As a high schooler I used to say I’d love to have dinner with him. I’m glad he appeared to love the life he chose. At the same time I get why he ended his life. Can’t blame him and I’m glad he chose what he wanted.
I rewatch mind of a chef every 6 ish months and cry.. now I watch DCs new live show on Netflix called Dinner Time Live .. new episodes every Tuesday. I don’t think people realize how hard that would be to pull off. Love this man and I miss Anthony like a best friend
When it first came out I misunderstood it to be Dave Chang’a show with Anthony Bourdain narrating. When season 2 came out I was like, “wait what happened to Dave?”
I had heard of him and Momofuku through the media blitz when his noodle shop opened. The Mind of a Chef turned me onto his charisma. I listen to his podcast anxiously and love the Recipe Club. The Mind of a Chef is tough to listen to as Anthony was so incredible as a narrator. RIP!
Ah I miss you Mr. Bourdain, helped fill a lot of lonely evenings. Your shows were always awesome, thanks for what you gave us and hope you’re where you need to be. Rest in peace brother we miss you.
15:30 in Berlin we break up the noodles while theyre still in the packet, then open them and add the seasoning to the bag, then shake and you got a nice after school snack. Nostalgia right there, everyone was doing it.
I travelled to Japan a couple of times and had the best food of my life there. The ramen, sushi and tonkatsu are out of this world. Even the noodles dinners at 7/11 were delicious. I went to a really small mom and pop place where they served egg sandwiches and they were the best that I ever had. I told the lady as much in my very poor Japanese and she was super happy and started to ask us where we were from etc. I hope I can go back again someday and eat all the foods again!

Man, David said something that made me realize why Japanese and Italian cuisine are my absolute favorites: They both have their roots in humble home recipes to help people get by, and they elevate those dishes into something special. There's a lot of history and love put in to every single dish in both food cultures, and it really comes through in the flavor.
The Mind Of A Chef with David Chang was an astounding food series and nothing he's made since has come close to it, except for maybe the greatest food magazine ever made, Lucky Peach.
In 2018, Taishoken was my first meal in Japan right after checking into our hotel. Got the large and crushed it, but I get what the guy is saying. It felt like I ate full meal before the noodles got below the rim of the bowl. But when it’s that good, you can’t stop!

Thank you for this. I've enjoyed all the shows David Chang has done. Re: food science. Are mung bean or yam noodles high alkalinity? They withstand high temp cooking, store well without dissolving & also reheat well.
In South Korea, there is a snack version of Instant Noodles. You open the packet, sprinkle the spicy powder, shake the bag, holding the opening close, you can bite or break the noodles, to make them bite size pieces. Many Korean kids did their snack version, before they made them into the snack versions. Little Korean Markets eventually sold the snack version here in Canada and probably in the USA. Was surprised David didn’t mention it. They were available by 2012.
When you meet someone better than yourself, turn your thoughts to becoming his equal. When you meet someone not as good as you are, look within and examine your own self.
if this Chef Chang ever wants to hang out in Japan hit me up....lol also i was literally about to ask are they using AI to make Bourdain's voice and then I realized this is from 2012....lol so hopefully Chef Chang's ramen skills have improved greatly, they are kind of lacking for someone who lived and such in Japan from what I saw in this episode and other episodes I've seen in regards to his ramen Chef Chang do your best, good luck

I miss Anthony, thank you for this reminder. i wish he understood the joy he brought to others. i wish he had more joy for him self to continue.
He understood very well how happy he made people but he himself was not happy. Making other people happy did not bring him relief from his pain.

My kids loved eating raw Ramen. Was there after school snack most times
