Thank you! I did wedding cakes for 20 years and someday planning to do my grandchildren's. I have certainly learned some new great information. Never too old to learn.
I am decorating my daughter’s wedding cake tomorrow and Chef Allen has given me so much confidence so I won’t be nervous. I cannot tell you, Chef Allen, how very grateful I am for your tutorials.
I just wanted to say thank you Chef Alan. I have been decorating cakes for years, and just did my own wedding cake! I used a couple of your techniques that definitely made decorating easier and made my cake look more professional.
Chef Alan, your video is the first video tutorial I have found to be so informative, covering every single part of icing and stacking a tiered cake. My son and his fiance have asked me to make their wedding cake in ten months time. For the first time, I can honestly say that now I am confident I will be able to give them the tiered cake they desire, thanks to you.
I love watching your videos, I watch them over, and over again, even if I'm not decorating. I feel like I'm learning so much! You're so great at not only explaining everything, but the reasons why. And I feel that is just as important to know. Thanks Alan.
When I first began layering, I came to youtube for tutoring on cakes and I found you. I learned so much from you Chef. Thank you so much! You are an excellent teacher and pleasant to listen to and watch! Ty again!
Thank you SO much, I have just made a butter cream two tier wedding cake for the first time - (I've only ever used fondant up til now) and thanks to your EXCELLENT tutorial, it has turned out a great success!!!
~ Chef Alan, I too would like to say " thankyou" for your wonderful tutorials which are delivered in such a professional, precise and informative manner in which beginners like me can learn from and understand without confusion. . . your teaching skills are flawless. This particular tutorial has helped me understand the necessary building blocks taken for the foundation of tiered cakes ( without a centre dowel insertions :) I bet your dream as a boy becoming a Chef did not include one day teaching the rest of the world via the Internet ......... the biggest of all classrooms...what an accolade! Blessings from Sydney Australia.......... :)
Thank you for that beautiful comment. You are correct, I never dreamed I would be teaching this many people but it is a joy to share my knowledge, as imperfect as it is.
I learned more in this video than I could have hoped for. You are 1,000 x better teacher than my world famous cake decorator teacher could ever hope to be. Truly, thank you!
Thank you so much! You have a clear presentation speaking manner, slow enough to follow and absorb, very clear instructions and do not repeat yourself as if we are slow to catch on. I have always wanted to use buttercream this way and now feel I can. I look forward to seeing more of your tutorials. I also feel I will be able to do a better finished job on my aunt's 50th birthday cake for 80 people!
It’s so wonderful to watch your basic baking cake from scratch video. I learned so much and have been baking for years. Not to mention your classes are free. Thank you so much. Hidden treasure. 😊
I loved watching this video. My mom was a baker/decorator and she taught me a lot. My best friend asked me to make her wedding cake next year. I've had questions, but my mom passed away a couple years ago. This felt like exactly what she would say.
This video helped me tremendously with my first wedding cake for my daughter. I used Chef Alan's wedding white cake mix and his buttercream frosting plus the strawberry filling - the cake was phenomenal and all the guests raved about it. It also looked awesome and made for some wonderful pictures. Thanks Chef Alan!
Alyce, So glad to hear the wedding cake was a success. I am making a wedding cake for the first time for my daughter but don’t know where to purchase the mix & frosting used in this video. Please help🙏
This is my first time to see Alan, wonderful teacher. I do know where he is base I would love to meet him in person. Well done Sir your reward lies above.
You are such a wonderful tutor, I am so so glad I found your channel, very articulate, clean, organized and patient while explaining every detail. I am a begginer and love your tutorials. you are also doing this for free, what a big heart you have. Really awesome, Bless you!!!
Chef Alan, you are really great. What beautiful work, and so simple in the end! Funny how a 27-minute video for anything else would bore me to tears...I'd probably be doing a lot of fast-forwarding. But with you, your voice is so clear, articulate, and easy to hear, and you take the time to explain the how's and why's of each move. As I watched I was thinking, " I'll bet Alan is a father and maybe a grandfather, but for the life of me, I cannot imagine him getting angry or even raising your voice! " Maybe you need to give us a nasty look or a good holler once in a while! LOL!! I'll tell you one thing for sure...you are an amazing teacher! Seriously! Thanks so much, and God bless...
Deb- Thank you for those beautiful comments. You are right, I have two grandchildren so far and enjoy every minute with them. I love teaching, I was a public school music teacher before opening Global Sugar Art. God bless you as well and happy decorating.

