OLD SCHOOL CORNBREAD DRESSING (HAPPY THANKSGIVING 🦃)

  • 🥧 OLD SCHOOL CORNBREAD DRESSING 🥧
    This is a recipe i have been using for over 40 years
    I guarantee if you follow this recipe exactly
    Your dressing will be moist flavorful and delicious
    RECIPE
    1 pan OLD SCHOOL CORNBREAD ( crumbled)
    2 quart OLD SCHOOL TURKEY stock
    1 cup chopped celery
    1 cup chopped onions
    2 tablespoons chopped sage
    2 tablespoons chopped thyme
    2 tablespoons chopped rosemary
    1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional)
    1/2 cup chopped giblets (previously cooked for 2 hours)(optimal)
    1# sage breakfast sausage
    4 eggs beaten
    In large stock pot
    cook sausage until brown and crumbled
    Add onions, herbs ,celery and turkey stock
    Simmer for 30-45 minutes
    Add turkey neck and giblets
    Simmer another 10 minutes
    Add stock to crumbled CORNBREAD in large bowl and add eggs
    Mix well and season with salt and pepper
    Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don't over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.
    GREAT with any protein you make. Especially, Turkey or Chicken. ENJOY with giblets gravy, cranberry sauce,

      i actually do this on purpose,to show individuals that have small kitchens that having a large kitchen isn't necessary if you are clean and organized,i actually have lots more space to use but i choose not too,just to show others with small spaces that they can achieve great meals with little space

      Yes he brought it All the way back. I was like SMH, with these new ingredients. I'm not knocking it, do you ,but some things CLASSIC just need to be left alone. He did that I'm impressed and will be trying his dressing recipe🔥🔥🔥🤤🤤🍴🍽

      I like to add a half of Jimmy Deans Hot Sausage to the mix. We have a similar recipe. However, I do use cream of mushroom soup and can milk. I use them to make the dressing creamier.

      It’s a Dutch oven. They are awesome pots. I actually have 4 of them
      The food won’t stick in them and they can be placed in the oven They hold heat so evenly and good. They range in price from 25$-300$ all depends on how much you cook

      they probably don't even know what dressing is. I have an arguement every thanksgiving with my brother friend about the difference between our dressing and his family's stuffing. Same thing about the corn bread debate...sweet or savory.

    Thank goodness someone that uses cornbread only for dressing like I do. Looks like "I'll be right over", lol. My favorite meal every year is the Friday morning after Thanksgiving, I eat dressing, gravy & cranberry sauce for breakfast. Doesn't get any better than that. Thanks for the great video.

    You , Sir , are a national Treasure!! I absolutely love your recipes and videos. You are my sanity during this pandemic.
    This cooking should be taught in the schools. This is what our young people are missing. Cooking like this incorporates math and reading and how to manage time etc. Also teaches taking care of your community and family and the importance of passing down recipes from our elders.

    This is how I make my dressing since I was a teenager it is old school yes my grandmother taught me how to make dressing. You never use a corn bread mix. Make your own cornbread. I have used sausage but I do not use turkey necks or giblet’s because I do not care for the taste. I am an old Texas Gal. And we do love to have our families continue our recipes. Your recipe is very close to mine I do you’s thyme but I do not use rosemary.

    I was taught to do my tasting before adding raw egg. Once it’s seasoned right, then add the egg and ready to cook. Everything looks yummy!

      I wasn't taught that but it was just common sense for me. I do that with my sweet potato pie mix too. I taste it before adding eggs.

    That is the exactly the way I have been cooking dressing for 60 years. Boy it was delicious.I have also added pepperidge farm herb dressing To a separate batch and it was doubly delisous. Now don't knock it until you try it.

    I adapted this as a vegetarian recipe (with Impossible sausage as the only "meat" & Not Chick'n boullion for stock). It turned out just the way I like it. I did make a couple of preferential changes, I lightly toasted the cornbread pieces 1st & used 6 cups of water w/the boullion (instead of 8) because I like firmer stuffing & was using less "meat." I only simmered the broth about 20 minutes because there wasn't any real meat in it & I didn't want to overcook the impossible sausage. With homemade cranberry sauce on top this dressing was perfect for me.

    I most give you props cause the way you cook is so nostalgic for me cause you cook and bake the way my grandma did and she was from Georgia. I can relate to your style a 100 percent. People use to love my grandma's cooking and baking, and out of all her grandkids I'm the one who gets down in the kitchen like her. She taught me to be a blind cook and she made me taste the food to see what's in it and what is missing, and I have developed a strong palate messing with her. Dang I miss my grandma! I know your family love and appreciate at you.

