Thanksgiving Is Just Around The Corner - Cranberry Cinnamon Bread Pudding - Super Simple, Very Tasty

  • I'm not a big fan of pumpkin pie. In fact, it may be my least favorite pie, correction sweet potato pie is on the bottom, so Thanksgiving dinner comes with lots of trepidation. I keep searching for the prefect Thanksgiving dessert, that could replace pumpkin pie. Cranberry cinnamon bread pudding is an excellent replacement. It's simple to make, and maybe more Thanksgiving than we think, because bread pudding was super popular in the 13 colonies. So this Thanksgiving toss the pumpkin pie and give bread pudding a try. Just make it.
    Preheat the oven to 350°
    In a sauce pan heat 1 cup cream with a cinnamon stick. While the cream is warming up, chop 1/4 cup walnuts, and set aside. Cube 3 slices of brioche bread and set aside. In a medium bowl beat 1 egg and 1 egg yolk with 3 tablespoons sugar. Temper the egg mixture with some of the warmed cream. Then transfer back into the sauce pan and heat until thickened. Toss the brioche cubes into the bowl that you used to beat the egg. Pour the thickened cream over the bread and gentle toss. Next add in the walnuts and 1/4 cup dried cranberries. Incorporate gently, and pour into a glass baking dish. Place the dish in a water bath and bake for 45 minutes.
    While the pudding is in the oven, make a creme anglaise sauce. In a medium sauce pan whisk 2 tablespoons sugar and 1 egg yolk. Once it starts to turn pale yellow, add in 1/2 cup cream. Heat the mixture, stirring constantly until it coats the back of a spoon. Remove from the heat and pour in 1/2 teaspoon vanilla.
    Cut the bread pudding into squares and place in a dessert dish, then pour the creme anglaise either around the pudding or on top of the pudding. You can even garnish with a few extra dried cranberries.
