    Chef Alan, your video is the first video tutorial I have found to be so informative, covering every single part of icing and stacking a tiered cake. My son and his fiance have asked me to make their wedding cake in ten months time. For the first time, I can honestly say that now I am confident I will be able to give them the tiered cake they desire, thanks to you.

    ~ Chef Alan, I too would like to say " thankyou" for your wonderful tutorials which are delivered in such a professional, precise and informative manner in which beginners like me can learn from and understand without confusion. . . your teaching skills are flawless. This particular tutorial has helped me understand the necessary building blocks taken for the foundation of tiered cakes ( without a centre dowel insertions :) I bet your dream as a boy becoming a Chef did not include one day teaching the rest of the world via the Internet ......... the biggest of all classrooms...what an accolade!     Thank you so much! You have a clear presentation speaking manner, slow enough to follow and absorb, very clear instructions and do not repeat yourself as if we are slow to catch on. I have always wanted to use buttercream this way and now feel I can. I look forward to seeing more of your tutorials. I also feel I will be able to do a better finished job on my aunt's 50th birthday cake for 80 people!

    I loved watching this video. My mom was a baker/decorator and she taught me a lot. My best friend asked me to make her wedding cake next year. I've had questions, but my mom passed away a couple years ago. This felt like exactly what she would say.

    This video helped me tremendously with my first wedding cake for my daughter. I used Chef Alan's wedding white cake mix and his buttercream frosting plus the strawberry filling - the cake was phenomenal and all the guests raved about it. It also looked awesome and made for some wonderful pictures. Thanks Chef Alan!

    Chef Alan, you are really great. What beautiful work, and so simple in the end! Funny how a 27-minute video for anything else would bore me to tears...I'd probably be doing a lot of fast-forwarding. But with you, your voice is so clear, articulate, and easy to hear, and you take the time to explain the how's and why's of each move. As I watched I was thinking, " I'll bet Alan is a father and maybe a grandfather, but for the life of me, I cannot imagine him getting angry or even raising your voice! " Maybe you need to give us a nasty look or a good holler once in a while! LOL!! I'll tell you one thing for sure...you are an amazing teacher! Seriously! Thanks so much, and God bless...

    This was so helpful. I've stacked two tier cakes (only a couple times) and watched so many videos. A lot of this was repeat information for me but I was still captivated and wanted to hear everything. Really nice. I'm doing a 3 tier cake for my son's bar mitzvah and am doing a lot of youtube research on stacking safely and transporting stacked heavy cakes. THANKS!

    Something I've always wondered - how do you cut the cake if there are dowel rods hidden in all the layers? I'm sure you remove the rods but how can you know where they are if they're all covered by cake and icing by the time you've finished decorating the cake?

    I love this method of icing a cake. I have seen other videos w/too much dilly dally.. Methods that are time consuming & I end up with not so well results.. Your method is smooth, straight forward & to the point! I have a cake for 80 pl coming up & WILL be using this very practical, straight forward & to the point method. Thanks chef Alan you are a life saver too my icing cakes nightmare! Also love your new edible color dusts I just purchased, they are super lovely!

    Hi is the really white buttercream in this video the same buttercream as in this recipe: www.globalsugarart.com/recipe.php?id=19
    And also if I substitute the bridal blend for clear vanilla extract, use trex shortening , water instead of coffee creamer, table salt instead of popcorn salt, and unsalted butter would I still end up with pure white buttercream like in the video? And would it work with trex, vanilla, table salt etc?

      Sheeree Saenz To use the paper towel or paper method of smoothing, you must use a crusting buttercream like my American Buttercream. Swiss Meringue buttercream does not dry on the outside and will stick to the paper.

    This is the best tutorial I have seen on this subject. I am making two wedding cakes this year (never done one before) and your instructions are so very easy to follow. Also I want to say your website has EVERYTHING anyone would need for any cake at very reasonable prices, with so many opportunities to save more money with coupons. I'm still not sure if I'm doing buttercream or fondant. I would need the buttercream to be Ivory. I already ordered Ivory fondant. Havent decided.