      I never once ever ever even heard of somebody puttin cambpells soup into stuffin...thats just disgusting...hey i dont ever use the campbells mushroom soup unless im sick and just can fix that up poured over rice but even then im adding better than bouillion roast beef paste and fresh garlic and parsley italian flat leaf parsely...hey anybody here tried patty labells sweet potato pie....its sweet sweeter than mine but i gotta say heated in my oven with a big ole scoop of fresh lightly sweetened whipped cream and a cup of strong black coffee...i tell u what you wont complain...its not like any pie u ever ate before...its different but good,,,i get two ..,one for me and another one i will also have and share that one with everybody...lol..im not even sorry either...im not selfish i give ya the shirt off my back and u got a hungry belly and im eatin stone soup ill let ya have first dibs on gnawin on that stone but you touch my patty labelle sweet potato pie and you better have somebody start the car cuz ur gonna be missin that pie hand.....lol wishin you all a happy thanksgivin and good health please everybody wear a mask and dont think it wont get ya because it just got my nephew hes 22 and in great health cept now hes got that covid 19 and he gor it at his 6 people only 6 people all couples best friends and all of em super careful dont know how they caught it but did 2 of the couples and my nephew and his wife tested 3 days ago only like 4 days after their friendsgiving party they only had their mask off long enough to eat.,,now the last couple is getting tested today cause they all drove in the same suv. So be careful careful..,oh and nobody had a fever yet even though they tooj temperatures at the door. They come down with the fever on the 2nd day after that gathering .,,,so be safe my nephew is really sick and looks yellow with gray around his eyes...Jesus Joseph and Mary..be safe yall,

      None of my folks ever used cream of anything either, and they made their own stock from giblets, necks, vegetables & herb seasonings. But I must say, I tried it once and it came out pretty good. The next time, not so much. To each their own, do you.

    Finally found a recipe that uses sage breakfast sausage like my grandmother! Your dressing looks just like hers, Light skin and not dark or greenish looking. I will definitely be trying this.

    I don't know how I found your channel Chef Jeffrey but I am so HAPPY I did! I'm going to try this all cornbread method the next time I make dressing, I usually use cornbread and breadcrumbs but yours look marvelous!!!!

    Never in my life had sage sausage in my dressing, I always used chicken or turkey neck where i pull the meat off of the bone. I must try the sage sausage in my dressing. Its looks delicious

    You're right I think we all think dressing taste better once a year. But my mother would make it for Easter, Thanksgiving, and Christmas. But as a adult I usually make it on Thanksgiving. Happy Holidays everyone stay safe, healthy and smart!!

      Your mom had a good idea! Dressing for the special holidays that call for special dinners. A pan at Easter, 2 pans at Thanksgiving and maybe a pan at Christmas.

      I make dressing for Easter, Thanksgiving, and Christmas as well. I will eat it more than 3 times per year though. My grandmother makes dressing whenever she gets a taste for it.

    After watching your video last year I stopped using bread crumbs along with my cornbread. I made my mother-in-law’s my thanksgiving favorite dressing, she used sage beef breakfast sausage. It’s very similar to yours. Thanks for sharing.

    Just like my dressing except I use the Bob Evans zesty sausage and I add peppers along with my onions and celery. Looks delicious.

    New to your channel. I make my dressing old school for over 30 years too. I do add chopped green pepper, Jimmy Dean Sausage, (8 or 9 slices of crispy bacon crumble )into the bowl, onion, celery, sage, a couple of beaten eggs and fresh chopped parsley, salt n pepper and chicken stock. I pre cook everything to my homemade buttermilk crumble cornbread no sugar. After I combine everything up in my bowl, I pre heat a little tiny skillet I have for eggs, I put a little oil in it then take a TBSP of dressing and cook it both sides for a few minutes, then taste to see if I need more seasonings. Sometimes I do and sometimes I don't. My recipe is from my grandmas and mother. Happy Thanksgiving and God Bless.

I had been thinking about my grandmother’s cooking, and how we took it for granted that she would be with us forever.🥲 She was one of the best cooks around. You mentioned their last name and folks would say…. “ the Cooks!” Cooks wasn’t their name, but their were known for their good food.     I also use poultry seasoning, green bell peppers, smoked turkey necks and butter. I don't use sausage or eggs, but ALL the other ingredients are definitely on point.

      I couldn't find any sage to my save my soul...I went to 50/11 stores.So I just got the poultry seasoning,plus everything else.Chile pray over my dressing.I think it should be alright.🙏🏾

      There wasn’t a cake made in my house that I didn’t taste the batter. Same with cornbread and just about everything else except bread dough. You can tell what the recipe needs, and how well the end product will turn out. That rule (to not taste anything with raw eggs) is for the few who are immuno-compromised. Another thing is chicken. We didn’t use to treat them like they are radioactive. Now we do, bleaching and cleaning anything they touch.

      that's what i am talking about a clean kitchen no dirty dishes around every thing neat in place constantly wiping things off i could eat your food cause i do not eat every bodys food i have to see how there kitchen look in fact the whole house i use 5 to 6 dish rags in my kitchen use one for a few drop that one in a pan of dish water with bleach people use to sell dinners i would not buy them unless i really know you love your kitchen.
