Albondigas Soup made with Ground Turkey

- meatballs:
1 Lb ground turkey
2 tablespoons fresh chopped cilantro
1/4 cup of rice
1/4 cup chopped onion
1 tsp salt
1 tsp black pepper
1/4 tsp cumin
1 egg
8 cups boiling water
Veggies:
1 chopped carrot
1 chopped celery
1 chopped zucchini
2 small pieces thawed frozen corn cut into 4 pieces thawed
1 small potato cubed
1/4 cup of rice
Broth:
10 oz cherry tomatoes or 1 large tomato
1 jalapeño pepper
1/4 onion
2 tbsp chicken bouillon
2 tbsp fresh cilantro
1 tsp oregano
2 garlic cloves
1 cup of water
Bring water to a rolling boil. Add formed meatballs. Skim when needed. Cook meatballs for 15 minutes before adding vegetables and extras rice. Add veggies and rice. Cook for another 20 minutes or until all vegetables and rice are cooked through.

I'm an executive chef, you can substitute ground turkey for most ground beef dishes. You might have to pay more attention to the fat level than beef because it has so little. Don't overcook it, but otherwise, treat it the same. I use it for everything now.
Hi AMV, it comes out really good with turkey as well as beef. I made this about a month ago and had to publish it before the weather started really warming up. Lol

Very delicious, thank you but my meatballs all fell apart. I doubled the recipe but followed it to the tee. Not sure why they all separated .
Hi, friend. At first, I thought maybe I miscalculated the time, but I watched some other videos, and that is the approximate cook time for meatballs.. Approximately 30 minutes. I don't know why they fell apart. I'm glad you thought they tasted good.

I would suggest cook the meatballs in the oven till a rich brown color, then take a little wine, stock or water if you dont want alcohol and deglaze the fond from the pan. Toss your veggies in the pan for a couple minutes. Stir around. Then dump that in your soup pot. And do the rest the same.

I agree Louie. I think a nice char on the meatballs would add an extra depth of flavor for a meat that typically is bland.
