OLD SCHOOL CORNBREAD DRESSING/HAPPY THANKSGIVING YALL 🦃🦃🍁🍂

  • 🥧 OLD SCHOOL CORNBREAD DRESSING 🥧
    This is a recipe i have been using for over 40 years
    I guarantee if you follow this recipe exactly
    Your dressing will be moist flavorful and delicious
    RECIPE
    1 pan OLD SCHOOL CORNBREAD ( crumbled)
    2 quart OLD SCHOOL TURKEY stock
    1 cup chopped celery
    1 cup chopped onions
    2 tablespoons chopped sage
    2 tablespoons chopped thyme
    2 tablespoons chopped rosemary
    1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional)
    1/2 cup chopped giblets (previously cooked for 2 hours)(optimal)
    1# sage breakfast sausage
    4 eggs beaten
    In large stock pot
    cook sausage until brown and crumbled
    Add onions, herbs ,celery and turkey stock
    Simmer for 30-45 minutes
    Add turkey neck and giblets
    Simmer another 10 minutes
    Add stock to crumbled CORNBREAD in large bowl and add eggs
    Mix well and season with salt and pepper
    Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don't over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.
    GREAT with any protein you make. Especially, Turkey or Chicken. ENJOY with giblets gravy, cranberry sauce,

    I'm so glad you mentioned no sugar in the cornbread. I've had other people's dressing with sweet cornbread. It's just not right. :)

    This is just how I cook mine. Instead of turkey I use chicken. I love a moist dressing. I also add chopped boiled eggs, but that is for my taste. Thank you for sharing this with me. Truly Old School. 👍💗😊

    This recipe is exactly what I been looking for with the Giblet gravy.. this is how my grand mother use to make it. And nobody could duplicate it cause she wouldn’t let us come in the kitchen.       This is exactly what my grandfather used to make. He too kicked us out of the kitchen lol. It's a lost art in my family due to there were only a few of us that liked it, I'm the only one still living that did. I'll definitely give this a go. As far as the dressing goes, we didn't have cornbread dressing bcuz all my family was from either New England or Chicago; they didn't cook stuff like that. What we had was good though.

    I found out about adding sage sausage to my dressing about 3 years ago and have been doing it ever since. It takes the dressing to a whole new level and I love it!

      I have never had sage sausage or any sausage in my dressing or growing up with it. This looks so good. I can just taste it 😋 I will save this one for sure.

    I can smell that sage from 4000 miles away. That dressing looks so good I wouldn't want anything else with it.

    I put a quart of chicken stock in the blender and whiz up my celery & onions in that. Then add the rich turkey drippings to that in the dressing before baking. Smooth, no pieces to mess up your dressing!

    Great show. Reminds me of when I was a kid. I would help mom early Thanksgiving morning. She'd sit the ready turkey on the counter and we'd give it a pat before putting in the oven. Thank you for a wonderful show.

    Chef Jeffrey last Thanksgiving I perfected my dressing with your recipe. The turkey stock is definitely the secret and I'm telling you now my boyfriend loves my dressing better than his 70 year old mothers who is a great cook. He has even requested this dressing throughout the year just couldn't wait till Thanksgiving. Now I check your recipes first whenever I need extra help to perfect my dishes

    My mother didn’t make cornbread dressing. She made regular bread dressing but she always put sage sausage in hers, too. People always enjoyed her dressing and requested it at holiday potlucks. 👍

    Hi Chef Jeffery and everyone! Yum, not Thanksgiving without cornbread dressing. I grow and dry my own sage, so good. My daddy didn’t like celery and I made his dressing separately. Thanksgiving and Christmas was always at my house. I agree Chef, cornbread dressing is a savory dish, no sugar in the cornbread.     Alright Chef you have me over here ready to get to the polish store and order up fresh ground kielbasa/sausage and fix this dressing! I been looking all over the internet for a few years already for a similiar dressing recipe that my grandmother/mother and sister make. I FOUND IT! You have no idea how you have saved my dat.     My daughter's birthday sometimes ends up on Thanksgiving Day and her favorite side dish is dressing. Since my mom went to Heaven I've been making it and my daughter can eat just dressing and gravy as a meal. Instead of using turkey meat I use chicken and it's just as good.     💖💖💖💖💖, mouth watering, yep, this is it. Dressing, candied sweet potatoes, mac n cheese. That's my contribution to the informal Thanksgiving meal. I love everything that I'm bringing, I don't want to buy the store made. My secret ingredient for the candied potatoes, is on its way from Amazon, so is the cheese grater.     When I bought my house I hosted thanksgiving and made everything. Never in my life had I made dressing and was scared cause my mom is a food critic. I looked and looked at every recipe on RUclips and didn’t think my mom would like any of them. I ran across this recipe and the gravy recipe and I will never make it any other way. My mom loved it!!     Chef Jeffrey, Chef Jeffrey! You did this cornbread dressing, just like Old School from the country. My Mama, bless her soul in Heaven, made her dressing with gizzards and chicken liver, with the debone turkey neck meat. We would just want the dressing and now I have your recipe and it is own, in my kitchen. Your dressing looks so delicious, I just cried out, " that's it."       Grandma taught me how to stuff the bird with a very simple recipe using eggs, it was delicious!
      My sister puts the kitchen sink in her's cream of chicken, eggs, liquor etc... its amazing
      Now I over think it! Its the SAGE!!!
      Seems like the chemistry of the sage has to stay mellow while being heard, like the old school song says " Its Got To Be Mellow!"

    Chef J, I make my dressing the same way. I do use duck sometimes as my meat base. It makes the dressing rich. I use a little bell pepper and green onion too. No eggs and it holds together very well. Thank you for sharing the recipe.

    I love that old pan. I have two of my mom's cast iron skillets (a Griswold and a Wagner) she gave me years ago. She used to cook in them when I was a little girl. These skillets are over 70 years old and cook great foods.

    Hi, Chef! Love your channel. By the way, the stuff on the bottom is called "fond."
    Fond is one of the important parts of making a tasty pan sauce. ... By definition, a fond refers to those little browned bits of food that are often stuck to the bottom of the pan, skillet or baking dish, especially after searing meat or poultry. These browned bits are packages of flavor.
    Can't wait to make your dressing!

    Sir let me first say Thank you for cooking with love. I am glad I found your channel because I grew up in the country and I come from a family of cooks including my daddy and we don't play about the taste of food. I have seen plenty of videos on how people cook their dressing and this by far is the best one hands down. I knew it when you said you don't measure and it's a science🙌🏾🙌🏾 down to not liking to bite into crunchy onions and celery 😂😂 along with not liking it when cream of mushroom and chicken is added & most of all dry dressing all the pet pet peeves I have too.🙂 The way you said your mom would say give me a lil mo of that dressin baby is definitely a seal of approval cause that's how my granny's were too. That always made me proud. You stirred up some wonderful memories and it makes me miss those Sunday dinners we use to have. You just gained another follower.
