This is one fine Ethiopian lady. InTigrinya,we call her "Wehale". I grew up cooking this food but i have learnt a lot from her.I am a nurse and I love that she washes her hands all the time.If you have children, please let the children join, teach them how to cook and let her or him translate for you and then our kids all over the world can use it.This can grow. I only have one suggestion, when I do Laffa or Abesit,I use an egg whisker and it helps a lot, even when I make Shrero. Thanks again,I love seeing u and I learn something everytime i see u.So you can imagine our kids.They are going to need it.Keep it up.

hiwet tesfay it is the type of grain. There is black, brown, white, teff grain. The darker is supposed to be more nutritive. But the white one is expensive in Ethiopia.
She advised to let it ferment for five days, but she didn't mention what temperature ; probably room temp. I live in Arizona and this recipe didn't work for me which might have to do with the climate.
Five days fermentation, then after making the absit (heating on the stove and adding it to the batter once cooled) let it ferment another 24 hours. I allowed fermentation at room temperature which has been 20-24 degrees Celsius (similar to year round temps in Addis). The end result was perfect!
I am very glad I found this amazing channel. It is wonderful that closed captions in English are available on many of the videos. Thanks again. It is very fascinating to see these cooking methods. The cookbooks I have are a bit hard to follow. It is great seeing the recipes made in a video.