This was so helpful. I've stacked two tier cakes (only a couple times) and watched so many videos. A lot of this was repeat information for me but I was still captivated and wanted to hear everything. Really nice. I'm doing a 3 tier cake for my son's bar mitzvah and am doing a lot of youtube research on stacking safely and transporting stacked heavy cakes. THANKS!

You are an awesome teacher!! Very excellent. You explained everything very well. I need not understand why one needed dowels or how the support works and you really explained it. You thought of everything. Thank you! You should get an award.
Hi is the really white buttercream in this video the same buttercream as in this recipe: www.globalsugarart.com/recipe.php?id=19 And also if I substitute the bridal blend for clear vanilla extract, use trex shortening , water instead of coffee creamer, table salt instead of popcorn salt, and unsalted butter would I still end up with pure white buttercream like in the video? And would it work with trex, vanilla, table salt etc?
Sheeree Saenz To use the paper towel or paper method of smoothing, you must use a crusting buttercream like my American Buttercream. Swiss Meringue buttercream does not dry on the outside and will stick to the paper.
This is one of the most informative cake videos I have ever watched. Thank you and I will definitely utilize them and the products from Global Sugar Art.
This is the best tutorial I have seen on this subject. I am making two wedding cakes this year (never done one before) and your instructions are so very easy to follow. Also I want to say your website has EVERYTHING anyone would need for any cake at very reasonable prices, with so many opportunities to save more money with coupons. I'm still not sure if I'm doing buttercream or fondant. I would need the buttercream to be Ivory. I already ordered Ivory fondant. Havent decided. Wish me luck!
Wow😱 you’re a GREAT teacher! I understood everything you said, you’ve explained very clear and detailed. This really helped me understand every step. Thanks soooooooo much❤️👏🏾👏🏾👏🏾👏🏾
Thank u Chef Allen for ur amazing simple and informative demonstration of assembling a wedding cake. I have learnt so much. Baking a wedding cake for my sister. Thank u once again.
You are a very generous teacher to share the viewers your knowledge and technique on baking, layering and cake decorating but . . . still I won't be able to make one that you have demonstrated, as I don't have the necessary skills and patience. I'll just order and pay. I enjoy watching your video. Thank you.
This was such a helpful video. Very concise and easy to understand. I wish I watched it a few days ago. I will be better prepared for the next time. Thank you and keep up your good videos!! Great!!
Thankyou so much for sharing this video :D I'm looking to try my hand at a tiered cake later in the year, and this video was so informative and well explained, you covered all the details both big and little, I actually feel a little more confident for when I do try it now, so thank you :)

You are most welcome and thank you for the nice compliment.. Supporting a tiered cake can be a bit confusing. I'm happy my video was helpful.
Hi is the really white buttercream in this video the same buttercream as in this recipe: www.globalsugarart.com/recipe.php?id=19
And also if I substitute the bridal blend for clear vanilla extract, use trex shortening , water instead of coffee creamer, table salt instead of popcorn salt, and unsalted butter would I still end up with pure white buttercream like in the video? And would it work with trex, vanilla, table salt etc?
Thank you. You are great teacher. I understand. Am going to cook
You are so wonderful, you teach slowly for someone to understand what you are saying and do. your work is so lovely I give you credit sir. Well done
hi chef.. can i used this on smbc recipe that u gave or just on american buttercream? thnxs...

I love him. So informative. Reminds me of my mum teaching me while I helped her bake, decorate and assemble cakes.
Great!!
