Honestly I wish they had used her crying for this recording session in the final cut. It sounds so much more real and heartbreaking than the traditional “pretty Disney Princess cry” that ended up in the actual movie.

That "You could never be together" line was never included because she said "I don't care" after he said that "She and Eric could never be together". And with her saying "I don't care" after he said "You could never be together" that would make it look like that if she can't be married then she doesn't want it. So instead, the "You could never be together" line was taken out and Ariel's line "I don't care" came after Triton said "You're a mermaid". And with her saying "I don't care" after he said "You're a mermaid", actually that makes more sense, because from that perspective that means that she doesn't want to be a mermaid anymore and wants to be human so she can be with Eric.
It's more like Triton is threatening her. He's saying you could never be together, and she is saying "my feelings are real I don't care if we can't be together." And his destruction is basically him going, "I'm going to get through to you that it will never happen. And this illustrates my point."
A mermaid has no tears because it's visually difficult (if not impossible) to show someone releasing water from their eyes when that person is already underwater. And even if merpeople had the physical ability to cry, why would they need it when living underwater keeps their eyes lubricated?
