if it was steamed. I may try that next time!
2. Oven directions of 300F for 30 minutes is no where near enough time/temp to cook this in a conventional oven. Maybe 300F convection? Or, 350F conventional? I don’t know as I started with the 300f but had to crank it up at 30 minutes to 350f as it was not even half done. Took me one hour at that.
Definitely resulted in a good product in the end! Worth a try.
